In Western countries around 10-15% of all foodservice meals are provided in institutional settings such as hospitals, nursing homes, prisons, schools, military settings and workplace canteens. This chapter describes the different types of meals and foodservice systems used in these institutional settings, including the menus used, nutritional standards, food waste, meals times, methods of counting meals and possible future trends.

The new right advocated policies that aided the accumulation of profits and wealth in fewer hands with the argument that it would promote investment, thereby creating more jobs and more prosperity for all. However financial markets provide opportunities for investment without creating jobs and, as the global financial crisis has revealed, speculative investment feeds an ephemeral prosperity that can be wiped out in a short time period. Traditional conceptions of accounting history and its achievements are being challenged by new accounting historians who are informed by radical philosophies and approaches to history. This is a belated reflection of movements within the wider discipline of history which can be traced to the Annalists in the 1930's and more recently to the influence of postmodernism. At issue between the traditional and new history are the importance of facts and the pursuit of truth by traditional historians. The establishment of the factory system during the beginning of the Industrial Revolution created a demand for labour. Labour that was unused to the confines and rigours of factory life. In an attempt to encourage punctuality and conscientiousness the industrialists of the late eighteenth century resorted to a number of practices designed to encourage their employees to give up their old habits and take on a new rhythm of life tied to the demands of the factory.
