One in ten African women age 15 or older are widows. Approximately 8 million widows live in Nigeria with many living in extreme poverty. Throughout the nation, widows are subjected to physical and psychological harm from their families and communities following the deaths of their husbands. Women are marginalized across Nigeria, but widowed women often experience ostracization and oppression that leads to poverty. Most widows rely on informal business and petty trading to survive but these ventures typically only bring in less than a $1 a day for a family. This study seeks to explore an understudied population, Middle Eastern students, in the area of instructional communication. Of particular interest, the study seeks to understand how Middle Eastern students’ view their Western instructors’ verbal and nonverbal immediacy. The literature review establishes a conceptualization for verbal and nonverbal immediacy and the relationship between immediacy and gender, and immediacy and culture. Short-term missions participants encounter difference in purportedly captivating ways. Current research, however, indicates the practice does not lead to long-lasting, positive change. Brian M. Howell (2012) argues the short-term missions experience is confined to the limitations of the short-term missions narrative. People who engage in short-term missions build assumptions, seek experiences, understand difference, and convey meaning, as a result of this narrative. The process of telling and retelling travel stories is integral to the short-term missions experience. This dissertation analyzes the representations of immigrants from North Africa, Latin America, and Eastern Europe in Spain. As engaged scholarship, it seeks to better the portrayal of immigrants in the mass media through the study of literature, film, and music about immigration spanning from the year 2000 to 2016. Because misconceptions continue to propagate in the media, this dissertation works to counteract anti-immigrant, xenophobic representations as well as balance out overly positive and orientalized portrayal of immigrants with a call to recognize immigrants as human beings who deserve the same respect, dignity, and rights as any other citizen.

This study seeks to explore the relationship between intercultural communication experiences and college persistence in first-generation college students from the Central Appalachian region. Because Appalachia has a rich and unique culture, which is often misunderstood, the literature review seeks to establish a basis for studying this relationship as a way to understand the multi-dimensional nature of low-educational attainment in the Appalachian region, particularly Eastern Kentucky, Tennessee, Virginia, and West Virginia. This study analyzed the perceptions of University of Kentucky Dietetic and Human Nutrition students as they relate to the benefits and barriers of study abroad educational opportunities. The final sample consisted of 164 participants, with 18.9% (n=31) in the Coordinated Program in Dietetics (CP), 32.3% (n=53) in the Didactic Program in Dietetics (DPD), 42.7% (n=70) in the Human Nutrition (HN) program and 5.5% (n=9) who identified their program as ‘other’. The primary barriers to participation in study abroad were cost and problems fitting education abroad into the current program of study. The primary benefits were identified as dietary and health …

As economic development and technology improve our standards of living, they also create new challenges to conceptualizing concrete and abstract threats. Immigrating to a new country, however, involves the process of acculturation which can dilute many native practices. University studies in the Spanish language are often times confined to the classroom. However, more and more programs have been implementing civic engagement in the Hispanic community into the curriculum to create a service-learning experience. This study sought to determine the effectiveness of service-learning in enhancing communication techniques. Twenty undergraduate students at the University of Kentucky were surveyed at the onset and the conclusion of one semester while simultaneously serving the Hispanic community. The students, on average, increased the frequency of communication techniques after a semester of service-learning. Students who participate in a service-learning program often times see a result …
