Average Household Income In Relation To Individual Dietary Consumption Of Fruits And Vegetables, Liz Burchfield, Bella Spencer
Symposium of Student Scholars
The purpose of this analysis is to review data from the USDA Economic Research Survey in a data collection regarding FoodAPS National Household Food Acquisition and Purchase Survey. Our data include a sample size of 4,826 participating households with 279 variables describing each household. Several variables were utilized which include average collective income for households, perceptions of fruit and vegetable prices and quality, self-reporting items about perceived fruit and vegetable consumption, and financial survey responses. With these chosen variables we made initial inferences that there would be a relationship between income and fruit consumption. We predict that throughout the duration …

Market-mediated effects can mitigate or amplify the intended effects of sustainability policies. They can also have unintended consequences, including inducing new sustainability stresses or threatening food security. It is important to understand these effects when designing sustainability policies. This paper provides prominent examples of market-mediated effects of a variety of sustainability policies in the food, energy, land and water nexus. This paper reviews the empirical evidence on market-mediated impacts of economic policies generally and then provides a review of recent geospatial modeling aimed at capturing these impacts in the context of local and regional land and water sustainability policies. In this paper, we propose a new form of multidisciplinary academic collaboration that goes beyond the traditional modes of knowledge exchange. We argue that most research collaboration today is based on interactions between closely related disciplines, in which researchers share data, methods, and insights within a common framework or problem. However, such collaboration may not foster the development of the communication and management skills essential to a multi-disciplinary research career. Therefore, we suggest establishing a network of researchers from divergent, yet complementary, disciplines who are interested in improving these skills through regular interactions and feedback. In response, several Public School districts have made halal and kosher food reforms to accommodate the rise in the Muslim and Jewish student body.

The initial concept stemmed from an honors project collaboration. The project was a research paper on the evolution of El Salvador’s food culture. Topics discussed were El Salvador's food culture, focusing on the history, staple foods, food medicine, dietetics, and how the country has been impacted by the expansion of globalization. Additionally, the relationship between medical conditions and how dietitians respond to them are further explored. Globalization has negatively impacted El Salvador's health status, dietary practices, and ingrained poor habits that will be carried on for generations.

Adultery and Fidelity in the Lais of Marie de France
Using both literary and historical analysis, I will examine contrasting depictions of adultery and fidelity within the lais written by 12th-century poet Marie de France. A lai is a type of narrative poem, ranging in length from 118 to 1184 lines. Many of Marie de France’s lais follow the literary trope known as courtly love; however, the reader is encouraged to sympathize with different characters depending on the lai. The COVID-19 pandemic gave rise to a group of newly food insecure people and deepened hardship for those already food insecure. The crisis disrupted national food supplies and created challenges to accessing and utilizing the food that was available. As financial struggle deepened for people, and some became unable to shop for food or cook due to isolation requirements and illness, many turned to community organizations to obtain food. In Sheffield, England, small community food organizations soon became the leaders of the city’s emergency food response. All animals must make decisions on where to find, select, capture, and eat food. These factors contribute to a species’ food preference, such as making decisions on what food to eat based on calories. Optimal foraging theory predicts how an animal behaves when searching for food, including optimization of food type, patch choice, time spent in patches, and movement. All animals also make decisions based on predation risk by avoiding predators and making trade-offs on time spent searching for, pursuing, and handling food. In the United States, the legal framework for product date labeling is minimal and varies across states. Manufacturers have the discretion to use any date label that they deem appropriate, and this lack of uniformity leaves room for misinterpretation by both retailers and consumers. Previous studies have examined consumer misinterpretation of date labels and how this lack of knowledge correlates to food waste behaviors. This study was aimed at understanding how consumers apply their knowledge about date labels to make decisions about purchasing and discarding food. An alarming amount of unserved food is thrown away daily on university campuses, which emits carbon dioxide into the atmosphere. In those same college communities, there is likely a large food insecure population that is going to bed hungry every night. The Food Recovery Network (FRN) is a network of colleges/universities across the United States that seeks to bridge this gap. Mindfulness is increasingly linked to effective self-regulation including regulation of health behaviors. Eating is an important behavior for health, and mindfulness has been linked to healthier eating choices in self-report, cross-sectional studies, and in laboratory eating paradigms (e.g., Jordan et al., 2014). In contrast, impulsivity is linked to poor self-regulation such as purchasing behavior (Baumeister, 2002), and impulsivity scores have been shown to be related to weight (Price, Lee, & Higgs, 2013). I dive into the family sitcom Fuller House and observe how it represents people who cook and what we eat. As a modern-day family sitcom, representation is current to our standards within today’s diets and kitchen routines. With both men and women cooking in the kitchen, healthy food choices are displayed everywhere, depicting nutritional awareness. I consider the food being served and discuss whether they may fit into gender tropes, such as a male protagonist taking pride in his special burgers. The purpose of this pilot study was to understand student awareness of food insecurities. Subjects for the study were students enrolled in a Foundations in Human Sciences course at a university located in East Texas (n=55). Students were asked to complete an online survey concerning knowledge of food insecurities, impacts of budgeting on food buying, previous personal food insecurity, skipped or had less nutritious meals due to the cost, and the food pantry on campus.

Students apply the Body of Knowledge in a capstone assignment in a Foundations course in Human Sciences. In the Making an Impact assignment students are charged to research a social issue in their discipline, apply strengths they learned in self-assessment instruments, and advocate to improve the issue. An example is the project showcasing educator support of the Backpack Buddy program to impact childhood hunger in the classroom which connects Body of Knowledge concepts of basic needs, wellness, family strengths, community vitality, sustainability, and capacity building.

Vibrio parahaemolyticus is one of the leading causes of foodborne illness associated with seafood consumption worldwide. V. parahaemolyticus is a native bacterium to Salish Sea coastal waters and present in higher quantities during summer months. Humans who consume raw or undercooked shellfish, most commonly oysters, containing V. parahaemolyticus can develop a gastrointestinal illness. Typically self-limiting, V. parahaemolyticus infections can also lead to life-threatening skin infections or septicemia, particularly in individuals with weakened immune systems. The Washington State Department of Health (Health) manages V. parahaemolyticus through regular environmental sampling during summer months, implementing a V. parahaemolyticus Control Plan for the commercial …
