This study examined whether observers could distinguish between cattle that were exposed to various road transport conditions: Experiment 1 compared a manipulated flooring treatment (non-grip flooring, NG) with a control transport event (grip flooring, G) and Experiment 2 compared a manipulated driving style (stop-start driving, SS) with a control transport event of smooth, continuous (C) driving. The behavioural expression of cattle was assessed through the process of Qualitative Behavioural Assessment (QBA), and these assessments were tested for correlation with various physiological parameters. Animal welfare during and as a result of transport can be assessed by using a range of behavioural, physiological, pathological and carcass-quality indicators that are described in this paper. Measures of the extent of any disease, injury or mortality resulting from, or exacerbated by, transport are important because health is an important part of welfare. Many of the indicators are measures of stress as they involve long-term adverse effects on the individual. All forms of transport are potentially hazardous for animals, regardless of whether travel is between or within countries, or by road, rail, air or sea. However, experience shows that animals can be transported under suitable conditions without harm to their welfare.

The provision of suitable conditions and the establishment of a mutually satisfactory framework for regulating the international transport of animals depends on an understanding of welfare needs and of the biological basis for disease, stress and suffering. The effects of stress on cattle, pigs and sheep prior to slaughter are reviewed. Long-term preslaughter stress, such as fighting, cold weather, fasting and transit, which occurs 12 to 48 hours prior to slaughter depletes muscle glycogen, resulting in meat which has a higher pH, darker color, and is drier. Short-term acute stress, such as excitement or fighting immediately prior to slaughter, produced lactic acid from the breakdown of glycogen. This results in meat which has a lower pH, lighter color, reduced water binding capacity, and is possibly tougher. Psychological stressors, such as excitement and fighting, will often have a …
