Contact with Cuban scientists was established in 1986 when two researchers from Centro de Investigaciones para Industria Minero Metalurgica in Havana visited Laval University to get acquainted with research activities in the area of extractive metallurgy. This was followed in early 1987 by two more researchers from the same centre. Invitations were then received in late 1987, 1989, and 2008 to visit the nickel refineries in Cuba and to hold seminars at the University of Havana. The present report outlines these activities.

Maari is a spontaneously alkaline fermented food condiment made from baobab tree seeds. Due to the spontaneous nature of maari fermentations growth of the opportunistic human pathogen Bacillus cereus is occasionally observed. Bacillus subtilis strains are important for alkaline seed fermentations because of their enzymatic activities contributing to desirable texture, flavor and pH development. Some B. subtilis strains have antimicrobial properties against B. cereus. In the present work, three bacteriocin producing B. subtilis strains (B3, B122 and B222) isolated from maari were tested. There is a growing sense of the fragility of agricultural production in the Global North and South and of increasing risks to food security, as scientific observations confirm significant changes in the Gulf Stream, polar ice, atmospheric CO2, methane release, and other measures of climate change. This sense is heightened as each of us experiences extreme weather, such as the increasing frequency of droughts, floods, unseasonal temperatures, and erratic seasonality. A majority of rural Latinos are immigrants or the first sons and daughters of immigrants from Mexico. They arrive to survive, earn income, raise and support family and work hard without burdening public services. I offer a personal account of rural Latinos, partly through the lives of my parents, to explain Latino adaptations and contributions in America. Who are rural Latinos, how did they arrive, why and, what are their experiences and issues?
