Wildland firefighters perform physically demanding work under challenging environmental conditions that place substantial demands on nutritional health and occupational performance. Despite the importance of nutrition in supporting physical performance, recovery, and long-term health, limited research has examined nutrition knowledge and dietary behaviors among California wildland firefighters or evaluated the feasibility of remotely delivered nutrition education interventions within this occupational population. Therefore, the purpose of this pilot study was to assess baseline nutrition knowledge, nutrition self-efficacy, and dietary behaviors while evaluating the feasibility of a 12-week WhatsApp-delivered nutrition education intervention among California wildland firefighters.

Dry-Hopping is a modern and ever-increasing method to add hoppy flavors to beer. This is typically seen in pale ales and India Pale Ales (IPA’s). Most research has investigated the effect of dry-hopping only using pale malt, whereas most breweries used specialty malts to create a malty backbone to their beer.

The objectives of this research were to analyze the impact of specialty malts and their concentration on the efficacy of hop flavor and extraction, determined via gas chromatography and sensory analysis. Grapevine diseases, such as powdery mildew and Botrytis bunch rot, require repeated fungicide applications to maintain fruit quality and reduce yield losses. However, fungicide performance can vary among products, application programs, disease pressure, and pathogen sensitivity. This thesis evaluated fungicide programs for control of powdery mildew in ‘Chardonnay’ grapes and assessed fungicide sensitivity of Botrytis cinerea isolates collected from California vineyards.

Changing Vitis vinifera ripening patterns as a result of increasing climate variability has provided challenges against the production of wines with a balanced sensory profile, with adequate acidity, color, aroma, and texture. This thesis aimed to evaluate the ripening patterns and wine profiles of potentially climate-adaptive Mediterranean varietals in two different California Central Coast climates. Additionally, different carbon-dioxide based winemaking techniques were also assessed. Foodborne illnesses remain a significant public health concern, motivating continued development of alternative food pasteurization technologies. Pulsed electric field (PEF) treatment is a non-thermal pasteurization method that inactivates microorganisms through electroporation while minimizing thermal degradation of food products. The long-term objective of this project was development of a portable PEF food pasteurization system.

An iterative design approach was used to investigate generation of the high-voltage pulses required for PEF treatment. Multiple pulse forming network topologies were evaluated through simulation, leading to selection of a solid-state Marx generator architecture. The Effects Of Maceration And Enzymes On The Chemical Characteristics Of Hard Apple Cider, Manou De Pelsmaeker

The purpose of this study was to analyze the effects of maceration and pectinase enzymes on the base chemical, polyphenolic, and volatile characteristics of cider. The apples (Fuji) were milled and macerated for 0, 4, 12, 24, or 36 hours, both with and without an enzymatic pectinase addition. While base chemical characteristics such as sugar content and ABV were unaffected, the acidity of cider was influenced maceration and enzymes. Extended maceration time resulted in lower concentrations of malic acid, and enzymes resulted in a lower pH compared to the control. Polyphenols were extracted during maceration time, resulting in higher concentrations …

This project proposes a framework for integrating microbial literacy, equity, and health into institutional decision-making, using California Polytechnic State University (Cal Poly) as a case study and university housing as a pilot site for implementation. The original project focused on identifying user needs and developing a mobile application concept to improve the market experience. Livestock play a critical role in collegiate rodeo by providing educational opportunities, athletic competition, and hands-on learning experiences for students. Iron deficiency (ID) affects over 2 billion individuals globally. Children under 5 are at increased risk of ID due to rapid growth and are especially vulnerable to its negative consequences because of iron’s essential role in cognitive development and immune maturation. ID is the leading cause of iron deficiency anemia (IDA), with IDA affecting approximately 40% of children in this age group. Under regulatory pressures to reduce groundwater contamination by nitrate from fertilizer, such as those posed by the Central Coast Regional Water Quality Control Board’s Agricultural Order 4.0, a need exists to better understand interactions between irrigation and nitrogen (N) management. Near-bottom hypoxia occurs when dissolved oxygen levels drop to a level that is harmful to marine biology, creating biological dead zones along the ocean floor. Recent years have seen a dramatic increase in the percentage of coastal, near-bottom, hypoxic water, with the average in 2021 nearly double that of the average from 2009 to 2018 and about twenty-eight times the average from 1950 to 1980. Recent literature has linked this increase in oceanic hypoxia to the increase in upwelling-favorable winds caused by climate change. Exploring Non-Conventional Substrates: The Role Of Hibiscus And Whey In Kombucha Fermentation, Benjamin J. Lee

This study evaluated the impact of hibiscus and whey as alternative fermentation substrates on the physicochemical, phytochemical, and microbial properties of kombucha. A 2 × 2 full factorial design was used to compare four treatments: black tea + water (BW), black tea + whey (BH), hibiscus + water (HW), and hibiscus + whey (HH). The fermentation solvents (water or whey) were heated to 88 °C, infused with 0.6% (w/v) black tea or hibiscus for 10 minutes, sweetened with 10% (w/v) sucrose, cooled to 22 °C, and inoculated with 20% (v/v) kombucha starter culture. Food insecurity is a growing public health concern consistently associated with elevated rates of nutrition-related chronic disease (NRCD) across the general population. Despite young adulthood being a critical window for dietary pattern formation, this relationship remains minimally explored among college students. This thesis examined associations between food insecurity and NRCD diagnosis, including hypertension, diabetes, hyperlipidemia, and cardiovascular disease, among undergraduate students across the California State University (CSU) system. Cross-sectional data were drawn from the Spring 2021 CSU National College Health Assessment, administered across all 23 campuses. After exclusions, the analytical sample comprised 13,762 students.
