NJ is a melting pot of different cultures and ethnicities, each bringing their own unique customs and traditions. Of these traditions, diet and food are one of the most renowned distinctions and some of the most celebrated.

In response, several Public School districts have made halal and kosher food reforms to accommodate the rise in the Muslim and Jewish student body.

These menu accommodations were made in response to concerns about a lack of halal food options, which negatively impacted Muslim and Jewish students' health and mental well-being and can be recognized as a health disparity disadvantaging Muslim American student …

Food insecurity among college and university students has increased in the past decade. The COVID-19 pandemic has presented unique public health challenges, including increased food insecurity. In a cross-sectional survey of students at a private university in the midwestern U.S. (N=253) we examined how student food security status changed during the pandemic and what relation-ships exist between changes in food security and various aspects of student identities. Twenty-nine percent of responding students indicated that they became less food secure during the pandemic, and the overall reported food insecurity rate increased by 130.77%. Consumers in the United States may need to adjust their food demand due to food insecurity caused by climate warming events. Research has focused on how climate change impacts food supply chains and distribution; however, there was little research on how consumers responded to these changes. This study analyzed how consumers across the United States responded to food insecurity caused by crisis events (i.e. pandemics and climate change), how consumers shifted from grocery store vendors to local food vendors, and if migration or food miles may increase based on potential food shortages. Recent studies have examined the growing problem of food insecurity among college students in the United States. In recent reports, as many as 30% of all college students are food insecure (CUFBA, 2020). It is imperative that college campuses address this issue, as many students are forced to leave college without completion in order to address financial concerns (Johnson, 2009). The present thesis evaluates developments and trends in global conflict dynamics, global systems of governance, and global hunger. Together, the thesis investigates and upholds the notion that famine is a ‘man-made’ phenomenon and explains how famine persists in a world abundant with food. At first glance, a college campus might look like a place of equal opportunity– communal dorms, shared dining halls, and similar course loads. However, arriving on campus is not where the college access conversation ends if students’ basic needs are not met. Food insecure students are at elevated risk of poor academic performance and delayed degree completion, with first-generation students being particularly vulnerable. Although prevalence of food insecurity has declined over the last 5 years, food insecurity for African Americans and single individuals is increasing. The purpose of this paper is to examine the male-specific associations between food insecurity and cardiovascular-related health outcomes. We examine the relationship between single, African American male adults and food security, kidney disease risk, diabetes, and related comorbidities using the NHANES dataset (2013-2014). We build multivariate logistic regression models to estimate the association between gender, race, and food insecurity using stratified data from the 2013-2014 National Health and Nutrition Examination Survey.

Although early childhood is considered a critical time for investment in a child’s life, the United States lacks many traditional family policy programs like paid family leave and widely subsidized daycare. Instead, the U.S. relies on means-tested programs such as the Supplemental Nutrition Assistance Program (SNAP) and Temporary Assistance for Needy Families (TANF). This brief summarizes findings from a study examining participation in SNAP and TANF in early childhood in Virginia. Findings suggest that strengthening SNAP and TANF would provide significant benefit to Black and Hispanic children and those residing in rural areas.

College students are documented to suffer food insecurity at a high rate, and student-run food pantries have aimed to alleviate some of this burden. However, these pantries operate inefficiently and struggle to adequately meet student needs. In particular, many students are unaware of the pantry or have barriers to use. Research has found that only 14% of food insecure college students use their campus food pantries. The public health and economic implications of the COVID-19 pandemic to the New York City (NYC) food system have been tremendous. In the six months since March 2020, when the pandemic reached NYC’s 5 boroughs, the number of food-insecure individuals has nearly doubled from 1.2 million to 2 million;1 diet quality for many individuals has decreased;2 the local food workforce has lost more than two-thirds of its workers;3 and more than 1,000 NYC restaurants and food retail outlets have closed,4 some never to re-open.

Food deserts are neighborhoods that are typically socioeconomically disadvantaged and have high levels of low-income populations who face barriers to accessing healthy, nutritious food. These barriers which include, but are not limited to, the increased distance these food insecure populations are located from large food retailers that supply fresh produce. In 2010, Mapping Food Insecurity’s Project Director (PD) participated in “The Campaign to Promote Food Security in Cumberland County, Maine.” The Campaign drew together a 60 member coalition to address rapidly increasing food insecurity challenges in the county.
