Carnitine Mediated Alterations Of Ethanol And Fatty Acid Metabolism, Randall L. Mynatt

The purpose of this dissertation was to examine the effect of dietary carnitine supplementation on ethanol and fatty acid metabolism. Rats were fed Purina chow as such (non-supplemented, NS) or supplemented with 0.5% L-carnitine supplemented CS). Carnitine supplementation for 7d resulted in decreased oxidation of an oral dose of [1-14C]-ethanol. Expired 14CO2 was significantly reduced at hours 4-12 in the CS group. There were no significant differences in urinary excretion of the 14C-label remaining in tissues after 12h was also not significantly affected by carnitine supplementation. Blood-ethanol concentrations (BEC) were 88.5 and 125.9 mg/dl in …

The relationship of nutritional intake and body composition to menstrual irregularities was studied in 40 female runners (24 eumenorrheic and 16 oligo/amenorrheic) between the ages of 18-35 years and running 20 or more miles per week. Subjects were recruited from college cross country teams that attended an NCAA Cross country championship, local track club, and University. Eumenorrhea was defined as having 9-12 periods per year while oligo/amenorrhea was defined as having 8 or less periods per year.

A semi-quantitative food frequency was used to evaluate dietary intake for calories, percent of calories from protein and fat. While skinfold measurements (thigh, …

The purpose of this study was to determine compliance to the Dietary Guidelines for Americans and to Recommend Dietary Allowances in Tennessee elementary school lunch programs and to determine training practices as they are related to nutrition. Fifty six of the 145 school food service supervisors in Tennessee participated in the study, a response rate 39%.

Determination Of Iron Bioavailability In The Diets Of Pregnant Adolescents In East Tennessee, Joanne L. Pierson

Determination of dietary iron intake and estimation of iron bioavailability in the diets of pregnant adolescents (ages 13 to 18 years) in East Tennessee (N=100) was performed to assess iron nutriture adequacy. Using a combination of two 24-hour recalls and 2-day diet records, results indicated daily total iron intake (14.8 ± 8.9 mg) was below the recommended Dietary Allowance (RDA) of 30.0 md/d for pregnancy. Mean intakes of protein and ascorbic acid were ≥ 150% of the RDA for these nutrients. Using the Monsen and Balintfy model to estimate overall iron bioavailability, the 8.996 ± 1.2% was less than the …

From 10 July 1967 to 6 December 1989, 341 black bears (Ursus americanus) in Great Smoky Mountains National Park were captured and relocated 570 times. Capture, release, and recovery locations of relocated bears were plotted on topographic maps using the Universal Transverse Mercator grid system. Objectives of this study were to delineate the sex and age structure of problem black bears and to determine factors contributing to the success of black bear relocations.

Excluding cubs and dependent yearlings, mean ages at initial capture of male and female bears were 3.9 and 4.6 years, respectively. Males comprised 619% of …

The Demographic And Morphological Characteristics Of Black Bears In The Smoky Mountains, Peter Kleppinger Mclean

Data on age, sex, body measurements, survival, and reproductive condition were collected from 1702 black bears (Ursus americanus) trapped in the Smoky Mountains (SM), 1972-1989. The age structure suggested a lightly to moderately exploited bear population. Bears of Great Smoky Mountain National Park (GSMNP or Park) were significantly (P = 0.026) older (mean = 4.52 yr) than those of Pisgah (3.86 yr) National Forest (P < 0.076). SM females had a mean minimum reproductive age of 4.2 yr, birth interval of 2.4 yr, and litter size of 2.0 cubs. The percentage of lactating females was significantly associated with age (X2 = 20.6, 2 df, P < 0.001), and lactation rates were significantly related to white oak mast production (r2 = 0.51, P < 0.01). The annual mortality rate was 26% and was lowest for Park bears (22%) and highest for those of the national forests (30%). Density ranged from 0.09 to 0.35 bears/km2, and the intrinsic rate of growth (2-11%) indicated a slightly to moderately increasing population.

The study was designed to determine the type of organizational culture (bureaucratic, innovative, or supportive), and to determine the relationships among organizational culture, affective outcomes (job satisfaction and organizational commitment), and behavioral outcomes (turnover, absenteeism, and productivity) in hospital foodservice operations in Canada and the United States. The sample included 436 foodservice employees from ten hospitals in eastern Canada and nine hospitals in East Tennessee. Two research instruments were used for data collection. The historical data instrument obtained information to calculate productivity, turnover, and absenteeism for each hospital. The objectives of the study were to 1) determine patterns of habitat utilization of female black bears, 2) identify timber management disturbances that affect habitat use of female black bears, and 3) integrate and summarize the research conducted on Harmon Den Bear Sanctuary since 1982. Harmon Den Bear Sanctuary is a 5971-ha area along the Tennessee-North Carolina state line. This sanctuary was established in 1971 with the purpose of protecting a core breeding group of female black bears.

Purpose: The purpose of this study was to identify competencies related to financial management for entry- and advanced-level dietitians practicing in the area of foodservice systems management. Specifically, this study:

1. Developed a comprehensive list of financial management competencies for entry- and advanced-level dietitians.

2. Determined the importance of financial management competencies for entry- and advanced-level dietetic practice as perceived by hospital foodservice directors/chief dietitians.

3. Identified underlying financial management factors for entry- and advanced-level dietitians.

4. Determined whether foodservice directors/chief dietitians who are Registered Dietitians (RDs) support specialty certification in foodservice management.
