Spontaneous lactic acid fermentation is an important process in cereal processing. It is applied to develop and enhance taste and flavour, modify texture and improve the microbial safety of foods. When applied to nixtamalized corn mixed with traditional steeped corn it is expected to further improve the functionality, improve nutritional quality and provide an alternative corn-based ingredient. The objective of this study was to investigate the chemical and functional properties of fermented blends of steeped and nixtamalized corn. Studies were conducted on the chemical and functional properties of fermented cowpea-fortified nixtamalized maize using response surface methodology. The central composite rotatable design for Ks3 was used to study the combined effect of lime concentration (0–1%), moisture content (55–65%) and cowpea level (0–30%) on pH, titratable acidity, water absorption, protein and viscosity of fermented nixtamalized maize. Regression models were developed to predict the variables. The presence of lime and cowpea influenced the pH, titratable acidity, water absorption, protein content and the cooked paste viscosity of the fermented cowpea-fortified maize. This is the chapter on small-scale aquaculture within a volume intended as a guide for practitioners engaged in sustainable rural livelihood and food production projects in the developing world. Included in this chapter on aquaculture are fundamentals of aquaculture water quality, selection of sites and construction methods for fish ponds, and management techniques for carp and tilapia which are nutritious and easy to grow in artisanal ponds. The fundamentals of cage culture of fish is also covered, along with the fundamentals of culturing oysters and other molluscan shellfish in coastal waters.

Sustainable resource management relies upon many disciplines and deals with complex interactions at the landscape scale. Many of the issues at the landscape scale arise from decisions taken at the household level and affect land use in fields and in small patches of forest. Spatially-explicit modelling of these units is desirable because it enables rigorous testing of model predictions, and thus of underlying propositions. The greatest insights may be obtained by participatory modelling of these processes as we understand them. Despite this, few models simulate dynamics at the household and field level.
