America’s diet-related illness crisis intersects with a lack of nutrition literacy, nutrition security, and systemic inequities. The Cooperative Extension Service’s (CES) national infrastructure could potentially provide equitable access to quality nutrition education in the US utilizing a Master Food Volunteer (MFV) model. This research brief examined preliminary evidence for the MFV model as a support for CES agents and paraprofessionals, and results show a paucity of evidence. Further research and a pilot program with pre-established measures for health-related knowledge and behaviors could elucidate the model’s potential to increase equitable access to evidence-based programming, nutrition, and implementation guidance.

Objectives of Experiment 1 was to evaluate the impact of increased energy prior to AI on BW, ADG, and reproductive efficiency in heifers developed on range or in a dry lot. During the winter development period (131 ± 3.5 d/yr) heifers (n= 100/yr) were assigned to either upland range (RANGE) or fed a dry lot diet in two pens that either remained constant (DLLO) or increased in energy prior to AI (DLHI). Objective: The effects of ginkgo powder on the physicochemical indexes of wheat flour, as well as the nutrition, sensory, texture, cooking quality and bacteriostasis of noodles were studied. Methods: The physicochemical, nutritional and microbial indexes of flour and noodles were determined by instrumental analysis and chemical analysis respectively. And the sensory indexes of noodles were evaluated by sensory method. Results: The results showed that adding 0～18% ginkgo powder to wheat flour could reduce dough stability time, falling number wet and gluten content. In attempts to increase livestock production and decrease waste products from the seafood industry, crab meal and lobster meal were tested as a potential cattle feed ingredient. Jonah crab waste, Atlantic Red crab waste, soybean meal, and blood meal were collected from various vendors and utilized in an in vitro study, an in situ study, and a nitrogen analyzer to determine crude protein in each feed. Modern fast-growing broilers reach a body weight of 2.0 to 2.5 kg in 35 to 45 days with an average daily growth of 55 or more gram a day (Augère-Granier, 2019). In a study with different broiler strains representative of broilers in 1957 or 1978 were compared with a broiler strain from 2005 (Zuidhof et al., 2014). Sub-therapeutic doses of antibiotics were used in poultry production since the 1950s for improved production, prophylaxis, and animal welfare. Extensive and indiscriminatory use of antibiotics led to the emergence of antibiotic resistance in food-borne pathogens of public health significance (Jones & Ricke, 2003). As per the United States Centre for Disease Control, more than 2.8 million infections in 2019 were caused by multidrug resistant bacteria. Coccidiosis is the most common parasitic disease caused by Eimeria spp., leading to over $14 billion economic loss worldwide annually. The most prevalent Eimeria spp. in poultry include E. tenella, E. maxima, E. acervulina, E. brunetti, E. necatrix, E. praecox, and E. mitis and have different level of pathogenicity and specific infection sites in the intestine. Eimeria spp. invade intestinal epithelial tissues and induce intestinal damage, causing inflammation, oxidative stress, hemorrhage, and diarrhea. Phosphorus is an important component of bodily functions and is critical for adequate growth and development. This experiment evaluated the effect of maternal phosphorus intake on the growth and health of the calves. Treatments were 1) a free-choice mineral containing no supplemental P or 2) a free-choice mineral with 4% supplemental phosphorus. Primiparous, or pregnant for the first time, crossbred Angus beef cows (n = 36) were stratified by body weight and pregnancy status (bred by artificial insemination or natural service) then assigned to pasture groups (4 groups, 2/treatment, 9 heifers/group). Even with abundant dietary research and knowledge about healthy eating, there is still a considerable shortfall in dietary quality of low-income households in the US. Chen et al. (2012) proposed that this problem is at least in part due to low-income individuals’ having less expected future earnings and thus, reduced incentive to pursue longevity by means of healthy eating. We further their analysis, offering improvement by controlling for access to low-fat milk. We find that even when allegedly crucial factors such as cost and access are not issues, relative purchasing of low-fat milk is still linked to higher income.

This doctoral work investigated Khalas variety date seeds in three forms, as powder (DSP), ethanolic extract (DSE) and functional food developed with the seeds; pita bread (DSB). The study characterised the polyphenol profile by mass spectrometry and investigated the bioaccessibility using simulated in vitro digestion coupled with Caco- 2 model for absorption and transport. For this purpose, a total of 277 (n=130 in spring and n=147 in autumn season) samples were collected from high maize-growing localities i.e. Kasur, Pakpattan, Okara, Burewala, Sahiwal, Lahore and Melsi.
