In a previous study we reported that 25% of college students had a family history of type 2 diabetes (T2D), and 39% of hypertension. Interestingly, between 17 to 47% reported not knowing about T2D or hypertension, neither the existing obesity-metabolic problems (ESFUERSO study). The COVID-19 pandemic forced confinement and modifications in food intake, physical activity, and psychological stress. This study aimed to analyze if the immune Ig-G anti-RBD (protective epitope in S protein) response associated with type of vaccination, metabolic risk, perceived stress, and history of COVID-19 contacts.

DIETARY DEAL is an EU-project led by MTU, tasked to develop an open-source dietary assessment tool (DAT) to harmonise collection and analysis of dietary data across Europe(1). A key component of all DATs is integrated food composition databases (FCD) containing energy and nutrient information (per 100g food) for translation of food intake data into nutrient estimates.

This preliminary research aimed to identify and quantify available FCD in European countries for inclusion in the new DAT.

Background: Rates of depression have been rising steadily over the last several decades with more than 264 million people affected, making it one of the top three burdens globally. The pandemic has brought on a greater risk of depression. Forty-two percent of individuals surveyed in December 2020 by the US Census Bureau reported depressive symptoms. Many factors, including poor diet quality, play a role in the development of depression during traumatic events like the pandemic. A low-quality dietary pattern has been associated with obesity, low-grade chronic inflammation, dysbiosis, increased cortisol levels and monoamine neurotransmitter deficiency. Nitrate-rich beetroot juice (BR) improves muscle contraction which is relevant for intense intermittent-type sports. However, few studies have examined the effect of BR ingestion on performance using sport-specific exercise protocols. Moreover, there is a scarcity of research that include female participants which limits real world application given that females potentially have different responses to BR ingestion. Nitrate-rich beetroot juice (BR) supplementation has been reported to preserve executive function (i.e. decision making and reaction time) before and after a simulated soccer match in recreationally active males, which may be due to enhanced cerebral blood flow. Objective: College students are at higher risk for the development of orthorexia nervosa (ON), a term used to describe the pathological obsession with healthy eating. This study aimed to assess how the factors of eating disorder (ED) history, gender, and dieting behaviors affect the ON in this population.

Methods: Students 18 years or older in a southeastern university were invited to take an online survey. Survey questions include Bratman Orthorexia Test (BOT), Eating Attitude Test-26 (EAT-26) and participant characteristics.

Results: 411 students (ages 18-65, BMI 15.1-55.5, female 75.2%, white 75.6%, graduate students 16.1%) have completed the survey. Comparing to students …

Relationship Satisfaction & Diet: Exploring The Mechanisms Through Which Intimate Relationships Influence Physical Health, Lindsey Robinson, Dylan Hillock, Dr. Josh Novak

Southeastern Council on Family Relations Conference

Understanding how intimate relationships influence physical health has been an important topic of focus; however, research remains unclear on the mechanisms through which this influence occurs. The purpose of this study was to examine how relationship satisfaction relates to diet quality, through mental health (depression and anxiety) and diet self-efficacy. Using a dyadic mediation model with a sample of 234 heterosexual couples, researchers found that women's higher relationship satisfaction was associated with better diet through lower depression and higher diet self-efficacy. Results revealed the same association between women's relationship satisfaction and diet through lower anxiety. Interestingly, rather than mediation through …

The leading cause of death among firefighters is sudden cardiac event, and it is acknowledged that most ischemic events are due to an occlusive thrombus formation. In addition, due to the demanding job requirements and shift work, firefighters are commonly known to overuse caffeine as an ergogenic aid. Reducing sugar-sweetened beverage (SSB) consumption is associated with improved metabolic health in adults, but there is limited experimental research examining the consequences of adding SSBs to the diet, particularly in healthy individuals. The aim of the current study was to determine whether there were differences in glycemic and insulinemic outcomes following three weeks of added caffeine-free soda, 100% fruit juice, or water in healthy young adults. Amaranth is a gluten-free grain that has been introduced in many products for its nutritional benefits, such as improvements in calcium, iron and zinc intake. The purpose of this study was to determine if red velvet cupcakes made with amaranth flour could provide comparable taste, volume and texture to a red velvet cupcake made with wheat flour. This study examined habituation rates to foods high and low in sugar and fat, and investigated the relationship between food addiction (FA) scores and habituation rates.

Methods:

A one-group, within-subjects factor design (dried apricots [low in fat and sugar] and chocolate cake [high in fat and sugar]) was used. Participants played a computer task, which assesses habituation, for food points, with sessions counter-balanced by food. During school breaks, these children are at risk of going hungry. While Purdue Nutrition Society wishes that we could help all Hoosier children stay fed with nutritious meals, for now we are focusing on helping 20 local elementary students most at risk of going hungry over spring break.
