This study estimates the relationship between economic factors and consumer health. The results show that increasing prices of food away from home are associated with decreasing the probability of risk factors and health conditions, which emphasizes the need to differ between multiple food types in health demand analysis.

Despite the significant rise in obesity in the U.S., economic research on obesity is still in its infancy. This paper employs a microeconomic approach to investigate the effects of price and income changes on weight in an effort to determine how a high-calorie food tax, a low-calorie food subsidy, and/or income changes affect body weight. Although raising the price of high-calorie food will likely lead to decreased demand for such goods; it is not clear that such an outcome will actually reduce weight. Childhood Obesity In The U.S.: How Effective Are School Prevention Programs?, Christiane Schroeter, R. I. Carreira

This study uses a logistic regression to analyze the 2004-2005 Arkansas Center for Health Improvement body mass index data from four school districts in Arkansas. We conclude that the probability of elementary school children being overweight or at risk of being overweight depends on economic factors, demographics, and food availability.

Over the past few decades, U.S. meat consumption patterns have changed. Figure 1 shows the U.S. per-capita meat consumption from 1970-1999. Consumers have increased their total meat consumption by 9.3% from 1970 to 1999, however, the composition of the meat consumption changed as well. While beef consumption has consistently decreased since 1985 - that of poultry and fish have increased. Per capita pork consumption has not changed on average from the 1970’s to the 1990’s.

How does rural China’s political economy determine the motivations and constraints that drive small farmers and agribusiness companies into contract farming and shape its practice and impact? This paper identifies three distinctive features of contract farming in China—varied impact on rural inequality, unstable contractual relations, and lack of competitiveness with other alternatives—and proposes tentative explanations with three features in rural China’s political economy: strong collective institutions, active state support for agriculture, and strong domestic markets. The objective of this study is to identify experimental economic tools that can be employed to explain the role of economic behavior in overweight and obesity in the household. We identify three economic experiments that can be used to understand how parent-child economic relationships relate to obesity. Loss aversion experiments are discussed as a tool to understand challenges some individuals face in achieving a healthy diet. Finally, testbed experiments are introduced as a means to test and understand new policies and incentives for better health at the household level.

With this study, we investigate the effects of changes in economic factors on body weight by constructing a utility theoretic model. The model is empirically estimated by combining data on individuals’ body weight, demographic and physical activity information, and state level measures pertaining to the prices of food away from home, food at home, and wages. By combining these data sources, we aim to estimate directly the weight effects of price and income changes. The empirical analysis suggests that decreasing the price of food at home could decrease body weight, a finding which has important public policy implications.

The estimated obesity-related health care costs across the Western region in 2008 were $16.2 billion (this is an inflation-adjusted estimate based on the work of Finkelstein, Fiebelkorn, and Wang (2004)). 25 The Western populations, the percentage of obese adults in each state, and the estimated annual obesity-related expenditures by state are summarized in Table 1. The cost estimates include only direct health care expenditures related to obesity. The price of wine represents various characteristics that differentiate each bottle, assuming that the majority of consumers use price as a signal of quality. The objective of this study is to analyze the drivers of Riesling prices, since this varietal continues to gain popularity and can be grown in all climates, including cool-climate regions. We expand the use of quality ratings by including interaction terms to express wine-quality and price-quality relationships. The results suggest that higher price premiums are associated with wines that earned high expert rating scores, and this emphasizes the importance of market-perceived quality signals.

CERES Fair Food, an organic food delivery system in Melbourne, VIC was evaluated in terms of its transportation resource consumption, ability to enhance food security, and support of local organic farmers, which are key factors in sustainable food systems for urban areas.

Transportation resource consumption was analyzed by calculating the food miles for a selection of Fair Food’s products and comparing them to data on typical products consumed in Victoria. Most of Fair Food’s products had similar or lower food miles, particularly the fresh produce. But many assumptions had to be made in the calculations due to limited information. Food …

The state-monopolised system of vegetable retail in socialist urban China has transformed into a market-based system run by profit-driven actors. Publicly owned wet markets not only declined in number after the state relegated its construction to market forces, but were also thoroughly privatised, becoming venues of capital accumulation for the market operators now controlling these properties. Self-employed migrant families replaced salaried state employees in the labour force. Many rural Nebraskans say they already recycle a lot and face no barriers. However, many rural Nebraskans cite lack of programs and difficulty getting materials to drop-off sites as barriers to recycling. Persons living in or near smaller communities are more likely than persons living in or near larger communities to say their community doesn’t offer recycling. However, most rural Nebraskans say their community offers either curbside pickup or drop-off recycling for all of the materials listed with the exception of glass bottles.

Most rural Nebraskans are positive about their current situation. And, they continue to be generally positive about their future situation. Over one-half (51%) of rural Nebraskans think they are better off than they were five years ago and just under one-half (45%) think they will be better off ten years from now. Certain groups remain pessimistic about their situation. Persons with lower household incomes, older persons, and persons with lower educational levels are the groups most likely to be pessimistic about the present and the future.

In this paper, we investigate the role of key industry and other stakeholders and their embeddedness in particular national contexts in driving the proliferation and co-evolution of sustainability standards, based on the case of the global coffee industry. We find that institutional conditions and market opportunity structures in consuming countries have been important sources of standards variation, for example in the cases of Fairtrade, UTZ Certified and the Common Code for the Coffee Community (4C). In Champagne, France grape growers and and winemakers work together to make the world's most iconic sparkling wine. Part of what makes Champagne so celebrated is its reputation for constant quality: only the best grapes are used to make wine. In poor vintage years, grape growers sell less grapes to winemakers; poor vintages are the result of bad weather. In this paper, I show the existence and the characteristics of equilibrium in a non-renewable resource market where extraction costs are non-convex and market price is subject to stochastic shocks, an empirically relevant setting. In my model firms may be motivated to hold inventories to facilitate production smoothing, which allows them to continue producing at a smooth pace at any instant when extraction ceases, e.g. when reserves are exhausted. This aspect of the model then supports a competitive equilibrium in the presence of non-convex costs. Casual empirical evidence is provided that supports the central features of my model for a …
