This project explores ways in which food pantries across Ohio college campuses are accommodating for those with food restrictions such as food allergies, religious diets, or personal choice (vegan/vegetarian). Food insecurity is a widespread issue that affects many Americans. College students especially bear the burden of this issue. Food pantries are a common institution to combat food insecurity, and these work for many of the individuals that use them. The Association Between College Age Students' Nutrition Intake And Depression, Mackenzie Allen

The research performed was to determine a correlation between depression and nutrient intake in college age students. This study used NHANES publicily available data and IBM's SPSS statistical software to analyze a correlation between depression and nutrition/lifestyle variables: vitamin D, vitamin B12, saturated fatty acids, unsaturated fatty acids, fiber, and exercise. The study found that fiber and unsaturated fatty acid intake had a negative correlation with depression, meaning that as the intake of these nutrients increased, depression decreased. This research reveals key factors to improve the nutritional status of college age students, along with their emotional wellbeing.

The diet quality was analyzed for people living in New Zealand and people living in other Westernized Countries (United States, Canada, Western Europe) based on the dietary guidelines. Diet quality was analyzed by looking at consumption of food groups such as fruits, vegetables, meat, and seafood as well as nutrients such as saturated/trans/unsaturated fat, sodium, and added sugars. These nutrients have been linked to certain health outcomes and chronic disease; therefore, the prevalence of chronic disease was researched to determine if there was a correlation between New Zealand's diet and their chronic disease rates in comparison to other Westernized countries.

This research investigated the effectiveness of a one-time food-demo at increasing the knowledge and improving the behavior of vegetable and diary consumption in the diets of college-aged females. Participation included a convenience sample of 26 college-aged females living in residence halls at a Bowling Green State University in Northwest Ohio. Testing was delivered before intervention as a baseline of knowledge and diet behavior. Post-testing was delivered immediately after intervention and evaluated any gain in knowledge from the baseline. One-month after intervention, post 2-testing was distributed evaluating retention of knowledge and behavioral change. This research examines student food insecurity at Bowling Green State University (BGSU) and available resources in Bowling Green, Ohio. Seven classes from BGSU’s main campus were randomly chosen to complete a survey regarding participant background information, details concerning food attainment, food security level, and use of community resources to allow for food acquisition. These classes included undergraduate classes and ranged from 15 to 272 students per class. Less than one quarter of student participants had food insecurity (19%), and food insecurity was significantly associated with financial dependence (P=0.04).
