At one time, academic inquiries into the relationship between socioeconomic class and language acquisition were commonplace, but the past 20 years have seen a decrease in work that focuses on the intersection between class and early language learning. Use of qualitative research methods to evaluate nutrition education programs is limited. Structured observations and focus groups, qualitative research methods, were conducted to examine use of theory-based learning strategies and participant experiences in a nutrition education program. Theory-based learning strategies included use of open-ended questions, visual aids, and experiential learning activities. Open-ended questioning and some experiential activities were used less often than desired. Language of lesson delivery and instructional setting appear to influence the use of learning strategies. Lesson delivery and instructional setting may be relevant for preferred learning styles of different cultures.

Evaluation Of A New Nutrition Education Curriculum And Factors Influencing Its Implementation, Justine R. Hoover, Peggy A. Martin, Ruth E. Litchfield
Extension and Outreach Research and Scholarship
The study reported here evaluated a nutrition education curriculum through examining participant behavior change. A previously used curriculum (April - September 2005 and 2006) was compared to a new curriculum (April - September 2007) using pre- and post-program 24-hour dietary recalls and food behavior surveys. Participant, educator, and program variables were explored relative to behavior change. The new curriculum elicited behavior change similar to that elicited by the previous curriculum. Factors influencing behavior change included participant and educator race and educator experience. Participant and educator variables should be considered in future program/curriculum implementation.

Cooking with young children is a rewarding experience as an educator. Not only are the children enjoying themselves, but you are too. Cooking allows children to be in touch with their senses, and is a hands-on approach to learning. Of course cooking can be messy, which is what young children love most. Incorporating science, math, literacy, and social studies into one activity is easily done through cooking.

Recipe For Citizenship: Professionalization And Power In World War I Dietetics, Kathleen Marie Scott

This dissertation is an analysis of the professionalization tactics of white, native-born, Protestant, middle-class women who served with the U.S. armed forces as dietitians during World War I. Through the overlapping rubrics of maternalism, citizenship, and professionalism, I examine the ways in which dominant race, class, and gender ideologies inflected their quest for professionalization. I specifically examine the way hospital dietitians infused their expertise with rhetoric of race betterment and national security to acquire distinct status and authority in relation to other female medical/health practitioners.
