ENCORE is an intermediate-level proficiency- and communicative-oriented program. Paired with an engaging mystery and suspense film of the same name, ENCORE is guided by principles of communicative language teaching and research in second language acquisition. This video interview elaborates the methodology that was presented at a Poster session at the Food & Nutrition Conference and Expo at Chicago, Oct 21 - 24, 2017.

Background: Students find writing the personal statement to be a challenging and anxiety-producing aspect of the internship application. We previously implemented Flipped Classroom and small group learning approaches into the Foundations of Dietetics course. While these strategies facilitated peer feedback on personal statements, students lacked a structured system for providing comments and were limited with in-class time to provide feedback.

Extension and Outreach Publications

The history of family and consumer sciences (FCS) and the Expanded Food and Nutrition Education Program (EFNEP) is discussed with an emphasis on the critical importance of the human dimension. EFNEP's focus on people, education for change, accountability, strategic partnerships, and public value are highlighted as an example and model for Extension and FCS programs in general. Future FCS success and sustainability depends on ensuring continued attention to the human dimension, while also addressing workforce, societal, and technological developments.

The Expanded Food and Nutrition Education Program (EFNEP) national leadership and university program partners initiated a discussion about EFNEP paraprofessional supervision due to concerns raised by state coordinators and a belief that the quality and adequacy of paraprofessional supervision have a considerable impact on program outcomes and effectiveness. An EFNEP Paraprofessional Supervision Committee was formed and tasked with developing a framework of paraprofessional supervisory components necessary for effective local supervision of EFNEP within various university and state contexts.

It started with one backpack, or rather, one backpack program. Micah’s Backpack was an initiative launched in Blacksburg, Virginia. The group, organized by members of St. Michael Lutheran Church, initially started by distributing backpacks full of food to five children from low-resource families. Now, the outreach has grown to feed nearly three hundred children. In addition to Micah’s Backpack, new programs have flourished under the Micah’s Caring Initiative: Micah’s Mobile Backpack, Micah’s Garden, Micah’s Soup for Seniors, and Micah’s Closet. All provide vital services to the community.

Unknown to each other two groups of engineers and engineering educators began to consider aspects of philosophy and engineering. One held a workshop of engineers and philosophers- “Engineering meets Philosophy” at Delft University and the other held a special session at the annual Frontiers in Education Conference on engineering education and philosophy. Since then the former has held a biannual workshop that have resulted in two impressive publications. The other continued its discussions through FIE and ASEE conferences. There are now regular sessions on philosophy and engineering education at the annual FIE conferences.
