Reducing Food Scarcity: The Benefits Of Urban Farming, S.A. Claudell, Emilio Mejia

Urban farming can enhance the lives of communities and help reduce food scarcity. This paper presents a conceptual prototype of an efficient urban farming community that can be scaled for a single apartment building or an entire community across all global geoeconomics regions, including densely populated cities and rural, developing towns and communities. When deployed in coordination with smart crop choices, local farm support, and efficient transportation then the result isn’t just sustainability, but also increasing fresh produce accessibility, optimizing nutritional value, eliminating the use of ‘forever chemicals’, reducing transportation costs, and fostering global environmental benefits.

This write-up is mainly concerned with plant specimens recovered and examined from major prehistoric cliff dwellings being excavated during the Wetherill Mesa Project. It also includes anecdotes from the author’s experiences in Mesa Verde. An overall summary of the species identified is presented at the end of this work, including suggestions as to how plants may have been used based on modern Native American surveys.

In Bolivia we have three very valuable Andean grains: amaranth (Amaranthus caudatus), quinoa (Chenopodium quinua), and canihua (Chenopodium pallidicaule), which combined with cereals and legumes can become a complete and balanced food in order to combat the malnutrition that is so widespread in our region. In this study, various nutritional mixes were formulated, based on amaranth and other Andean crops, and the three best were chosen according to nutrition, palatability, and cost. In this analysis, we plan on developing vegetable mixes with high nutritional qualities and instant fuel consumption. These are to be used as a nutritional supplement in the feeding of children from 6 months of age. Initially, I selected the raw material, due to its high protein content and low cost (soy, tarhui, Cuban corn, rice, wheat, barley). They formed mixes with nutritional characteristics similar to the control for reference (15.5% of protein, 419 kcal of energy). Many agricultural communities have developed in Utah since the first settlement, but many no longer exist today. Some of these early communities experienced a "boom and bust," while others struggled for several years and were eventually abandoned. Johns Valley is a good example of these historic communities, as it experienced rapid growth and times of success and prosperity, yet it struggled and was eventually abandoned.
