The purpose of the study described in this article was to assess the walkability and bikeability of 15 U.S. postsecondary education campuses. The Centers for Disease Control and Prevention's evidence-based Healthier Worksite Initiative Walkability Audit was modified to rate campus walking and biking path segments for path safety, quality, and comfort. Universities (n = 13) assessed an average of 44 path segments, which earned a mean score of 72.71 +/- 10.77 SD (possible range 0 to 100). Postsecondary technical schools (n = 2) assessed 20 path segments, which received an average score of 76.56 +/- 13.15. About 70% of path …

Program Pemberian Makanan Pendamping ASI (MP-ASI) berupa bubur untuk 6-11 bulan dan biskuit untuk 12-24 bulan dan bertujuan untuk meningkatkan status gizi pada anak, terutama pada keluarga miskin. Tujuan penelitian ini mengevaluasi berbagai faktor yang memengaruhi berat badan tidak naik pada baduta keluarga miskin setelah pemberian program MP-ASI kementerian kesehatan. Penelitian ini dilakukan pada 82 ibu baduta yang menerima MP-ASI dengan desain studi kasus kontrol menggunakan data primer dan sekunder. Analisis dilakukan dengan regresi multivariat. Many Mexican women consume inadequate amounts of folic acid. Fortification of the corn tortilla could be an effective way to help increase the folic acid levels among the Mexican population. Previous studies have shown significant folic acid losses in fortified tortilla dough (masa) as it is held before baking. This loss in folic acid could be due to degradation by lactic acid bacteria naturally present in the masa. The microflora of traditionally made nixtamalized corn masa from six tortilla mills in Guadalajara, Mexico were isolated and characterized, and their effect on folic acid content was evaluated. Creating Healthful Food Environments Through Policy Change: A Toolkit for Faith-Based Organizations provides practical information to members of the faith-based community for use when developing, adopting, and implementing a food and beverage policy within their organization. For the purposes of this Toolkit, the term “food and beverage policy” refers to a policy officially adopted by a faith-based organization (FBO) (e.g., a church, parish, temple, mosque) requiring that the food it purchases, provides, or sells to members and guests meets guidelines established by public health authorities. Mitochondrial dysfunction and the resulting oxidative stress is widely recognized as a contributing factor to the development of numerous pathophysiologies including obesity, diabetes, cardiovascular disease, sarcopenia, liver disease, dementia, amongst others. Mitochondrial dysfunction results in a reduced mitochondrial number and oxidative capacity, causing an increase in free radical production and consequently oxidative stress. As such, the characterization of compounds that can upregulate mitochondrial biogenesis and function could provide the foundation for the development of therapeutic nutraceuticals that promote mitochondrial health, and consequently reduce oxidative stress. Rising feed costs, environmental pollution concerns targeted at animal agriculture, a worldwide focus on sustainability and the never ending battle to improve production and efficiency within the poultry industry challenges nutritionists to focus on products to improve nutrient digestibility and decrease feed costs while at the same time maximizing performance. The research presented in this dissertation focuses on improving nutrient utilization of protein sources with protein liberating enzymes currently available commercially. The research also conducted addresses the addition of crystalline amino acids valine and isoleucine and their effect on improving efficiency of broilers.

Two separate series of experiments were conducted to determine: 1) the influence of dietary arginine supplementation in late gestation on reproductive performance, and 2) the impact of a whole yeast product in gestation, lactation, and weaned pig diets on reproductive, growth, and immune parameters.
In the first study 99 sows were provided a control diet, or the control diet supplemented with 1% L-arginine from gestation d 93 to 110. Compared to control-fed sows, no differences were observed in reproductive parameters, however a tendency for increased gestational weight gain was observed for sows provided supplemental arginine.

