College students, on average, have poor nutritional habits associated with increasing risk of obesity and chronic disease later in life. Today’s average student has low self-efficacy for cooking meals in the home and thus, is highly dependent on convenience-type food items. A valuable technique for improving cooking skill in individuals is through the use of video technology to teach cooking. Trace minerals, particularly copper, zinc and manganese, play a role in ensuring optimal immune function. To examine the effects of diets containing different levels and sources of trace minerals on the inflammatory response, Cobb 500 broilers were fed four experimental diets containing 5 mg/kg Cu and 45 mg/kg of Zn and Mn or 10 mg/kg Cu and 90 mg/kg Zn and Mn in either the sulfate or hydroxychloride form. When the broilers were 5 weeks of age, 16 μg of lipopolysaccharide (LPS) was injected into the pulp of growing feathers (GF; 16 GF per chicken; 1 μg LPS per GF). …

Carbohydrate counting (CHO) is a nutrition education tool used by patients with type 1 diabetes mellitus (T1DM). The primary objective was to assess glycated hemoglobin (A1C) in participants with T1DM using CHO counting vs. those using a structured meal plan (SMP). The secondary objectives were to determine if BMI-for-age, parental income, parental involvement, and mothers’ educational level were associated with their children’s glycemic control. Eswatini has the highest global prevalence of HIV despite universal access to free treatment. Lack of compliance continues to be a significant challenge for HIV care and management programs throughout the country. Studies investigating barriers to antiretroviral therapy (ART) adherence, particularly in women, who are the most vulnerable to HIV infections, are limited. Objective: This study’s purpose was to examine dietary quality, macronutrient intake, and micronutrient adequacy among long term weight loss maintainers (WLM) in a commercial weight management program.
Methods: Participants were 1,207 WLM in WW (formerly Weight Watchers) who had maintained a 9.1 kg or greater weight loss (29.7 kg on average) for 3.4 years, and had an average BMI of 28.3 kg/m2. A control group of weight stable adults with obesity (Controls; N=102) had a BMI of 41.1 kg/m2 and 2.3 kg or less weight change over the previous five years.

The percentage of young adults who had mental illnesses has increased from 2008 to 2015. However, few existing studies investigating the potential benefits of multivitamin-mineral (MVM) supplementation on mental health focused on young adults (18-24 years of age), whose eating behaviors are often unhealthy. The purpose of this study was to examine the effects of a MVM supplement on mental health in young adults. One hundred and thirty-three college students (Mage=20.59, SD=1.77; 80.15% female) participated in this randomized, double-blind, placebo-controlled trial. The strength of leaf fibers and the nutritional value of the edible fruit of several yucca species native to the U.S. southwest were studied to aid in the determination of species best suited for commercial cultivation by the Navajo Nation. The leaves were softened in an autoclave to facilitate the removal of the leaf matrix, conditioned in environmentally controlled chambers, and the fibers were broken using a texture analyzer. The Eating and Food Literacy Behaviors Questionnaire (EFLBQ) was developed, and its validity, reliability, and ability to measure construct changes was established. Items related to the originally proposed domains of food literacy were included in the initial questionnaire, however five, new components were discovered. The second version of the EFLBQ was tested with 257 young adult university students using exploratory factor analysis, and a five-factor model (R2=57.4%) was returned. Cronbach’s alpha coefficients were calculated (health and nutrition=0.89, taste=0.72, food preparation=0.77, planning /decision-making=0.64, and convenience=0.63). The gut microbiota has been implicated in both health and disease. As such, diet is a significant determinant of gut health, whereby diet induced dysbiosis is associated with cardiometabolic risk. Interestingly, a higher proportion of Firmicutes and a lower proportion of Bacteroidetes are implicated in obesity. Strawberry polyphenols have been shown to reduce cardiovascular disease risk in addition to exhibiting prebiotic activity by increasing probiotic bacteria in the gut. Polyphenols have also been shown to reduce the ratio of Firmicutes to Bacteroidetes. Therefore, dietary modifications such as strawberry consumption may help improve health outcomes through the gut. The prevalence of non-alcoholic fatty liver disease (NAFLD) in children has increased over the past decades, creating a need for animal models that recapitulate the features of the pediatric disease. Iberian pigs have a leptin-resistant phenotype characterized by hyperleptinemia, hyperphagia, and extreme adipogenesis. We hypothesized that neonatal Iberian pigs fed a high fat high-fructose (HFF) diet will develop a pattern of liver injury resembling pediatric NAFLD. Chronic Kidney Disease (CKD) is currently the ninth leading cause of death in the United States, and despite the favorable outcomes reported in previous studies, mortality rates for CKD have yet to show improvement. The purpose of this study was to determine if supplementation of a high glycemic load breakfast with resistant starch attenuates the glycemic response in young healthy adults. Twenty-one subjects, 23.8 + 3.3 yrs, reported for two days of data collection, having fasted 8-12h. On day 1(control), fasting BG was measured using glucometers, then subjects consumed 2 slices white bread and 250mL apple juice within 15min, the repeated BG measurement at 15, 30, 60, 90, and 120min after baseline. Nearly 12.3% of American households are food insecure. In Cache County, Utah, specifically, the rates of food insecurity are even higher (15%). Addressing the issue of food insecurity improves physical/mental health outcomes, childhood cognitive/physical development, family environments, and decreases healthcare costs. Evidence-based strategies to improve food security include increasing one’s access to fresh fruits and vegetables and improving self-efficacy. Community gardens are recognized as an initiative that improve participant’s levels of food security. As individuals enter adulthood, their lifestyles and lifestyle behaviors begin to change drastically. These lifestyle behavior changes in emerging adulthood provide a foundation for future health behaviors that often persist through all of adulthood. The aim of this study was to use Latent profile analyses (LPA) to discover distinct profiles of homogenous groups of young adults based on alcohol, diet, and exercise behaviors. Overall, five distinct profiles for both males and females were identified: Moderates, Unhealthy Eaters, Medium Drinkers, Healthier Eaters and Exercisers, and Heavy Drinkers. While the majority of the American population is aware that fruits and vegetables can improve physical health, research also suggests that mental health may benefits as well. With depression and anxiety rates increasing and fruit and vegetable consumption decreasing across the country there is potential that the two are related. It has been found that majority of American adults do not meet fruit and vegetable recommendations, while 16 million adults face depression and anxiety.
