Two experiments were conducted to assess the efficiency of including novel protein ingredient Arthrospira platensis or improved soybean meal in a broiler diet. The first experiment aimed to determine the feeding value of soybean meal produced from varieties of soybeans bred for increased amino acid content (SBAA) improved oil content (SBO) compared to a conventional soybean variety in an ANOVA design fed to Cobb 500 female broilers for 28-42d of age. The SBAA and SBO soybeans contained overall higher amino acid content and lower oligosaccharide content compared to the conventional soybean variety in addition to improved oil quality. Five experiments were conducted to evaluate responses of broiler chickens fed diets with different dietary amino acid (AA) levels when fed normal and reduced dietary crude protein (RCP) diets and reared under different coccidiosis control programs. In the studies with the use of RCP diets, the relationship between dietary Gly + Ser and the Met:Cys ratio was investigated. Experiment 1 evaluated broilers in 2 coccidiosis control programs (live vaccine or in-feed zoalene) and fed increased dietary AA derived from soybean meal or unbound sources from 0-40 d. Purpose: The purpose of this investigation was to evaluate the effects of combined (estradiol and progestin) monophasic oral contraceptive pill (OCP) use on thermoregulation. Further, we sought to evaluate OCP use on acute rehydration post-exercise in the heat using recommended rehydration guidelines. Methods: Twelve healthy, aerobically trained (VO2peak = 47.8 ± 4.7 mL/kg/min), long term female oral contraceptive users completed a familiarization trial and two experimental days separated by ≥ 7 days. These lifestyle behavior changes in emerging adulthood provide a foundation for future health behaviors that often persist through all of adulthood. The aim of this study was to use Latent profile analyses (LPA) to discover distinct profiles of homogenous groups of young adults based on alcohol, diet, and exercise behaviors. Overall, five distinct profiles for both males and females were identified: Moderates, Unhealthy Eaters, Medium Drinkers, Healthier Eaters and Exercisers, and Heavy Drinkers. PURPOSE: The purpose of this study was to investigate the effects of 12 weeks of protein supplementation and Autoregulatory Progressive Resistance Exercise (APRE) training on measures of body composition, muscular performance, and free testosterone in middle-aged men. METHODS: Untrained males (n = 35; 43.3 ± 6.6 years) participated in this study. Epidemiological studies have shown an association between high carrot consumption and low prevalence of cancer. This observation has been thought to be attributed to carrot carotenoids. Despite this, various intervention trials have displayed no changes in incidence or increased incidence of cancer with carotenoid supplementation. Purpose: The purpose of these studies was to observe the effect of dehydration on exercise performance while subjects were blinded to their hydration status. Methods: Study 1: Seven male cyclists (weight: 71±8 kg, body fat: 14±6%, VO2peak: 59.4±6 ml∙kg-1·min-1) exercised for 2 hours on a cycle ergometer at 55% VO2peak, in a hot-dry environment (35°C, 30% rh), with a nasogastric (NG) tube under euhydrated (EUH-NT) and hypohydrated (DEH-NT) conditions. In both trials, thirst was matched by drinking 25 mL every 5 min. In the EUH-NT trial sweat losses were fully replaced via the NG tube. Following the 2 hours of …

Food retailers not included in this mandate can choose to voluntarily provide calorie information to consumers. This project assesses the effectiveness of the Expanded Food and Nutrition Education Program (EFNEP) within the context of supermarket access. EFNEP is a national community nutrition education program that strives to give participants the tools to live healthier lives. Analysis was performed on participants from 16 Arkansas counties that completed EFNEP during 2013 or 2014. Along with the rise in obesity, rates of non-alcoholic fatty liver disease (NAFLD) have also increased. NAFLD may begin with fat accumulation in the liver, but can progress to non-alcoholic steatohepatitis (NASH), fibrosis, and eventual cirrhosis. With no pharmacological treatment for NASH, lifestyle interventions appear vital to maintaining liver health. This qualitative study assessed consumers’ current methods of determining portion sizing of chicken products and examined their perceptions of how effectively three package designs communicate portion size. Everett M. Rogers’ Diffusion of Innovations (DI) Theory analyzes the characteristics of the consumer of the innovation (adopter) and the impact these characteristics have on adopting new innovations. The innovation in this study will be the prototype packaging. Focusing on Rogers’ adopter characteristics and defined proprietary consumer segmentation characteristics, this study will be pivotal for future package design projects targeting nutrition education.
