Background: Systemic lupus erythematosus (SLE) disproportionately affects African American women and contributes to racial health disparities in the United States. Although genetic susceptibility influences disease risk, growing evidence suggests that social determinants of health (SDOH), including neighborhood conditions, structural racism, and socioeconomic disadvantage, contribute to disease development and progression. Epigenetic mechanisms may provide a biological pathway linking adverse social conditions to chronic disease disparities. This dissertation examined the influence of SDOH on SLE disparities through evidence synthesis and empirical investigation to inform public health practice and policy.

Many mycorrhizal fungi are hypogeous (truffle-forming), producing underground fruiting bodies. Studying truffles is inherently challenging due to their hidden nature. However, mycophagous mammals provide a unique opportunity to study hypogeous fungi because they rely on truffles as a food source. Although several truffle species have recently been described in the southern Appalachian region, their fruiting patterns remain poorly understood. To address this, we quantified truffle richness and spore loads from 670 Peromyscus scat samples collected across 42 sites spanning an environmental gradient during 2024 in the Blue Ridge Mountains of East Tennessee. This mixed-methods pilot study used semi-structured interviews with 15 resident assistants (RAs), complemented by descriptive pre- and post-test data from the Five Factor Wellness Inventory (FFWEL), to explore their lived experiences of participating in a 10-week wellness program grounded in the Indivisible Self Model of Wellness (IS-WEL). The purpose of this study was to examine the program's perceived influence on wellness practices and to explore the feasibility of implementing wellness-focused programming. Iron is essential for many biological processes, where it is used as a cofactor. Even though it is abundant in the Earth’s crust, it is in an insoluble form unavailable to microorganisms in the soil. To overcome this, bacteria produce siderophores, which are secondary metabolites that have a high affinity for iron. This allows bacterial cells to obtain insoluble iron that is essential for survival. Pseudomonas mosselii, a Gram negative bacterium, was isolated from soil. Medical Laboratory Scientists (MLSs) are vital yet often overlooked members of the healthcare team. This study investigated perceptions of MLSs among students in medicine, pharmacy, and nursing programs. Grounded in professional identity theory and literature on interprofessional stereotypes, the study utilized a quantitative survey distributed to 1,113 students, with 71 responses analyzed. Nine research questions explored differences in perceptions of MLSs’ professional practice, scope of practice, entry requirements, value as team members, and consultative roles. This research investigates the relationships between organizational climate factors and job satisfaction among staff within Texas community colleges, applying Maslow’s hierarchy of needs and Herzberg’s motivator-hygiene as the theoretical framework. Family homelessness is a widespread crisis that disrupts the educational experiences of thousands of children, including South Carolina where rates of family homelessness continue to grow. Although research has explored families and homelessness, limited research has focused on the parental engagement of homeless parents. This study explored the parental engagement among homeless parents in South Carolina.

Guided by van Manen’s (1990) interpretive phenomenology, four parents residing in a South Carolina homeless shelter participated in semi-structured interviews and created self portraits, which were analyzed using the hermeneutic circle to derive phenomenological insight.

Large-scale land concessions have reshaped agrarian landscapes globally, yet their implications for community land tenure, livelihoods, and nutrition remain unevenly understood. This dissertation examines how plantation agriculture and foreign investment have transformed land access, labor relations, and food systems in Liberia, a country with one of the highest proportions of land under concession globally. Guided by a political ecology framework, the study employs a mixed-methods design integrating policy analysis, in-depth interviews, and household surveys across two palm oil concession sites. While the Native American Graves Protection and Repatriation Act (NAGPRA) paved the way for the repatriation of ancestors and certain cultural objects to Indigenous communities, museums still struggle to address other forms of cultural returns. Heritage seeds, those which hold cultural significance to Indigenous peoples, held within museum collections perpetuates the colonization of Indigenous lifeways. Three deposits of perinates, infants, and young children within two non-residential superstructures of Buenavista del Cayo, Belize, display evidence of daily maintenance and care. A total of ten subadult individuals, aged 39.4 weeks gestation to 3 years, from the archaeological site of Buenavista were recovered during 2018 excavations. Signs of care and daily maintenance include survivorship through the vulnerable neonatal period (first twenty-eight days) and transition into infancy, survivorship with potential pinprick lesions on external and internal zygomatic, parietal, and pars basilaris, and intentional maintenance of the body after death. Chronic absenteeism is a common challenge in elementary education. Schools often use attendance incentive programs, such as rewards or recognition, to encourage students to attend regularly. However, it is not always clear whether these programs actually improve attendance. This study examined whether attendance incentive programs are effective and how school staff view and use these programs.

