Reducing Food Scarcity: The Benefits Of Urban Farming, S.A. Claudell, Emilio Mejia

Urban farming can enhance the lives of communities and help reduce food scarcity. This paper presents a conceptual prototype of an efficient urban farming community that can be scaled for a single apartment building or an entire community across all global geoeconomics regions, including densely populated cities and rural, developing towns and communities. When deployed in coordination with smart crop choices, local farm support, and efficient transportation then the result isn’t just sustainability, but also increasing fresh produce accessibility, optimizing nutritional value, eliminating the use of ‘forever chemicals’, reducing transportation costs, and fostering global environmental benefits.

Acid whey, a byproduct of Greek yogurt production, has little commercial value due to its low protein content and is also environmentally harmful when disposed of as waste. However, as a product of microbial fermentation, acid whey could be a rich source of beneficial metabolites associated with fermented foods. This study increases understanding of acid whey composition by providing a complete metabolomic profile of acid whey. Commercial and lab-made Greek yogurts, prepared with three different bacterial culture combinations, were evaluated. Samples of unfermented yogurt mix and cultured whey from each batch were analyzed. This data set contains information about Registered Dietitian Nutritionists in the USA and their experience with caregiving, work-family conflict, work-family enrichment, and other work- and family- related characteristics. Data was collected electronically in April 2018 through a national survey. Items that are not relevant to the papers being published were removed, especially open-ended responses which could contribute to deductive disclosure. This is the raw data before responses were excluded for being incomplete.

This paper utilizes survey responses from local coordinators of LCF, an international micronutrient supplementation humanitarian organization, to provide insight into the challenges and personal rewards of providing nutrition education to parents of malnourished children. LCF is based in Utah and operates in 19 countries throughout the world. LCF recently introduced a series of health lessons geared toward parents of malnourished children. A survey was sent to LCF workers in 12 countries in order to gather feedback about the health lessons. In Bolivia we have three very valuable Andean grains: amaranth (Amaranthus caudatus), quinoa (Chenopodium quinua), and canihua (Chenopodium pallidicaule), which combined with cereals and legumes can become a complete and balanced food in order to combat the malnutrition that is so widespread in our region. In this study, various nutritional mixes were formulated, based on amaranth and other Andean crops, and the three best were chosen according to nutrition, palatability, and cost. The purpose of this study was to determine the effect of selected physical socio-environmental variables on total percent body fat. The sample population consisted of single, LDS, white women attending Brigham Young University (BYU) and California State University at Fullerton (CSUF). Significant data as well as trends that appeared were included in this paper.
From the data collected, it was concluded that the sample populations at BYU and CSUF were the same. The incidence of obesity was determined only among individuals attending both universities. The entire sample population mean was 22.19 percent. This percentage did not meet the obesity criteria. …
