"Herbalism As Community Care" was first taught spring quarter of 2024 at Western Washington University in Bellingham, Washington. It was designed as an experimental, 200-level, three credit course taught through Fairhaven College of Interdisciplinary Studies. Included in this document is the course syllabus, course schedule, and details for the assignments and workshops. The course was designed and taught in its entirety by undergraduate student Kate Conway with advisement by Dr. John Tuxill. The course covered basic plant identification and herbal preparations with a focus on relationship building, experiential learning, and knowledge sharing. The Association of Environmental Health Academic Programs (AEHAP) firmly agrees and for this reason, it is important to have local environmental health experts who know the pulse of their communities. AEHAP believes in supporting the advanced scientific education of environmental health in these communities through people from these communities. Accordingly, AEHAP has sought to promote and support accredited environmental health programs among a diverse cross-section of the U.S. higher education landscape. Healthy Families: A Family-Based Community Intervention To Address Childhood Obesity, Danae Dinkel, Melissa Tibbits, Emily Hanigan, Kelly Nielsen, Leah Jorgensen, Kay Grant

Health and Kinesiology Faculty Publications

The objective of this study was to determine the effectiveness of Healthy Families, a family-based community intervention, in improving the knowledge, self-efficacy, and health behaviors of overweight/obese children and their families as well as to explore the lessons learned. Results showed families who completed the program had significant improvements for children and parents in areas such as nutrition knowledge and self-efficacy in making healthy eating choices as well as participating in physical activity. Additionally, families reported decreasing their intake of sugar-sweetened beverages. Participating families and community partners provided valuable lessons for other communities seeking to implement a similar program.
