In the United States, Salmonella Javiana is among the top 5 most common nontyphoidal Salmonella serotypes, with a 325% increase in infection rate since 1970. Globally, nontyphoidal Salmonella leads to approximately 93.8 million illnesses and 155,000 deaths annually, with disproportionate impacts in developing countries. In the United States alone, these infections lead to over $4 billion in costs, the majority of which are attributed to those expenses incurred from mortalities. The anaerobic habitat of the four chambers in ruminant’s foregut plays a vital role in the fermentation of the food by the active involvement of the residing microbial community. The cultivability and the potential role of rumen bacteria in the field of livestock production, host health and immunity are important to study. The developed anaerobic culturing techniques enable us to culture and screen different rumen bacteria to study the anti-pathogenic effects. Quantitative Microbial Risk Assessment For Parts, Ground, And Msc Poultry Product Including Intervention Analysis And Exploration Of Enterobacteriaceae As An Indicator Organism In Poultry Processing, Leigh Ann Parette

Samples collected at five different large bird poultry processing facilities over a period of 7 months from prescald to post debone locations were enumerated for Enterobacteriaceae, Salmonella spp., and Campylobacter spp. and the results were used to create Quantitative Microbial Risk Analyses (QMRA) models for parts, ground, and mechanically separated chicken (MSC) products. Sensitivity analyses indicated the points in the process at which reductions would be most advantageous to the endpoint and simulation models were run to test reductions required to meet the current USDA performance standards.

Salmonella have been causing huge losses in the poultry industry and have been a major cause food borne illness for many years. Salmonella infections in humans from poultry have been increasing. Good hygiene and biosecurity measures can reduce the incidence of Salmonella infections at poultry farms. Disinfection is a most important measure taken to prevent Salmonellosis in poultry. This research was conducted to determine the efficacy of 12 disinfectants against seven Salmonella isolates in the presence and absence of organic matter.
