Our purpose in this research study was to examine perceptions of food and nutrition educators (FNEs, i.e., Registered Dietitians Nutritionists and Family and Consumer Science teachers) and young adults (ages 18–25) on the status of cooking and food skills among young adults. Using a cross-sectional survey design, FNEs (n = 93) and college-attending young adults (n = 270) in the United States completed electronic surveys. The qualitative and quantitative data were collected and analyzed using a convergent mixed-methods approach. Objectives: The purpose of this study was to investigate the impacts of using scaffolded clinical simulations on nursing students’ confidence in clinical reasoning, clinical judgment, and critical thinking skills. Next, we also attempted to gain insights into students’ perceptions of the benefits of scaffolded clinical simulations.

Method: We used a mixed-methods research design to investigate the impacts of using scaffolded clinical simulations on 133 second-semester baccalaureate nursing students’ confidence in clinical reasoning, clinical judgment, and critical thinking skills.

The coronavirus disease of 2019, known as the COVID-19 pandemic, is a disaster event that posed significant physical, social, financial, and mental health risks to college students. Disproportionate experiences of stressors position students of color as a population particularly vulnerable to the negative impacts of COVID-19, thus, the current study assessed the impact of COVID-19 on undergraduate students of color in the United States. Students participated in semi-structured in-depth interviews about their experiences with stressors during the pandemic. This article presents an immediate evaluation of a professional development course in community health literacy for Brazilian nurses. An evaluation based on an applied thematic analysis of the accounts of 63 attendees in three Brazilian cities (January 2020) was guided by the following themes: (a) expansion of understanding about community health literacy as a pillar for planning and providing health care; (b) encouragement of innovation in research and/or practice; and (c) plans to incorporate the information shared in the course into professional projects. The COVID pandemic cast a harsh light on the structural and systemic health inequalities that exist in American society and in U.S. medical education. Education correlates with nurse performance and avoiding mental fatigue. This project attempted to answer the question, “Educating nurses on mental fatigue will increase knowledge” focusing on educating rehabilitative nurses regarding mental fatigue. The project was guided by the Analysis, Design, Develop, Implement, and Evaluate model. Twenty rehabilitative nurses were administered a pretest consisting of 10 multiple-choice test questions. They received education on mental fatigue through PowerPoint presentations and handouts. After completing the education, participants were administered a posttest with the same 10 questions. Observed in the clinic were frequent office visits by patients with uncontrolled blood pressure and nonadherence to medication in an outpatient cardiology clinic in Northeast New Jersey. Nursing faculty must be effective educators, active nurse researchers, and practicing nurse experts. Feelings of impostor phenomenon (IP), defined as emotions of fraudulence, can lead to faculty deficiencies both as educators and scholars. The purpose of this three-manuscript dissertation, guided by Weiner’s attribution theory, was to determine differences in IP by teaching level, teaching experience, and gender among nursing faculty. A two-tailed t-test was used to analyze data collected from 164 participants who completed the Clance impostor phenomenon scale.
