My research project examined sustainable practices in relation to food sources at three universities located along the Pacific Coast of North America. The academic institutions were the University of Alaska Anchorage (UAA), the University of California Santa Barbara (UCSB), and the University of British Columbia (UBC) in Vancouver. These schools were selected because while they each foster an abundance of “local” foods and food industries, they represent different stages in the three pillars of sustainability for food practices. There is currently no mandatory Corporate Social Responsibility (CSR) reporting standards for institutions of higher learning (universities) in the U.S. There is also no established governing or regulatory body designated with the responsibility of developing CSR reporting standards for universities. In recent years some universities have prepared and released self-reported CSR reports. However these reports may not be complete, much of the information included in the reports could be outdated, and all of it is subject to bias. This is a case study of O Sol, a Brazilian art/handicraft social entrepreneurship cooperative that began over 50 years ago. O Sol produces authentic art/handcraft that is sold to tourists in Rio de Janeiro. The organization promotes human development and authentic Brazilian culture through the production and selling of art/handicrafts. However, today it is at risk economically, socially and culturally. To examine this case, students learn about social entrepreneurship, creating shared value and creating social value in tourism organizations as they examine the challenges of the globalization of authentic art tourism.

This study examines the websites of two religious organizations representing opposing sides of the religious response toward environmentalism and climate change. This research seeks to understand how each side communicates with followers. Using rhetorical framing analysis, it is shown the religious right advocates a dominion stance and uses a romance genre filled with stories, contrast, spin, appeals to logic, and rhetoric of hope and fear. Chapman University accommodates over 1700 student meal plans per day through the on-campus dining services provided by Sodexo Restaurant Services. The commercial-grade kitchens found in the Randall Dining Commons (RDC) of Sandhu Conference Center are frequently used to prepare food for students for every meal, seven days a week. The RDC kitchen facility has staff working around the clock and high consumption electrical, water, and gas appliances constantly running to parallel the high demand. The travel and tourism (T&T) industry has become a major contributor to growth and development in most economies across the globe (World Travel & Tourism Council [WTTC], 2014). The industry has significantly increased its gross value added (GVA) to the well-being of stakeholders through its direct economic impacts; and indirect and induced impacts to its forward and backward linkages. As such, according to Roe (2001), the T&T evolved into the world’s largest industries, generating approximately 11 percent of the global Gross Domestic Product (GDP), providing 200 million job opportunities, and transporting nearly 700 million international travellers annually.

Many universities have made a commitment to improving the sustainability of their campuses however only a small number report to stakeholders on their sustainability performance to allow accountability and the quality of the reports issued varies widely. Eskasoni First Nation is the largest Mi’kmaq-speaking community in the world. With a population of more than 4300, Eskasoni is one of the five Mi’kmaq communities located on Unama’ki (Cape Breton Island), Canada. The corporate reporting landscape has evolved in the last 20 years from financial reporting to sustainability reporting to “integrated reporting.” The corporate reporting history abounds with different attempts at integrating sustainability accounting with financial accounting (e.g., the Corporate Report 1975 and the “Triple Bottom Line” concept) and thereby attempting to report in an integrated manner. The first corporate integrated reports appeared in 2002, but the new trend remained in the margins. The sustainability reporting efforts of MNCs who are members of the Fortune Global 250 (FG250) was investigated. The focus was on sustainability reporting by MNCs of supply chain impacts. The reporting of FG250 MNCs was examined to determine if greenwashing was occurring or whether MNCs had committed to operating a green supply chain. A mixed methodology was used consisting of quantitative analysis of twenty-five MNC CSR/sustainability reports which were randomly selected from the FG250 listing. Purpose: The chapter describes and reflects upon an EU-funded research initiative, TRADEIT, which has attempted to develop a learning network among European traditional food producers as one way of contributing to the economic sustainability of the ventures, the social sustainability of the food’s regional character, and the environmental sustainability of food production through the use of traditional methods.
