Despite the interest of consumers in sustainable and environmentally friendly products, only a limited number of studies have focused on sustainability level disclosures for consumer packaged goods. The general overarching purpose of this dissertation is to extend the internal reference point and information processing literatures to better understand how consumers will process sustainability disclosures. Applying the theoretical lens of assimilation bias in conjunction with self-enhancement offers an important extension to prior work. Across two retail lab studies and four online experiments, I demonstrate that the perceived sustainability utility (i.e., the difference between a specific brand's level of sustainability and category-level …

Sustainable farms are critical to United States’ food independence and they positively contribute to the global economy. Farms in the United States are not sustainable without profitable supplemental income. The purpose of this case study was to explore the historic profitability of farm income supplementation methods. Maslow’s hierarchy of needs theory served as the conceptual framework. A purposive sample of 25 farmers from 5 regions of the continental United States completed semistructured interviews and described their personal experiences. Consumer interest in fresher foods has increased over the past few years and has stimulated the growth of direct-to-consumer outlets. Tennessee currently hosts many types of direct food outlets, including farmer markets, CSAs, roadside stands, and pick-your-own operations. Using data from a 2011 survey of Tennessee fruit and vegetable producers, factors associated with the percentage of sales fruit and vegetable producers make through direct-to-consumer outlets or intensity of adoption of direct-to-consumer marketing strategies are evaluated using fractional logit and logit regressions. The opportunities for increasing exports of California dairy products to the Japanese and South Korean markets were determined by identifying current obstacles in the California dairy industry and determining the characteristics of consumers in the Japanese and South Korean markets. As the largest milk-producing state and the supplier of 7.5% of total U.S. dairy exports, California’s economic activity greatly affects the rest of the nation and the world. Using a unique combination of ownership and borrowing, I have created a business model made to appropriately fit the organic dairy system, addressing every area of the operation whether it be business or animal related. We extend the existing literature on food taxes targeting obesity. We systematically incorporate the implicit substitution between added sugars and solid fats into a comprehensive food demand system and evaluate the effect of taxes on sugars and fats. The approach conditions how food and obesity taxes affect total calorie intake. The proposed methodology accounts for the ability of consumers to substitute leaner low-fat and low-sugar items for rich food items within the same food group. This substitution is integrated into a calibrated demand system in addition to the substitution among food groups, using recent food intake data and existing demand …

This article presents a preliminary System Dynamics model developed to analyze the sustainability of a natural reserve in Mexico: the Tamiahua Wetlands. Wetlands are often referred to as nature’s kidneys because they filter contaminants from water. In spite of their importance, wetlands are endangered areas around the world. In order to build the model we take into account the Fishbanks model developed by Meadows (2004) as a starting point. HACCP-based food safety programs have been widely acclaimed, accepted and implemented as an effective means of managing food safety risks. While HACCP training is a cornerstone of managing HACCP programs, there is little information about the effectiveness of HACCP training and the durability of HACCP knowledge. Findings reveal a link between involvement level in HACCP activities and the accuracy of HACCP knowledge over time. Opportunities for peer training in HACCP, irrespective of overall experience in the food industry provide favorable circumstances for maintaining accuracy of HACCP knowledge. Volatility in dairy commodity markets has become a major concern for many in the dairy supply chain and is likely to remain so in the future. Changes to the Common Agricultural Policy (CAP) over the past decade have more closely aligned EU and World prices and their associated volatilities. The aim of this paper is to measure volatility at farm level in Ireland over time, identify possible reasons for the increased volatility and identify ways of reducing volatility.
