To evaluate increasing levels of sodium butyrate (SB) in nursery diets on growth performance (Experiment 1 & 2), complete blood cell count (Experiment 2), and the optimal level of fermented soybean meal for maximum performance in weanling pigs (Experiment 3), weaned pigs were blocked with initial body weight (BW) and allotted to dietary treatments. Treatments were: 1) Control (C) moderately complex corn-soybean-meal based supplemented with 0.05% benzoic acid (BA), but devoid of SB; C diet supplemented with 0.05%, 0.10%, or 0.15% SB (Experiment 1). Trace minerals, particularly copper, zinc and manganese, play a role in ensuring optimal immune function. To examine the effects of diets containing different levels and sources of trace minerals on the inflammatory response, Cobb 500 broilers were fed four experimental diets containing 5 mg/kg Cu and 45 mg/kg of Zn and Mn or 10 mg/kg Cu and 90 mg/kg Zn and Mn in either the sulfate or hydroxychloride form. When the broilers were 5 weeks of age, 16 μg of lipopolysaccharide (LPS) was injected into the pulp of growing feathers (GF; 16 GF per chicken; 1 μg LPS per GF). …

Four experiments were conducted to evaluate the interrelationships among coccidiosis vaccination and nutrient utilization in floor-reared broiler chickens. Experiment 1 longitudinally compared the effects of coccidiosis vaccination and a chemical coccidiostat on broiler performance, nutrient digestibility, and intestinal morphology. Coccidiosis vaccination had no significant impact on morphology, overall body weight gain and feed intake of vaccinated birds, although vaccination impaired overall FCR. Vaccination elicited a transient reduction in digestibility of energy and nutrients, particularly for lipids, but vaccinated birds were able to recover from these reductions by 20 d. Lifestyle interventions (nutrition and exercise) offered during pregnancy may prevent excessive gestational weight gain (EGWG) and improve pregnancy outcomes. The efficacy of previous interventions has been inconsistent as some studies ‘successfully’ achieve their health outcome goals while others have had a null effect. A common limitation reported among ‘unsuccessful’ studies is low adherence. The objective of this dissertation was to execute three independent yet interrelated studies to determine if adherence is a key factor in determining the success of a lifestyle intervention during pregnancy. Background:The Expanded Food and Nutrition Education Program (EFNEP) is a federally funded program through the United States Department of Agriculture that offers nutrition education to low income families across the U.S.

Purpose:This study assessed the effectiveness of Maine EFNEP on food-related behavior change and diet quality as measured by the Healthy Eating Index-2005 (HEI). This study also explored the relationship between the results on the HEI and participation in food assistance programs such as Supplemental Nutrition Assistance Program (SNAP) and Women, Infants, and Children (WIC), as well as the number of hours spent in the program.

Background: The Neighborhood Produce Market (NPM) is a food distribution model similar to a mobile food pantry. NPM stakeholders observed a lack of community engagement and familiarity with produce offered.

Project Description: The objective was to develop a nutrition education curriculum for NPM volunteers to better engage families and community members by providing food samples, recipes, and nutrition education. A stakeholder steering committee guided the needs assessment, curriculum development, volunteer training, and pilot test. Nearly 12.3% of American households are food insecure. In Cache County, Utah, specifically, the rates of food insecurity are even higher (15%). Addressing the issue of food insecurity improves physical/mental health outcomes, childhood cognitive/physical development, family environments, and decreases healthcare costs. Evidence-based strategies to improve food security include increasing one’s access to fresh fruits and vegetables and improving self-efficacy. Community gardens are recognized as an initiative that improve participant’s levels of food security. However, previous studies have not used gold standard measures of body composition in a college population. Purpose: The purpose of this study is to examine how dietary behaviors, overall energy intake, and macronutrient intake are associated with the body composition factors measured in a dual-energy x-ray absorptiometry (DXA) scan. Seeds that Feed (STF) is a mobile food pantry located in Fayetteville, Arkansas. STF receives produce from local farmers to distribute to residents in low-income housing sites throughout Northwest Arkansas. According to Feeding America, food insecurity affected 14.3% Washington County, Arkansas’ population in 2016. Stem cells are integral for tissue maintenance and fertility. Therefore, understanding how stem cells are regulated under stress is imperative. When confronted with acute starvation, stem cells must conserve energy and metabolites to cope with the lack of an external source. Caenorhabditis elegans germline stem cells (GSCs) are an excellent model for studying stem cell properties and regulation as they can divide throughout the life of the organism. Crude protein needs of chickens have changed due to genetic line differences and selection of those lines for differing broiler traits. Standard commercial broiler strains have been selected to be used to meet multiple processing categories typically at live body weights less than 3.5 kg. In the last two decades high-yielding broiler strains were introduced into the commercial market. These breeds are known as the Cobb 700 and Ross 708. The works included within are focused on the Cobb 700 high-yielding broiler strain, and its response to crude protein, with emphasis on digestible lysine.

Objective: The purpose of this study was to determine the effects of highlighting healthy food options on consumer food choices in a food bank setting.

Methods: Two community food banks participated in this study. One food bank served as the control, while a second food bank was rearranged so that fresh produce and other healthy products were the first options that shoppers encountered upon entering. After shopping, carts were inventoried for healthy vs non-healthy products. Composition of the carts from the control food bank were then compared to the contents of the carts from the intervention food bank.

Equine laminitis is a disease of the hoof characterized by inflammation or disruption of the sensitive and insensitive laminae located within the hoof. These structures are responsible for maintaining a secure connection between the third phalanx (P3) and the hoof wall. Damage to these laminae can weaken the attachment between the hoof wall and P3, causing separation and eventual rotation of P3. Recently published scientific articles have led to mixed nutritional advice on dietary saturated fatty acids. Lesser et. al (2007) identified that mixed conclusions in scientific articles on sweetened beverages might be attributed industry funding, as articles funded by the beverage industry are four to eight times more likely to report conclusions in favor of the sponsor’s products. This thesis applies Lesser’s methods to determine whether industry funding influences the inconsistent conclusions on saturated fatty acids.
