The development of healthy eating habits in adolescents is challenging. Resultantly, health educators are turning to digital devices to engage young people in nutrition education. This paper focuses on the development and evaluation of a computer game (Test Game B) to support healthier food choices. Test Game B was developed at an Australian university and trialled with 72 tertiary student volunteers along with a control game (Control Game A). While leadership has been a popular research topic in the hospitality industry, followership has a limited amount of research contributing to the body of knowledge. Followers are a key aspect of the leadership equation; therefore, it is important to understand their role in the industry. The purpose of this study is to explore the leadership theory of followership in restaurants to examine the connections between followership training, voice behavior and employee turnover rates. The purpose of this study was to examine the experiences of new Family and Consumer Sciences (FCS) teachers and to describe their perceptions of classroom teaching readiness. The researcher completed a series of three classroom observations and three interviews of five first-year FCS teachers. The Danielson’s Framework for Teaching instrument was used for all observations and two sections of interviews used Interview Questions for Family and Consumer Sciences Educators instrument, which was taken in part, with permission, by Horizon Research, incorporated. The purpose of this paper is to examine the effects of discipline formats on student development and analyze if the practice of restorative justice can decrease the school to prison pipeline. Does criminalizing every discrepancy against the law create better law-abiding citizens? Is the zero-tolerance policy change an effective mechanism for school discipline? Do restorative justice practices reduce the school to prison pipeline? To investigate this, the infraction rates at various high schools have been observed in regard to their discipline practices to analyze the number of incidences that students incur and how they were managed.

This creative component project was created and implemented to build awareness around Family and Consumer Sciences (FCS). FCS courses in our middle schools and high schools have declined over the past two decades. To address this problem, this project explored using a public service announcement (PSA) and online toolkit to promote FCS. The strategy for the PSA drew on cognitive dissonance theory and the extended parallel process model. Was It Worth It? Using Student Loans To Finance A College Degree, William L. Nuckols, Kim E. Bullington, Dennis E. Gregory

Educational Foundations & Leadership Faculty Publications

This qualitative study explores the perceptions of value added to the lives of graduates who borrowed money to fund their college educations. Through the lens of cognitive dissonance theory, five themes emerged. Overall, the study participants agreed that the ability to take on student loans to fund their education was worth it, but on the other hand feel overburdened with the cost of paying back their loans. This paper also provides a foundation for future research and identifies public policy shortcomings and suggests solutions.

Sulfur dioxide is an inorganic compound (IC) and air pollutant that causes health risks in humans. The buildup of sulfur dioxide (SO2) in enclosed indoor spaces is, therefore, a concern to human health, especially since the average person spends 90% of his/her time indoors. This study focused on decreasing SO2 concentration in a cost-effective and simple way—by using botanical biofiltration, or the uptake of pollutants by plants. Research in biofiltration has focused mostly on the remediation of volatile organic compounds (VOC). S. schools require teachers, including career and technical education (CTE) teachers, to integrate literacy skills into the curriculum to support student performance on standardized tests. Changes in teaching strategies and content for literacy integration require administrators to improve the support systems for CTE teachers.
