Women with perinatal depression are at a high risk for unhealthy dietary behaviors but whether the coronavirus disease 2019 (COVID-19) pandemic has exacerbated this risk is unknown. Here we report the findings of a qualitative study exploring the impact of the COVID-19 pandemic on nutrition-related experiences of women with perinatal depression. Using a qualitative descriptive approach, in-depth interviews were conducted with 18 women with a history of perinatal depression and 10 healthcare providers. A semistructured format elicited how food and nutrition-related behaviors of women with perinatal depression were affected by the COVID-19 pandemic. Thematic analysis identified 4 themes related to …

The supplemental nutrition program of women, infants and children (WIC) is a nationwide program designed to give women and children access to basic nutritional foods, breastfeeding services, and healthcare referrals. WIC has been shown to help prevent some diseases such as nutritional deficiencies or type two diabetes by requiring participants to attend pre- and postnatal appointments and nutritional counseling. The effectiveness of the WIC program is not well known in individual states. The purpose of this research is to identify trends of the WIC program and resources within South Dakota through an analysis of the community health needs assessments. The …

Are School Lunches Contributing To The Obesity Epidemic Among Children?, Luis Chavez
Electronic Theses, Projects, and Dissertations
Background: Childhood obesity is a major public health issue in the United States (U.S.) and recent data have shown that the incidence and prevalence have been increasing over the past 20 years. Poor dietary habits are often attributed to these increasing rates. The National School Lunch Program (NSLP) provides meals and snacks to over 30 million students. Therefore, determining whether an association exists between student participation in the NSLP, and their respective body mass index (BMI) is critical. Few studies have examined a family’s economic stability and the child’s race as potential moderating variables. This study aimed to investigate …

Food Science Faculty Articles and Research
Human milk provides optimal infant nutrition for early life development. However, there are situations in which human milk feeding is not the most viable option for infant nutrition. Some factors include maternal illness, lactation insufficiency, storage complications, and time constraints. As a result, modern infant formula has become a substitute or alternative when breastfeeding is not possible or is inadequate for infants. In the optimal design of formula, many factors are considered in creating a product that is safe and provides a nutritional profile either equivalent to human milk or in optimal alignment with infant needs. Human milk composition serves …
