Background: Diet plays a critical role in the prevention and treatment of metabolic syndrome (MetS). Plant-based diets (PBDs) have demonstrated a broad range of health benefits, including a protective effect against MetS. Most research on this topic has focused on PBDs as a whole, without considering the influence of diet quality. The purpose of this study was to investigate the relationship between plant-based diet quality and biomarkers of MetS.

This study examined if there were differences in perceived adult health score, perceived adult diet score, parent-perceived child health score, and parent-perceived child diet score by SNAP usage and food security in a rural, Appalachian Mississippi community. Adults (n=1084) with elementary school- aged children were surveyed in a rural, Appalachian Mississippi school district. Demographic, household adult food security (USDA 10-item measure), and perceived health and dietary data were collected. Diabetes is the seventh leading cause of death in the United States, affecting roughly 13% of U.S. adults aged 18 years or older. Type 2 diabetes accounts for 90-95% of all diabetes cases and is characterized by the progressive development of insulin resistance leading to sustained elevated blood glucose levels. Management of type 2 diabetes includes risk-reduction strategies and continuous medical care to prevent the development of complications.

Background:The Expanded Food and Nutrition Education Program (EFNEP) is a federally funded program through the United States Department of Agriculture that offers nutrition education to low income families across the U.S.

Purpose:This study assessed the effectiveness of Maine EFNEP on food-related behavior change and diet quality as measured by the Healthy Eating Index-2005 (HEI). This study also explored the relationship between the results on the HEI and participation in food assistance programs such as Supplemental Nutrition Assistance Program (SNAP) and Women, Infants, and Children (WIC), as well as the number of hours spent in the program.

Background: Increased intakes of ready-made and fast foods paralleled with decreased homemade food consumption have been associated with increased rates of obesity. Researchers have shown associations between cooking self-efficacy (SE) and cooking frequency (CF) with dietary quality and weight status. Some cooking interventions have shown positive associations with dietary outcomes, such as increased fruit and vegetable intake and decreased fast food consumption. There is still much unknown about SE and CF, especially among youth.

Young adults in Appalachia may face poor nutritional status due to low access to healthy food and high mental health symptoms attributed to high stress and the college environment. A cross-sectional design was used to investigate the relationship between diet intake and mental health status of this population via surveys. Participant responses (n = 1956) showed students’ mean number of depressed days over the past 30 days was 9.67 ± 8.80, and of anxious days, 14.1 ± 10.03. Proactive nutrition screening is an effective public health strategy for identifying and targeting individuals who could benefit from making dietary improvements for primary and secondary prevention of disease. The Dietary Screening Tool (DST) was developed and validated to assess nutritional risk among rural older adults. The purpose of this study was to evaluate the utility and validity of the DST to identify nutritional risk in middle-aged adults. This cross-sectional study in middle-aged adults (45–64 year olds, n = 87) who reside in Appalachia, examined nutritional status using an online health survey, biochemical measures, anthropometry, and three representative 24-h dietary recalls. …

Poor diet quality is a source of morbidity and mortality within the United States. Previous researchers have examined psychosocial influences on diet; however, the relationship between life chaos, a psychosocial measure, and diet quality was not known. The purpose of this cross-sectional survey study was to use the Life Chaos Scale and the Healthy Eating Index-2010 to collect data on life chaos and diet quality, consistent with the biopsychosocial model of health, from a sample of 103 U.S. adults. Overweight and obesity are risk factors for various chronic diseases. Sleep has been associated with overweight and obesity. One potential mechanism by which sleep may lead to overweight and obesity is through positive energy balance (i.e. energy intake exceeding expenditure). There are few studies examining the impact of sleep timing (onset and wake time) on diet and exercise.
