Wild plants have long been a component of the diet of the Cherokee Indians. In this study, traditional knowledge of edible wild plants as a food source has been shown to exist in present day Cherokee society and the use of and beliefs about wild plants and other natural resource foods have been documented from accounts on the historic Cherokee.

It was noted that knowledge of wild plants may be passed from one generation to another by word of mouth. Attitudeds and beliefs toward teh consumption of wild plants affected the use of this knowledge.

For the purpose of this research it was hypothesized that teenagers use food preferences when making meal selections. The sample included all students attending six sections of the study hall at Central High School, Knoxville, Tennessee. Three hundred and ten pairs of usable questionnaires were obtained and both sexes from each of the three grades (10, 11, and 12) were represented.

A questionnaire containing both definitions and menu choices for three days was administered two weeks prior to the service of their meals. Students were asked to indicate their meal preference and to describe food items listed. The questionnaire was …

The influence of diet and feed restriction on kidney function was studied in aging male albino rats. Rats were fed either a commercial feed (LB) or a modified human diet (MHD) from weaning until sacrifice at either 12 or 24 months of age. Animals sacrificed at 12 months of age were either restricted or fed LB ad libitum from 1 month of age until sacrifice. The purpose of this study was to describe characteristics of lightning fires, including frequency, size, season and severity, and to determine their effects on the composition of pine-hardwood stands in the Appalachian Mountains of Tennessee and North Carolina.

An analysis of fire reports from Great Smoky Mountains National Park and from Cherokee, Nantahala and Pisgah National Forests, an area of 800,000 ha, shows that during 1960-1971 there was an average of six lightning fires per year per 400,000 ha (one million acres). The median size of lightning fires was 0.8 ha and the largest 33 ha. More than 90 percent …

The purpose of this eight-week field experience was to provide the student with an opportunity to integrate course theory learned at the University of Tennessee with the actual practice of public health in Nassau County, New York. It also allowed the student to compare programs in health departments, specifically the functions of public health nutrition in such agencies.

The similarities and differences in the food behavior, food preferences, mass media use, environmental factors and demographic characteristics of 11 selected mothers and their 15 adult-daughters in an homogenous rural area in Upper East Tennessee were studied. The degree of agreement between mother and adult-daughter in the variables named above was associated to their inter-personal communication, age, education and attitudes toward modernity and familism.

The present study was conducted within the Tennessee portion of the Great Smoky Mountains National Park from fall 1971 to the summer of 1973. Information on the reproductive biology and population dynamics of the European wild hog (Sus scrofa) was obtained by the collection and analyses of reproductive tracts, field observation and back-dating ages to establish periods of reproductive activity.

Based on the 162 animals collected during the study, the male:female sex ratio, for all age classes, was 52:48. Age class structure was indicative of an expanding population.

A possible quantitative relationship between phospholipid and extractable myoglobin, or between their rates of change during the heating of beef was investigated. Three muscles--extensor, semitendinosus, and gastrocnemius--were chosen for study at three heating end points--55°, 66°, and 77°C.

The investigated relationship was not shown statistically across the muscles or age categories represented by the samples used. The effects of several variables on the muscle components studied were analyzed individually.

Extractable myoglobin decreased as internal end point temperature increased. Increasing end point temperature also resulted in increased phospholipid concentration, dry weight basis, and total lipid, wet weight basis. Neither myoglobin nor …

The analysis of an information system between the nursing service and the dietary departments of a 390 bed hospital was conducted at the East Tennessee Baptist Hospital. This study was to identify, classify, and record the frequency of the most common written and verbal communication problems occurring between the nursing service and the dietary departments.

Interviews were held with forty nursing and dietary personnel. The interviews were utilized for the identification of communication forms and problems between these departments. Knowledge concerning reactions contributing to browning of cooked ground beef patties and the cooking drip is limited. The possible contribution of carbonyl-amine reaction(s) involving phospholipids and reducing sugar to color of cooked meat and drip was investigated.

Glucose was added at 2 and 4 percent levels to ground beef to which commercial bovine phospholipid had been added. The concentrations of reducing sugar and phospholipid and distribution of phospholipids among the three major classes were determined in raw and cooked meat. The purpose of this study was to assess the factors which have affected the black bear (Ursus americanus) in the Great Smoky Mountains from earliest recorded history of the area until 1960. Local historical records, both public and private, were examined for pertinent information.

The historical data for the investigation were gathered from both interviews and written and pictorial material. Eighteen undergraduate students at the University of Tennessee, Knoxville, were subjects in a research study to evaluate audio-tutorial modules in the development of cognitive knowledge and intellectual skills in sensory evaluation of foods. Student opinions toward testing and teaching methods and pertinent background information were obtained by a student information sheet. Practical examinations, written examinations, and the Kelley Audiovisual Scale were completed by each subject before presentation of an independent study module, immediately following the presentation, and four weeks following the presentation.

Attitudes of hospital dietary supervisors were measured as affected by a training program. The training program consisted of slides and a commentary on the managerial skills used by supervisors.

A pretest and posttest on the content of the training program were given to the supervisors participating in the training program. An attitude questionnaire was administered to the supervisors in the training program and to their subordinates. The supervisors and subordinates were classified by levels of education and periods of employment.

The mean scores of the achievement posttest showed a significant increase over the mean scores of the achievement pretest. This …

This study was conducted on the Tennessee side of the Great Smoky Mountains National Park west of highway U.S. 441. The major objectives were to evaluate selected radioisotopes as possible scat (feces) tags and to determine estimates of the black bear population using data collected by the technique of marking scats with a radioactive tag and to evaluate the reliability of the population estimates.

In June of 1972 two confined bears were injected with four selected radioisotopes; 65Zn and 54Mn proved suitable as tags but 109Cd and 144Ce were unsatisfactory.

Tenderness of meat is one of its most important attributes of quality. The purpose of this study was to study the effect of heating rate (comparable to oven roasting at 93° and 149°C) and end point temperature (50°, 60° and 70°C) on tensile properties of muscle fibers and connective tissue of beef semitendinosus muscle. Cores of meat were heated in tubes in a water bath "programmed" to produce the desired rate of heating.