This mixed-methods study used both school attendance data and interviews with school personnel. Attendance data from two school years showed that schools with incentive programs did not have lower absenteeism rates than schools without them. Frailty and malnutrition are prevalent conditions among community-dwelling older adults, affecting approximately 10% and 25% of this population, respectively. Despite overlapping symptoms such as functional decline, their relationship remains underexplored in community dwelling older adults. This cross-sectional feasibility study examined the association between frailty and nutritional status among 47 older adults in the East Tennessee Tri-Cities area using the Fried’s Frailty Phenotype (FFP) and the Mini Nutritional Assessment-Long Form (MNA-LF®). Results indicated 13% were pre-frail, 24% were frail, 21% were at risk for malnutrition, and 2% were malnourished. Anxiety is highly prevalent among college students representing a significant public health concern. Research indicates that dietary patterns may influence mental health outcomes; however, the practicality of collecting comprehensive dietary and psychological data in college populations remains unclear. This pilot study assessed the feasibility of evaluating dietary patterns and anxiety using self-report instruments. Participants completed the Nutrition and Eating Habit questionnaire, the Generalized Anxiety Disorder-7 (GAD-7), and the Anxiety Sensitivity Questionnaire (ASQ). Although twenty-one students were recruited, survey completion rates were low, with only seven participants completing the nutrition questionnaire necessary to calculate the Dietary Inflammatory Index (DII). Recovery of an immature fossil rhinoceros (Teleoceras aepysoma) skeleton (ETMNH 32999) from the Gray Fossil Site in Tennessee offers the first insights into the ontogeny of the species. ETMNH 32999 is interpreted to be a subadult male in an age class equivalent to ~17-20% of potential lifespan. Comparative analyses support the hypothesis that subadults of related taxa are typically ~91% of average adult size in most dimensions. However, certain cranial dimensions are substantially lower than expected in ETMNH 32999, averaging only ~74% of the average conspecific adult. Nutritional management and lactation performance are critical factors influencing productivity in cattle. This research includes two complementary studies. The first study was a meta-analysis to develop a lactation curve for Bos taurus cattle in North America using data from machine or hand milked cows. Data from 7 studies were used resulting in 1340 cow-day observations. Milk yield was analyzed by parity (primiparous or multiparous) and feeding management (non-nutrient restricted or nutrient restricted), revealing that primiparous cattle peaked earlier and at lower yields than multiparous cattle, and nutrient restriction reduced peak milk yield. However, enteric methane (CH4) from cow– calf systems on extensive rangelands pose substantial measurement and management challenges. The Northern Great Plains (NGP) supports nearly one-quarter of the U.S. beef cow population, yet regionally representative, herd-level enteric emission data from commercial ranches remain limited. Chitin is a biodegradable and biocompatible biopolymer with broad applications in the food, biomedical, pharmaceutical, and packaging industries. Conventional chitin production from crustacean shells is associated with seasonal availability, intensive chemical processing, and environmental concerns, creating interest in more sustainable alternatives. The objective of this work was to evaluate different feed processing techniques and their impacts on growth performance, carcass traits, and gastrointestinal health in ruminant animals fed in confinement during the finishing phase. Two studies were conducted. The first study evaluated the effect of kernel processing high moisture ear corn (HMEC) on growth performance and carcass characteristics of finishing beef steers. This study examined the individual and combined associations of participation in the Expanded Food and Nutrition Education Program (EFNEP) and nutrition assistance programs with diet quality and biomarkers of chronic disease risk. Multistate longitudinal data were analyzed using triple difference-in-differences regression models for body mass index (BMI), systolic and diastolic blood pressure, hemoglobin A1c (HbA1c), and Diet Quality Index (DQI). EFNEP participation was associated with a reduction in BMI over time among participants not receiving nutrition assistance, but this association was attenuated among assistance participants. A similar differential pattern was observed for HbA1c. No significant differential changes were found for …

The emergence of avian metapneumovirus (aMPV) subgroups A and B in the United States poultry industry has created an urgent need for standardized, host-specific diagnostic platforms. Historically, reliance on continuous, multi-species cell lines has limited the primary isolation of field strains and introduced potential adaptation artifacts. To address these challenges, this research first established and characterized a reproducible primary cell culture system derived from the tracheal tissues of 1-day-old turkey poults. This thesis explores the effects of processing history on the enzymatic susceptibility and functional properties of high-protein dairy ingredients, with a specific focus on ultrafiltered (UF) and microfiltered (MF) retentates and spray-dried powders. While retentates and powders are often used interchangeably in industrial applications, processing steps, such as drying, can induce structural and physicochemical changes that affect protein functionality and enzyme accessibility. Milk protein concentrates (MPC) and micellar casein concentrates (MCC) were standardized to 10% protein and subjected to enzymatic treatments, including proteolysis (Alcalase and rennet) and crosslinking (transglutaminase and laccase). Wheat (Triticum aestivum L.) is a major cereal crop worldwide, but recent gains in grain yield (GY) have not kept pace with projected demand. GY is a highly quantitative trait with low heritability that requires multi-year, multi-location phenotyping, limiting selection efficiency. Targeting higher heritability yield component traits, such as kernel size and weight, and incorporating them into the genomic selection (GS) pipeline has the potential to accelerate genetic gain for GY.
