OXFORD, Miss. - To anyone who ever pushed a tray through a school lunch line, the process didn't look all that complicated: make the food, serve it up. But in reality, each decision on what, how much and when to serve was most likely the result of a great deal of research, planning and even legislation.

Background
Riboflavin synthase catalyzes the transformation of 6,7-dimethyl-8-ribityllumazine into riboflavin in the last step of the riboflavin biosynthetic pathway. Gram-negative bacteria and certain yeasts are unable to incorporate riboflavin from the environment and are therefore absolutely dependent on endogenous synthesis of the vitamin. Riboflavin synthase is therefore a potential target for the development of antiinfective drugs.
Results
A cDNA sequence from Schizosaccharomyces pombe comprising a hypothetical open reading frame with similarity to riboflavin synthase of Escherichia coli was expressed in a recombinant E. coli strain. The recombinant protein is a homotrimer of 23 kDa subunits as shown by sedimentation equilibrium …

The Relationship Among Psychosocial And Environmental Determinants Of Physical Activity, Physical Activity Levels, And Body Mass Index In Adolescent African American Females, Flint Mitchell
LSU New Orleans Theses and Dissertations
This study examined personal, social, and demographic factors related to physical activity (PA) level and body mass index (BMI) in adolescent African American (AA) females. The participants were 211 AA females from selected parochial schools in a city in the southern U.S. Participants completed the Physical Activity Determinant Scale (PADS: Mitchell & Kontos, 2002), the Three Day Physical Activity Recall (3DPAR: Weston, Petosa & Pate, 1997), the Leisure Time Exercise Questionnaire (LTEQ: Godin & Shepard, 1985), and demographic items. Height and weight measures were taken to assess BMI. Results from logistic regression indicated that the personal factor was a significant …

Analysis Of End-Of-Life Content In Critical Care Nursing Textbooks, Karin T. Kirchhoff, Renea L. Beckstrand, Prashanth Reddy Anumandla
Faculty Publications
Nurses have identified a need for improving their knowledge and skills in providing end-of-life care. Critical care nursing textbooks can serve as an important source of information on end-of-life care for critical care nurses. Hence, an analysis of end-of-life content in 14 critical care nursing textbooks was conducted. Critical care nursing textbooks used for review were published in 1995 or later and identified from the libraries at the University of Wisconsin-Madison and Brigham Young University. The end-of-life content areas identified by the American Association of Colleges of Nursing (AACN), under which the AACN end-of-life competencies for undergraduate nursing students can …

The Effects Of Telephone Intervention On Arthritis Self-Efficacy, Depression, Pain And Fatigue In Older Adults With Arthritis, David Pariser
LSU New Orleans Theses and Dissertations
The current study was conducted to examine the effects of telephone intervention on arthritis self-efficacy, depression, pain and fatigue in older adult patients in different clinical settings. Eighty-five subjects from two clinics were randomly assigned to either the control (n = 45) or intervention (n = 40) groups. The study was a mixed quantitative/qualitative design. Each subject completed several pre-tests including the Arthritis Self-Efficacy (ASE) scale, the Geriatric Depression scale (GDS), and numeric rating scales for both pain and fatigue. All subjects received an informational packet on self-management of arthritis and developed an action plan and personal goals for self-management …

Comparison Of Blood Parameters Associated With Exercise And The Total Antioxidant Power In Sled Dogs Supplemented With Blueberries, Kriya L. Dunlap
Comparison Of Blood Parameters Associated With Exercise And The Total Antioxidant Power In Sled Dogs Supplemented With Blueberries, Kriya L. Dunlap
Chemistry and Biochemistry
Oxidative damage from free radicals plays an important role in several diseases such as cancer, Alzheimer's disease, and heart disease. Research indicates that exercise may contribute to oxidative stress. Fruits, such as blueberries, are good antioxidants because they contain phenolics that preferentially react with free radicals. Maintaining antioxidant levels by supplementing the diet with blueberries may prevent exercise-induced oxidative damage. Additionally, oxidative damage from exercise can temporarily suppress the immune system. The goal of our study was to compare antioxidant levels in sled dogs supplemented with blueberries. Total antioxidant power (TAP), haptoglobin, isoprostane and other blood parameters were measured in …

Water Quality From Rainwater Catchments Throughout Alaska: Looking At Contaminants In Catchment Materials, Corianne Irene Hart
Water Quality From Rainwater Catchments Throughout Alaska: Looking At Contaminants In Catchment Materials, Corianne Irene Hart
Engineering
A field study which focused on linking materials used in rainwater catchments to the quality of water they produce was conducted throughout Alaska in the summer of 2003. The importance of this project stems from the fact that many families throughout Alaska depend on rainwater catchment systems to provide water for washing, cleaning, cooking and/or drinking purposes. After a core group of participants were identified, samples were periodically collected from participants' water taps and were analyzed for a suite of contaminants that included metals (e.g., Pb and Zn), organics (e.g., volatile organic compounds) and bacteria. Based on variables, such as …
The Role Of Mammalian Herbivores In Primary Succession On The Tanana River Floodplain, Interior Alaska, Lemuel Gordon Butler
The Role Of Mammalian Herbivores In Primary Succession On The Tanana River Floodplain, Interior Alaska, Lemuel Gordon Butler
Biological Sciences
I compared willow (Salix) communities along the Tanana River exposed to varying levels of herbivory to examine how herbivory influences the landscape distribution of vegetation. Moose (Alces alces) and snowshoe hare (Lepus americanus) herbivory decreased plant biomass and canopy height and increased the proportion of dead stems in willow communities. Herbivory also shifted the age distribution of plants in willow communities towards younger age classes, and also decreased the number of communities dominated by willow on the landscape. A frame-based simulation model was built to incorporate the effects of herbivory and river fluvial dynamics on plant succession. My results show …
Seasonal Abundance And Diversity Of Nearshore Fishes Around Steller Sea Lion Haulouts Of Kodiak Island, Catherine L. Hegwer
Seasonal Abundance And Diversity Of Nearshore Fishes Around Steller Sea Lion Haulouts Of Kodiak Island, Catherine L. Hegwer
Marine Biology
Nearshore fishes around haulouts are potential prey for Steller sea lions, especially pups, as they learn to forage and supplement their milk diets during weaning. Visual surveys in July and November 2001, and March, May and July 2002 were used to quantify spatial and temporal variation in fish diversity and abundance around two Steller haulouts and two control sites. SCUBA divers sampled depths of 9, 15, 21, 27, and 33 m. Concurrent habitat surveys were used to quantify substrate, macroalga and benthic invertebrate cover. Steller haulout sites had fewer fish than control sites, but similar species richness and species composition …

Expert Source On School Lunch Programs Available For Interviews, Staff Report
University of Mississippi News
School lunch programs are under fire across the country for serving too much fat, refined carbohydrates and processed foods. According to the Associated Press, critics charge that schools offer too much junk food, rely too heavily on government commodities and don't do enough to educate students and cafeteria managers about healthy eating. The problem often is compounded by tight funding, lax enforcement of guidelines and public apathy.
