The responsible service, sale and marketing of alcohol for the tourism, hospitality and retail industries is crucial those working in the tourism, hospitality, culinary arts and retail industries including those in supervisory and management positions. Nutrition Label Formatting: Customer Perceptions And Behaviors, Anish Parikh, Carl Behnke

In response to increasing U.S. obesity rates, legislators have begun mandating that chain restaurants make nutrition information available. While other studies have addressed various aspects of nutrition information labeling in restaurants, there has been little research into the efficacy of the various forms of delivery of restaurant nutrition information. The results of this study indicate that menu nutrition formatting has little impact on customer behavior. This study also found that when nutrition information was influential in the decision making process, consumers chose food items averaging 30% less calories. To help combat the growing obesity problem in the United States, the Menu Labeling Act was passed in 2010 as part of the Patient Protection and Affordable Care Act. However, little research has been conducted to determine the optimal format and content of the imminent label. A between-subjects experiment was conducted with a non-probability sample that was provided with three nutrition label treatments and surveyed to determine the labels’ effect on accuracy in dietary judgments and nutrition evaluations, level of certainty and confusion while completing those tasks, and perceived label comprehension and utility.
