This chapter is divided into two distinct sections that are positioned in a point-counterpoint structure of dialogue. These two position statements invoke the etymological meanings of the word essay: to attempt, put to the test, trial, to act out, to explore, travel, or to travail. The first is an historical analysis written in the third person by an anthropologist whose expertise includes the ethnography of archaeology and the anthropology of tourism. The second is a counterpoint commentary written by an anthropologist whose specializations include Pre-Columbian and historical archaeology. While environmental sustainability is increasingly gaining relevance, it appears to have been ignored in certain areas, such as in research on water usage of small and medium enterprises (SMEs) in the hospitality and tourism industries. The purpose of this paper is to examine this dimension from the perspective of the operators. Semi-structured face-to-face and telephone interviews were conducted with ten managers/operators in the Swan Valley region of Western Australia. Strong manager/operator awareness of the impact of their actions on the environment was demonstrated. Also salient was the factors impinging on implementation of environmental initiatives. The purpose of this paper is to examine the links between olive growing, hospitality and tourism in an emerging olive growing region, as well as challenges olive grove operators face. A qualitative approach is taken in the form of face-to-face and telephone interviews among 23 olive grove operators in Western Australia from a sample of 33 operations identified. Almost half of the respondents indicated being open to the public in some form, including ellar door sales and hospitality facilities, such as a cafe´. To help overcome preventable health problems in the developed world, the 'active living' concept seeks to stimulate people's physical activity in every day environments. This study contributes to the understanding of the leisure-tourism-physical activity relationship by investigating the self-reported physical activity of holiday makers on Rottnest Island, Western Australia, compared to their home environment. The quantitative analysis of 41 participant interviews on behaviour, motivation and constraints revealed that physical activity was seen as leisure on Rottnest but work at home. A uniquely attractive and easily accessible environment and positive social interactions were key contributors to participation in physical activity.

Tourist destination brand image is a major influencing factor in traveller destination choice. This exploaratory research into the information sources form which destination brand image evolves provides insights which have the potential to improve tourism destination brand development strategies. In-depth interview with 21 international backpackers on Australia's northern NSW coast indicate that mainstream media play little or no part in the formation of respondents' image of the coastal destination of Byron Bay. Rather, word of mouth and autonomous independent information sources were the key media through which respondents formed their image of this iconic Australian tourist destination.
