Upon close examination by nutritional professionals, concern has arisen regarding the typical contents of a young adult diet. College student weight gain has steadily increased throughout the past decades. Issues resulting from overweight and obesity can lead to chronic disease and increased mortality risk. Inability to maintaining a healthy weight status may be attributable to unhealthy eating behaviors that often lead to poor diet quality and overeating. Introduction

Obesity disproportionately affects rural communities, and Appalachia has some of the highest obesity rates in the nation. Successful policy, systems, and environmental (PSE) interventions to reduce obesity must reflect the circumstances of the population. We used a health equity lens to identify barriers and facilitators for healthy food access in Martin County, Kentucky, to design interventions responsive to social, cultural, and historical contexts.

Methods

We conducted 5 focus groups in Martin County, Kentucky, in fall 2019 to obtain perspectives on the local food system and gauge acceptability of PSE interventions. We used grounded theory to identify perceived barriers and …

High rates of obesity are seen across the country with rural areas disproportionately affected. Based on the socio-ecological model, policy, system, and environmental approaches targeted at the population level have the potential to create more sustainable health behavior change than individual level approaches. Historically, the Cooperative Extension Service (CES) has provided direct education related to healthy eating and active living in response to high obesity rates. Rural Americans are medically underserved groups and are at greater risk of becoming obese than urban Americans. The purpose of this qualitative study was to determine the perceived causes of obesity in six counties of rural Kentucky and to determine how to customize strategies to reduce obesity in these areas. University of Kentucky Cooperative Extension Service Agents formed coalitions in each of the six counties to assess their communities’ needs and assets to inform plans for implementing evidence-based obesity interventions. This cross-sectional study examines multiple dimensions of social position in relation to obesity-related behaviors in an adolescent and young adult population. In addition to using conventional measures of social position, including parental education and household expenditures, we explore the usefulness of three youth-specific measures of social position – community and society subjective social status and school dropout status. Data are taken from a 2004 house-to-house survey of urban households within the bottom 20th percentile of income distribution within seven states in Mexico. Parental feeding practices are thought to influence children's weight status, through children's eating behavior and nutritional intake. However, because most studies have been cross-sectional, the direction of influence is unclear. Moreover, although obesity rates are high among Latino children, few studies of parental feeding practices have focused on this population. This 2-year longitudinal study examined mutual influences over time between parental feeding practices and children's weight status, in Mexican American families with children 18 years old at baseline. The marketing of unhealthy food to children is often cited as a cause of the obesity epidemic.1 However, most studies that examine this issue evaluated the marketing of food through print or television advertising. This project investigates the marketing of food products to children through incentive based programs, specifically General Mill’s Box Tops 4 Education. This study undertakes a preliminary systematic analysis of Box Tops food items to determine their healthfulness. The purpose of this survey research was to examine the psychosocial characteristics of obesity risk-reduction behaviors in Chinese Americans. Obesity risk-reduction behaviors and psychosocial variables derived from the Theory of Planned Behavior and the Health Belief Model were measured. A questionnaire was administered to a convenience sample of 300 young adult Chinese Americans residing in the New York metropolitan area. Results suggest that when communicating messages to low adopters of health behaviors, promoting positive attitudes and social influences for healthful eating should be emphasized. This thesis contributes to the literature on sustainable consumption by using scenario analysis to evaluate the environmental and health costs of the U.S. diet relative to the French, Japanese, Mediterranean, and Nordic diets, identified in the literature as healthier diets. As a first step in estimating environmental costs, the energy efficiencies of each diet are calculated by decomposing each of the diets into their respective components. Then, the dietary efficiencies are translated into CO2 emissions. One quarter of the world’s population is thought to have the metabolic syndrome, and first line treatments include dietary strategies for weight loss. Restrictive diet interventions commonly used in research appear to lack long-term sustainability; therefore, other approaches are warranted. The Canadian Healthy Eating Index (CHEI) was used as a framework and outcome measure for a 6-month ad-libitum diet quality intervention that assessed diet quality and key risk factors of the syndrome. Participants (n=23) were randomized to the nutrition program (n=16) or usual care (control) (n=7). Post intervention, CHEI scores increased by 9.1 and 3.4 points intervention and control, respectively …

For my film, I explored these two areas and compared the food and exercise culture to one of the healthier regions, the West.
