Stocker cattle producers in the southeastern part of the U.S. heavily depend on traditional forages such as bermudagrass [Cynodon dactylon] pastures during the warm season for grazing. Summer annual forages offer stocker cattle operations a valuable alternative source of forage. These forages have high yield potential and can help extend the grazing season. This is particularly beneficial during the summer months when traditional forage sources may be limited. The effect of hydroponic soilless substrates and microbial biocontrol agents on the persistence of foodborne pathogens in indoor lettuce production is variable depending on substrate type, pathogen species, and biocontrol formulation. This study addressed key gaps by first characterizing the ability of different substrates to support Salmonella and Listeria monocytogenes survival and then evaluating the ability of pine biochar and Bacillus subtilis to suppress pathogen persistence in selected substrates under controlled conditions. Despite the projected increase in the dry aging market, producers may be hesitant to incorporate dry aging practices. This thesis aims to identify primary concerns faced by producers in implementing a dry aging program. Semi-structured interview surveys were conducted via Qualtrics (N = 100). Results indicated that an “advanced” level of dry aging knowledge correlated with a higher importance in the use/sale of dry aged products (P = 0.02). Cost, demand, and sourcing were the top three concerns of producers practicing dry aging. Those considering implementation were concerned with cost, processing parameters, safety, demand, and sourcing. No significant differences were …

Attaching a drug module to the surface of lactic acid bacteria was the main aim of this dissertation, and it was achieved. By using the Sortase A mechanism, the drug module (green fluorescent protein fused to the LPETG motif) was anchored to the LAB surface. To reach the final results, this dissertation will describe the process that I undertake to achieve the end goal. ABSTRACT Craniofacial variation and its relation to diet have been widely examined, but with less attention exclusively to the palate. Previous studies have shown that groups consuming a more resistant diet exhibit morphological differences in the craniofacial skeleton, including a longer and wider palate when compared to groups consuming a less resistant diet; similar patterns have been observed among captive vs. wild populations. Tarnished plant bug (TPB) is the most economically damaging insect pest of Mid-South cotton. TPB reduces yield is reduced by damaging squares, terminal growth, and small bolls, resulting in reduced yield. Currently, cotton grown in the Mid-South averages 1-6 insecticide applications per year for control of TPB. The introduction of ThryvOn® cotton technology provides a new management strategy for TPB control. ThryvOn® technology produces the Bacillus thuringiensis (Bt) protein Mpp51Aa2, which has insecticidal activity on TPB. The purpose of this study was to evaluate the influence of feeding a high protein, low oligosaccharide soybean meal to optimize poultry nutrition by the effects of feeding the soybean meal to roosters, broiler chickens, and turkeys. Two research objectives were evaluated to determine whether high protein, low oligosaccharide soybean meal would have increased nutritional value. The first objective assessed the metabolizable energy (ME) content of a high protein, low oligosaccharide soybean meal compared to a conventional soybean meal. Potassium (K) is a common yield-limiting nutrient in Mid-Southern U.S. corn (Zea mays L.) production, emphasizing the importance of effective diagnostic tools to support fertilizer decision-making. The poor stability and bioaccessibility of Res after consumption by humans require the development of delivery systems. The objective of these experiments was to investigate the effects of organic-complexed or inorganic trace minerals (copper, cobalt, manganese, and zinc) on cow reproductive performance, suckling calf growth, as well as heifer development and reproductive outcomes utilizing free-choice tub supplementation. In lactating cows, treatments consisted of molasses-based tub supplementation containing either complexed or inorganic trace minerals, with an additional pre-breeding drench administered only to cows receiving complexed minerals. The drench contained complexed or organic copper, cobalt, manganese, and zinc. Stress is experienced across the tree of life. Survival in fluctuating environments depends on a robust genetic architecture. This dissertation examines the genetic and metabolic determinants underlying one such adaptive response: cross-protection. Leveraging natural variation in the stress responses of budding yeast, Saccharomyces cerevisiae, I examine the genetic variation contributing to ethanol-induced cross-protection against oxidative stress. Acquired stress resistance, in which mild pre-exposure improves survival to subsequent stresses, is prevalent across diverse organisms and can involve both same-stress and cross-protection. This study uses solid-state nanopore technology to investigate the stability and dynamics of RNA molecules under thermal stress and pH fluctuations. Two distinct mRNA samples were analyzed: (1) heat shock protein (HSP)-encoding mRNA extracted from Sulfolobus solfataricus P2, a thermophilic archaeon inhabiting extreme environments such as geothermal sulfuric hot springs (pH < 4, temperature range: 65–90°C), and (2) total RNA extracted from White Leghorn chickens, which thrive under standard physiological conditions. ΦX174 virion single-stranded DNA (ssDNA) were included as a comparative reference. Nanopores, fabricated in silicon nitride membranes, were used to electrically characterize the structural properties of individual RNA molecules in solution, close to their native environments. The nanopore membrane separates two chambers containing salt buffer solution, where ionic current is the primary measurement parameter. When a voltage bias is applied across the membrane, ion flow and an ionic current can be measured. Charged RNA molecules driven translocation through the nanopore induces pore resistance changes, resulting in detectable current blockade events. Variations in these events provide insights into RNA secondary structure and conformational dynamics. By systematically altering pH and temperature, this study elucidates the effects of environmental stressors on RNA stability and structural integrity. The findings reveal distinct responses between thermophilic HSP-encoding mRNA and mesophilic RNA, underscoring the adaptive mechanisms of thermophilic RNA under extreme conditions. These results contribute to a better understanding of RNA behavior under stress and establish a foundation for future applications in RNA-based diagnostics and biotechnology development.

Early chick nutrition is critical for establishing target growth performance characteristics in broiler chickens. This study evaluated factors within commercial broiler houses that potentially influence feed consumption during the first 7 days. Three trials were conducted in a 12.2 x 122 m commercial broiler house to assess the effects of house sectioning, spatial barriers, and feedline location. In Trial 1, a one-way experimental design was used in which the house was divided into four equal sections using migration fencing every 30.5 m. House sections served as a fixed factor. Abstract Background: Although developmental assets are well established as protective factors during childhood and adolescence, less is known about their role during emerging adulthood, a period when the prevalence of several types of risk behaviors peak. For the U.S. college student, campus can provide ideal conditions for supporting the extended transition to adulthood. However, that same environment may increase exposure to health risk behaviors. This mixed-methods study examined how preschool teachers understand and use mealtime as an opportunity for children’s learning and connection. The project explored teachers’ beliefs, observed mealtime practices, and used collaborative video reflection to examine how teachers’ perspectives and behaviors evolved over time. Over five weeks, mealtimes were recorded, transcribed, and analyzed alongside reflection sessions with the teacher. Using the Arkansas Child Development Early Learning Standards (CDELS) as a developmental lens, each mealtime interaction was coded for learning opportunities across domains such as language, literacy, social-emotional growth, and self-help skills. Rice (Oryza sativa L.) presents a locally sourced, climate-resistant starch source for the brewing industry. As barley faces increased uncertainty due to rising temperatures, Arkansas-grown rice offers a more stable and cost-effective alternative starch source. However, the use of milled adjunct rice by brewers has remained limited, largely due to knowledge gaps about cultivar-specific properties relative to brewing. Chapter 1 provides an overview of rice as a brewing adjunct, reviewing the physiochemical properties important to brewing success. These properties include kernel size, kernel breakage, amylose content, and gelatinization temperature. Mashing strategies for multiple different brewing layouts are overviewed, showing practical …
