The Influence Of Dietary Protein On Serum Lipid Levels Of Premenopausal Women, Ellen Speiden Parham

Serum lipid levels of young women are of particular interest because, in a population riddled with atherosclerosis, premenopausal women seem to have a relative immunity both to severe hyperlipidemia and to those diseases thought to be related to it. The diet of this heterogeneous population is characterized by high intakes of animal protein, animal fat, and sugars.

Research has shown that the type and quantity of fat and carbohydrate have varying degrees of influence on serum lipid levels. Various micronutrients are also implicated. Animal experiments using wide ranges of protein intake suggest that under some …

Forest Soil Characteristics As Influenced By Vegetation And Bedrock In The Spruce-Fir Zone Of The Great Smoky Mountains, James Alvis Wolfe

The present study sought to determine differences in soil characteristics related to spruce-fir and beech-birch vegetation in the Great Smoky Mountains when other factors were held as nearly constant as possible. An attempt was made to evaluate the influence of bedrock on soil characteristics and vegetation patterns. Hopefully this investigation may contribute to a greater understanding of the perplexing vegetation mosaic found at higher mountain elevations.

Migration Patterns Of Young Adults Reared In Jackson County, Tennessee, Charles Martin Farmer

Most Tennessee counties have experienced a net outmigration of persons in recent decades. For example, net outmigration for Tennessee was over one-fourth of a million persons from 1950 to 1960 or half of the level of natural population increase during this period. During the 1950-60 decade, 86 of the 95 counties had a net outmigration of persons. In 59 counties outmigration was sufficient to result in an aggregate population decline. Counties experiencing greatest population declines are largely rural containing few urban centers.

Effect Of Oven And End-Point Temperatures On The Sensory Properties Of Beef Rib Roast, Nancy Elizabeth Fugate

(Conclusions) Reducing the cooking temperature 100°F. below the currently recommended temperature for roasting beef rib yielded meat that was more tender when cooked to 158 or 170°F. These roasts also resulted in lower cooking losses with only slightly higher energy consumption. Flavor of beef cooked to the well-done stage tended to be preferred by the panel. All of these factors need to be considered when deciding on the temperature combinations for roasting beef rib cuts.

Chemical and/or histological studies are recommended to help explain the tenderizing effect of the reduced rate of heating.

During this eight weeks' period, March 22 through May 16, 1967, the student observed and participated in the nutrition programs. The purpose of this study was to investigate the use of the colorimeter as a means of determining the characteristics of hydraulic agitation of a wettable powder herbicide in a water diluent.

The availability of information concerning the agitation characteristics of a wettable powder would be important value in determining the minimum requirements of the agitation system. The development of this technique would also be of great value in the design of new formulations.

Since previous results in this laboratory had indicated that vitamin E was necessary in vivo not only for the optimal sulfation of mucopolysaccharides, but also for the oxidation of neutral sulfur to sulfate, the ability of whole liver homogenates from vitamin Esufficient and -deficient rats to convert cysteine to sulfate was investigated. Then an attempt was made to determine the specific site of the decreased oxidation of cysteine or its intermediate oxidation products. The purpose of this study was to determine the effect of oven roasting at 200 and 3000 F. on the microbiology of high and low finish rib and top-round beef roasts. Rib roasts averaged 10.2 and 6.7 pounds and top-round roasts averaged 6.3 and 5.5 pounds for high and low finish respectively. The present study involved six tests conducted to determine the effects of oven-braising, a moist-heat method, on vitamin-B6 retention of beef. Paired roasts from the semimembranosus muscle of three grain-finished and three grass-finished steers were used in the study. The right side roast of each pair was cooked by oven-braising. The cooked roasts and the drip were analyzed for total vitamin-B6 content by the yeast microbiological method of Atkin et al. (1943); the left side roasts were analyzed raw. (From the Summary): Abbreviated The content of phospholipids per unit of DNA and the distribution of cephalins, lecithins, and sphingomyelin in the breast and thigh muscle tissues of eight chickens were studied. Nucleic acids were extracted from the muscle tissues with hot trichloroacetic acid and the content of desoxyribose, determined colorimetrically by the Dische diphenylamine reaction, was used as an index to the DNA concentration. Thin layer chromatography was used to separate the triglycerides from the phospholipids and to fractionate the latter compounds. Phosphorus analysis was used to estimate the quantity of phospholipids and of each phospholipid class. …
