A working definition of a concept known as ‘food literacy’ encompasses using basic food preparation knowledge that has been learned, understood, and practiced to make better food decisions. To advance these skills for client service, a post-secondary nutrition program would need to include objectives that allow application of knowledge. For this reason, the purpose of this study was to determine the difference in knowledge and application among students in 100, 200 and 400 level college nutrition course(s). Characteristics Of Quality Agricultural Magazine Capstone Courses Based On The Five R'S Model, Traci Nicole Rushing

This study sought to assess students' and instructors' perceptions regarding the value of an agricultural communications magazine capstone course at three universities that were identified as exemplary in an effort to describe the characteristics leading to the course's success. Using a qualitative survey methodology, the investigator administered an open-response survey, conducted personal interviews with purposively-selected students in each course and the instructors, and made field observations. Both the interviews and the surveys consisted of six, in-depth questions crafted after Andreasen's (2004) of a successful magazine capstone course. Food neophobia, the fear of new foods, has been identified as a significant barrier to the intake of healthy foods, including fruits and vegetables in young children. Food neophobia can hinder dietary quality as well as dietary variety by limiting the development of food preferences. It has also been suggested that neophobia is linked to the development of childhood obesity, and due to the escalating epidemic of childhood obesity that is known to be associated with serious health complications, interventions that target food neophobia in preschool aged children may be successful in improving healthy eating habits and potentially reversing the …

The purpose of the study was to understand the relationship of coach feedback during time-outs to the performance of 16-18 year old volleyball players in competitive match play situations. The systematic observation of coach feedback during 89 time-outs was recorded using the Coach Time-Out Observation Instrument (CTOOI). Out of the 879 feedback statements that were made during the 89 time-outs, the CTOOI categorized coach feedback for technical feedback (with an internal or an external focus), tactical feedback (referring to our team or the opponent), and psychological feedback (as either encouraging or discouraging remarks). Utah State University in the collaboration with the Supplemental Nutrition Assistance Program-Education (SNAP-Ed) proposes to develop and implement a program to help families develop healthy eating habits and lifestyle behaviors. Recently, childhood overweight and obesity has reached epidemic proportions. The diseases associated with adult obesity are now being seen in the pediatric population; therefore, there is a call for preventative efforts.
