Stigmasterol has been studied for its numerous biological effects on various metabolic diseases, but its potential role as a ubiquitous biomolecule in the plant kingdom is still in its infancy. Efficient utilization of stigmasterol’s properties, such as antimicrobial, antioxidant, and self-assembly, is necessary for the food industry to effectively prevent microbial growth in food., in addition, to delaying rancidity by slowing down lipid oxidation. The overall objective of the present work is to explore new applications of soybean oil based oleochemicals. Two main applications are developed; one using soybean oil, acrylic acid, and nonthermal plasma (NTP) treatment to dye para-aramids with cationic and non-ionic pigments, the other using fatty acids to synthesize waxes with bound quaternary ammonium compounds (QAC), an antimicrobial functional group, for fruit and vegetable postharvest coating. Black vultures, Coragyps atratus, are obligate scavenging birds that consume and dispose of decaying carcasses and carrion. They fulfill a key ecological niche in the environments in which they live. It has been observed that these vultures sometimes excrete bodily waste onto their legs. This adaptive behavior could help aid them in controlling bacteria and other microbes they encounter while stepping into a carcass to eat. Post-processing operations of extruded pet food kibbles involve coating the product with fats and flavorings. Bacteriocins represent a heterogeneous group of small, ribosomal-synthesized, potent antibacterial peptides produced by bacteria, capable of inhibiting bacteria both closely related or indeed those from other genera than the producer. Bacteriocins are a diverse range of ribosomally synthesized bioactive peptides, recognised predominantly for their potent antimicrobial activity against other strains closely related to the producer. The focus of this thesis was to explore this activity and examine the potential of bacteriocins to inhibit the growth of clinically relevant pathogens. Determination Of Some Quality Properties And Antimicrobial Activities Of Kombucha Tea Prepared With Different Berries, Oktay Tomar

Kombucha is a slightly sweet, acidic, carbonated, fermented beverage obtained by fermenting sugared tea (Camellia sinesis) with symbiotic bacteria. In the present study, kombucha was produced from black tea (Camellia sinensis), black grape (Vitis labrusca), black mulberry (Morus nigra), and rosehip (Rosa canina) fruits. Its physicochemical, microbiological, sensory properties and antimicrobial effects were investigated. During the fermentation, pH, Brix (%), viscosity, total antioxidant, and phenolic substance values decreased (p < 0.05). Total aerobic mesophilic bacteria (TAMB) and yeast/mold, Lactococcus/Streptococcus counts decreased, while the osmophilic yeast, acetic acid, and lactic acid bacterial counts increased (p < 0.05). The samples produced using black mulberry had the highest antibacterial activity (26.58 mm zone diameter), lowest minimum inhibitory concentration (MIC) (0.012 mg·L$^{-1}$), and minimum bactericidal concentration (MBC) (0.008 mg·L$^{-1}$) on Staphylococcus aureus.