Most cancer cells undergo the Warburg effect, a shift from oxidative to glycolytic metabolism accompanied by suppression of p53. We have demonstrated leucine stimulation of mitochondrial biogenesis, fatty acid oxidation, and p53 expression in both muscle and fat cells. Accordingly, we now sought to determine if leucine stimulates mitochondrial biogenesis and exit from cell cycle in A-375 melanoma cells. Because these cells use glucose as their primary substrate, cells were grown under both standard (11.1 mM) and reduced (5.5 mM) glucose conditions. Increasing glucose reduced mitochondrial mass 50-60%, and accelerated cell proliferation by ~20%. Leucine (0.25, 0.5, 0.75, and 1.0 …

In spite of significant advances in the prevention, diagnoses, and treatment of most chronic diseases, there is evidence that racial and ethnic people of color tend to receive lower quality of care and less preventive interventions than the majority members of a community. While our health system should improve its efforts at addressing and reducing disproportionality in health care, African Americans can make behavioral changes through diet and exercise that will reduce their susceptibility to chronic illnesses. This study compared the effectiveness of diabetes self-management education (DSME) methods by examining changes in knowledge, attitude, and behaviour (KAB) after receiving education. Participants from a convenience sample were randomized into two groups, one receiving education through conversation maps and the other through traditional group education. Participants’ knowledge and attitude changes were measured by using a repeated measures pre-test/post-test design and changes in Hb A1c were observed. Focus groups were conducted after education was received to obtain perceptions and self-reported behaviour changes. Background: Walking for exercise remains the most frequently reported leisure-time activity, likely because it is simple, inexpensive, and easily incorporated into most people's lifestyle. Obesity is an epidemic in the United States. Over 61% of U.S. adults and 58% of Nevada adults have Body Mass Index’s (BMI) that classify them as either overweight or obese (Behavioral Risk Factor Surveillance System [BRFSS], 2005). Training and competing in desert environments may exacerbate concerns related to disordered eating, supplement use, and hydration in some student athlete populations. A survey administered equitably to both genders solicited self-reported responses from members of 18 different teams over four years from a southwestern United States university athletic program. More than 1,700 athletes responded to 42 items on the questionnaire. Teams, not individual student athletes, were the units of measure for statistical analyses. Initial analysis of results indicated that there were no overt concerns regarding dietary behaviors due to training and competing in the desert environment. Further analysis subjected the …

Children’s food choices are influenced by the media, television advertising, focusing directly at infants and toddlers. This literature review presents multiple studies that explain how TV advertising of fast food, sugary cereals and other foods high in calories, fat, sugar, sodium and low in nutrients are contributing to the increase rates of childhood obesity. It is concluded that children are exposed to high amounts of food advertisements which affect young children’s food choices and poor food consumption. Fatigue is a condition that negatively impacts quality of life and occurs in about twenty four percent of adults worldwide. Many factors may contribute to fatigue. One factor is the macronutrient composition of a person’s diet, particularly, the amount of simple carbohydrates. This paper is a review of the current literature and examines the relationship of carbohydrate consumption and fatigue to determine if a diet low in simple carbohydrates results in an improvement in fatigue ratings. The purpose of this study was to determine the food behaviors of nutritionally high-risk seniors as a function of their racial background, gender, marital status, and education level. A total of 69 seniors were identified to be at high nutritional risk using the Nutrition Screening Initiative (NSI) checklist. A supplemental questionnaire (SQ) was created to examine the risk factors in relation to the participant’s demographic background. Key results indicated that Asians practiced healthy food behaviors and women were more likely to eat alone (p≤0.05). Married participants (90.9%) were most likely to consume 2 meals or more each day. The purpose of this statewide study was to address the nutrition knowledge, attitudes, and perceptions of school foodservice personnel in Nebraska regarding offering/serving healthy school meals. Moreover, this study identified some potential barriers and avenues of action for offering/serving healthy school meals. Data obtained from this study indicates that there is a strong correlation (r= .103, p r .237, p< .01) between the foodservice staff’s self-efficacy and their practices of offering/serving healthy school meals. Fortunately, the relationship between foodservice staff practices of offering/serving healthy school meals and their self-efficacy was positive and significantly predicted practices scores, β =.237, P< 0.01. The finding of the present study also identifies many barriers including lack of time and support that face the foodservice personnel in offering/serving healthy school meals. The findings suggested that there is an urgent need of a full school approach to promote and encourage healthy eating habits among students. Future research is needed to evaluate school wellness policies regarding healthy eating practices in schools. Moreover, establish partnerships with communities and universities for intervention that target students and their parents.
