This report is based upon the student's observations and experiences during an eight weeks' period of field training in the Commonwealth of Puerto Rico and the Hillsborough County Health Department, Florida Seven weeks were spent in Puerto Rico and one week was spent in Florida.

The places of work for the field experiences were jointly planned by the University of Tennessee, the Food and Agriculture Organization of the United Nations, and the United States Department of Agriculture.

Effect Of 9 Α-Fluorohydrocortisone Acetate On Gastric And Salivary Electrolytes Of Normal Fasting Subjects, Ardis Stern Beckner

The effect of 9α-FF on the Na:K ratio, chloride, and pH of saliva and gastric secretions, and on the total and free acid of gastric juice in normal human subjects was investigated. This study was designed to investigate whether conditions could be produced in the normal human subject similar to those present in patients with primary aldosteronism by using large doses of 9α-FF. August and others found a change in salivary electrolytes when cortisone, desoxycortisone, or ACTH were given to normal subjects. In these cases as in primary aldosteronism there was a decreased Na:K ratio and potassium excretion, with sodium …

Many Brazilians are malnourished and show lack of adequate education in nutrition and cookery by their poor food habits. Nutrition education is important means of combating malnutrition. There is a pressing need for more nutrition education in Brazil.

It has been the purpose of this study to present a small book, on the average Brazilian homemaker and layman's level with up-to-date nutrition information, simple principles for food preparation and economic and easy-to-prepare recipes calling for food readily available in Brazil.

This study was done at the White Memorial Medical Center to develop meaningful financial statements for the dietary department; to provide a simple method of interpretation of each financial statement; and to provide essential cost control data for the dietary department and the administrator. The benefits derived from this study were to assist the dietitian in controlling the dietary department's food costs.

The object of the experiments described in this publication was to gain information concerning the fate of a radioactive food fed to rats which had been made deficient in essential fatty acids (EFA). These experiments were designed to determine the effect of kinds and proportions of dietary fats and proteins on the distribution of a high protein C 14 -labeled food in rats that have been on a lo w-protein, fat-free diet and show the typical EFA deficiency symptoms.

Nutritionists, the medical profession, and the public in general have become increasingly interested in low fat food products. Cheddar cheese, as it is now made, has a high caloric value and therefore may be discriminated against in some diets. The production of a reduced fat cheddar-like cheese would be of importance to the cheese industry by providing a reduced fat, high protein product.

The chemical nature of the casein furnishes the foundation for the body and texture in cheese. The body and texture of typical cheddar cheese is influenced principally by its fat and moisture content.

It is desirable that an individual whose sensory judgment is used in evaluating the quality of foods possess the ability to discriminate and the ability to duplicate his judgments. The present study was conducted primarily for the purpose of evaluating the performance of members of a beef taste panel in the Food Research Laboratory at the University of Tennessee with respect to these competencies. These judges had had considerable experience in scoring beef.

Urea can be a valuable supplement for ruminants which have to depend on dry feed low in protein.

It is not a substitute for good quality conserved fodder.

Urea is extremely poisonous if eaten in excess and great care must be taken when feeding it to stock.

There are a variety of ways in which urea can be fed and these are outlined in this article.

The Department of Agriculture's Animal Nutrition Laboratory is now carrying out trials to determine the most convenient and safest method.

Think carefully before buying proprietary "shotgun" licks, warns Animal Nutrition Officer Dr. L C. Snook in this article.

Many of these licks contain a variety of minerals not needed by stock in Western Australia, and misleading claims are sometimes made as to their value.

Dr. Snook concludes that only three minerals are needed in this State, and gives a recipe for a cheap all-purpose lick containing them.

The tests reveal good and bad points in the laying strains available, and their results are a valuable guide to breeders.

Most of the chickens sold in Western Australia are now bred by hatcherymen who participate in the Random Sample Tests.
