Access to healthy food is a critical factor impacting childhood obesity. Brighter Bites is a school-based program that addresses the issue of fresh food access among low-income families living in food deserts using a food co-op model. The aim of this study is to evaluate initial parent participant reactions to the ongoing Brighter Bites program using Photovoice. A predominately Hispanic, economically disadvantaged, urban school was chosen as the site for the Photovoice project. A total of seven Brighter Bites parent participants were enrolled and six completed the study. The participants developed research questions, took documentary photographs, completed a group analysis …

Background: Diet-related chronic diseases, such as diabetes mellitus, hypertension, and hyperlipidemia have affected millions of individuals, resulting in disease-related complications and mortality. Strategies that may improve the outcome of chronic disease management include modification of lifestyle risk factors such as unhealthy diets. TEACH Kitchen is an experiential education program related to community nutrition, the goal of which is to teach patients management of chronic disease through dietary change.
Methods: Adults (n=144) ≥18 years old and their children (n=144) 7-17 years old will complete four 2-hour sessions. Components of each session will include brief nutrition education (20 min), an interactive cooking …
The Importance Of Nature: An Investigation On How Geography Influences Well-Being, Christina Cobb
The Importance Of Nature: An Investigation On How Geography Influences Well-Being, Christina Cobb
Independent Study Project (ISP) Collection
The objective of this community service project (CSP) was to study how a community’s location, specifically within nature, influences their well-being. I hoped to see how the community’s location, within Chapada Diamantina national park, influences the many ways health is promoted, and how these ways are affected by their location within nature. This project was built upon a review of the literature, which found that there is a theoretical basis for the notion that contact with nature is beneficial, a term deemed Biophilia. There is a robust body of academic research that highlights the health benefits deriving from contact …

Addressing Diabetes Prevention At The American Indian Summer Medical Wellness Camp, Mahpiya Vanderbilt, Francine Gachupin, Phd, Mph
Journal of Health Disparities Research and Practice
American Indian youth ages 10-19 are nine times more likely of being diagnosed with type 2 diabetes compared to non-Hispanic whites. A family history of diabetes, being overweight, and being inactive are the main risk factors for type 2 diabetes. The American Indian Summer Medical Wellness Camp is a six day camp for American Indian youth where they are taught about nutrition and fitness in an effort to prevent diabetes. What I looked at is if students who have attended the camp in previous years make different choices than the youth who have never attended camp. I hypothesize that if …
Integrating Diet And Exercise Into Care Of Prostate Cancer Patients On Androgen Deprivation Therapy, Mark A. Moyad, Robert Newton, Ulf W. Tunn, Damian Gruca
Integrating Diet And Exercise Into Care Of Prostate Cancer Patients On Androgen Deprivation Therapy, Mark A. Moyad, Robert Newton, Ulf W. Tunn, Damian Gruca
Research outputs 2014 to 2021
Improved diagnosis and treatment regimens have resulted in greater longevity for men with prostate cancer. This has led to an increase in both androgen deprivation therapy (ADT) use and duration of exposure, and therefore to its associated adverse effects, such as sexual dysfunction, osteoporosis, reduced muscle mass, increased fat mass, and increased incidence of cardiovascular disease and type 2 diabetes. Given that the adverse effects of ADT are systemic, often debilitating, and difficult to treat, efforts continue in the development of new strategies for long-term management of prostate cancer. The PubMed database was searched to select trials, reviews, and meta-analyses …

Moderation Analysis Of Bowel Function Among Nutrients And Physical Function Or Depression, As Well As Whether Bowel Function Is Related To Cognition In Older Adults, Jessie Alwerdt
USF Tampa Graduate Theses and Dissertations
As we age, the risk for gut issues, such as smooth muscle tone, may be an underlying indirect or direct cause or risk factor for many age-related issues, such as frailty. Consequences of decreased motility and depleted epithelial barrier may result in nutrient deficiencies that may increase the risk for malnutrition (Brownie, 2006). Further, there is increasing evidence that there is a gut-brain-axis relationship that may influence cognition and mental health issues, such as depression and anxiety. While there are relationships established, the interconnections of these factors have yet to be fully understood.
This dissertation examined several relationships specific to …

Being taller is associated with enhanced longevity, and higher education and earnings. We reanalysed 1472 population-based studies, with measurement of height on more than 18.6 million participants to estimate mean height for people born between 1896 and 1996 in 200 countries. The largest gain in adult height over the past century has occurred in South Korean women and Iranian men, who became 20.2 cm (95% credible interval 17.5–22.7) and 16.5 cm (13.3–19.7) taller, respectively. In contrast, there was little change in adult height in some sub-Saharan African countries and in South Asia over the century of analysis. The tallest people …

Have You Counted The Ingredients On Your Child's Lunch Tray?: An Economic Analysis Of Sustainability Initiatives Within The School Lunch Program, Vanessa R. Scalora
Business and Economics Summer Fellows
In 2010, President Obama signed the Healthy Hunger Free Kids Act, establishing a monetary incentive for schools that served meals following a more rigorous nutritional requirement than standard guidelines. This act is a step in the right direction towards placing more importance on school lunches, however America’s lunchroom practices continue to be environmentally unsustainable, and students absorb this message. The production and transportation of processed cafeteria food contributes to climate change, its packaging is polluting, and its consumption contributes to obesity. The use of premade foods and sales from vending machines increase as lunch times grow ever shorter. In addition, …
Nutrition Informatics: Information Technology Transition For Registered Dieticians, Arlanda Bell
Nutrition Informatics: Information Technology Transition For Registered Dieticians, Arlanda Bell
Applied Research Projects
The passing of the Health Information Technology for Economic and Clinical Health Act (HITECH) has created a growing push for healthcare organizations to no longer use paper based records and convert to an Electronic Health Record (EHR). Along with the adoption of an EHR comes a necessary change for ancillary services like nutrition and dietetic services because it affects patient care as well. In order to maintain a professional standard in patient healthcare as other health disciplines have done, the development of nutrition informatics model has become necessary. Nutrition informatics will prove to be a necessary addition to the developing …

Vietnam has been decentralizing nutrition planning to provinces, which could help with local relevance and accountability. Assessment in 2009 found a continuing top-down approach, limited human capacity, and difficulty in integrating multiple sectors. Alive and Thrive (A&T) provided targeted assistance and capacity-building for 15 provincial plans for nutrition (PPNs). We aimed to (i) assess PPN content and quality improvements 2009-2014, and (ii) explain processes through which change occurred. Data consisted of interview-based assessments of provincial planning processes, annual PPN assessments, and tracking of A&T involvement. At endline, some provinces produced higher quality plans. Local planning skills improved, but capacity remained …

Senior Honors Projects, 2010-2019
Purpose: Brain Derived Neurotrophic Factor (BDNF) is part of the superfamily of neurotrophins including: nerve growth factor (NGF), neurotrophin-3 (NT-3) and neurotrophin-4 (NT-4). Recent evidence suggests that aerobic activity can increase BDNF levels both during and following exercise. Likewise, dietary habits have been shown to alter BDNF levels. However, nothing is known about the effect of BDNF levels during aerobic activity under specific dietary interventions. The purpose of this study was to examine the effects of specific macronutrient supplementation on BDNF levels during aerobic exercise. Methods: We had the opportunity to determine BDNF levels in blood samples obtained from two …
