Reducing Food Scarcity: The Benefits Of Urban Farming, S.A. Claudell, Emilio Mejia

Urban farming can enhance the lives of communities and help reduce food scarcity. This paper presents a conceptual prototype of an efficient urban farming community that can be scaled for a single apartment building or an entire community across all global geoeconomics regions, including densely populated cities and rural, developing towns and communities. When deployed in coordination with smart crop choices, local farm support, and efficient transportation then the result isn’t just sustainability, but also increasing fresh produce accessibility, optimizing nutritional value, eliminating the use of ‘forever chemicals’, reducing transportation costs, and fostering global environmental benefits.

This paper analyzes the effects of the hegemonic food system on low income consumers in Salta, Argentina. Results from previous literature indicate a relationship between the dominant agroindustrial model in Argentina and the concentration of power in the food production system. This paper seeks to contextualize the reports of malnutrition in Salta, a province in northwest Argentina, within larger social, cultural, and nutritional trends. The Double Your Dollar (DYD) Program is a program that gives Supplemental Nutrition Assistance Program (SNAP) beneficiaries and Senior Farmers Market Nutrition Program (SFMNP) participants match dollars to spend at local farmers markets. The DYD’s goal is to incentivize healthy eating among individuals of low income and promote spending at farmers markets. Food insecurity affects over 60,000 individuals in Washington and Benton counties in Arkansas. This paper aims to shed light on the dissonance caused by the superimposition of Dominant Human Systems on Natural Systems. In Sub-Saharan African countries, soil fertility is low due to unsustainable agricultural practices and little to no access to chemical fertilizer. Poor yields have resulted in many of these countries struggling to produce enough food to feed their growing populations. Human urine has been used as an effective, low-cost alternative to chemical fertilizers in greenhouse and plot trials on a variety of vegetables, but its effects on elemental grain composition in cereal crops are largely unknown. This study examines models of community gardens and urban farms and determined a successful hybrid model for future implementation at the Huerta del Valle Community Garden. This was accomplished through analyzing the unique benefits and drawbacks of community gardens and urban farms as defined by the author, and then determining the components of each model that would maximize Huerta del Valle’s social and economic potential. The study assesses the influence of rapid urbanization on urban consumption pattern and food security of the urban dweller using primary data collected from urban households in Ashanti region of Ghana. The food security index was estimated based on a minimum daily calorie requirement of 2900Kcal. The consumption pattern indicates that yam, cassava and rice are gaining importance in urban household diet in the region. The expenditure share also shows that food constitutes 74.6% of urban household budget. The estimated food security index of the region is 0.66, implying that on average urban households in the region are food insecure. …

Numerous studies have measured the economic impact of increased consumption of locally grown foods, and many advocates have set goals for increasing consumption of locally grown foods to a given percentage. In this paper, we first apply previously developed methods to the state of Vermont, to measure the quantity and value of food that would be consumed if the USDA Dietary Guidelines were followed. We also assess the potential of locally grown foods to meet these guidelines, finding that meeting dietary guidelines with a local, seasonal diet would bring economic benefit, in this case, US$148 million in income for Vermont …
