Background: Schools are the most frequent target for intervention programs aimed at preventing child obesity; however, the overall effectiveness of these programs has been limited. It has therefore been recommended that interventions target multiple ecological levels (community, family, school and individual) to have greater success in changing risk behaviors for obesity. This study examined the immediate and short-term, sustained effects of the Switch program, which targeted three behaviors (decreasing children's screen time, increasing fruit and vegetable consumption, and increasing physical activity) at three ecological levels (the family, school, and community).

Use of qualitative research methods to evaluate nutrition education programs is limited. Structured observations and focus groups, qualitative research methods, were conducted to examine use of theory-based learning strategies and participant experiences in a nutrition education program. Theory-based learning strategies included use of open-ended questions, visual aids, and experiential learning activities. Open-ended questioning and some experiential activities were used less often than desired. Language of lesson delivery and instructional setting appear to influence the use of learning strategies. Lesson delivery and instructional setting may be relevant for preferred learning styles of different cultures.

Evaluation Of A New Nutrition Education Curriculum And Factors Influencing Its Implementation, Justine R. Hoover, Peggy A. Martin, Ruth E. Litchfield

Extension and Outreach Research and Scholarship

The study reported here evaluated a nutrition education curriculum through examining participant behavior change. A previously used curriculum (April - September 2005 and 2006) was compared to a new curriculum (April - September 2007) using pre- and post-program 24-hour dietary recalls and food behavior surveys. Participant, educator, and program variables were explored relative to behavior change. The new curriculum elicited behavior change similar to that elicited by the previous curriculum. Factors influencing behavior change included participant and educator race and educator experience. Participant and educator variables should be considered in future program/curriculum implementation.

This project examines how farmers prefer to learn and what that means for agricultural education, especially Extension educational program development and delivery. Extension educators use a variety of methods for teaching content and processes that enhance farmer learning and adoption of new practices. This research project specifically looked at farmer learning preferences and Extension educator’s instructional methods.

Horticulture is the fastest-growing sector of the agricultural industry, and this is true particularly in Iowa where the number of private horticultural businesses has more than doubled since 1993. The industry is relying more on non-English–speaking employees, especially Spanish-speaking workers, for golf course maintenance, landscape installation, and nursery production. The purpose of this study was to evaluate the attitudes and perceptions of employers who have recently hired Iowa State University (ISU) Department of Horticulture graduates in regard to the graduates' preparedness when entering the workforce and their abilities to complete job responsibilities. A 70-question survey instrument was distributed electronically to 107 employers who hired ISU Department of Horticulture students who graduated from spring semester 2004 through summer session 2007. Self-assessment allows learners to observe, analyze, and evaluate their own performances. Self-reflection allows the student to assess his or her communication skill level and progress against a standard. Additionally, the implementation of self-assessment through carefully prepared classroom experiences enables learners to manage their own learning and encourages the habit of lifelong learning. The purpose of this census study was to explore undergraduate student perceptions of mentoring in a College of Agriculture and Life Science (CALS). An analysis of the responses from 532 respondents found that students believe that faculty in CALS often practice the mentoring functions except for the direct assistance, which students believe sometimes occurs. Undergraduate students take a broad view of mentoring. ScienceWith Practice (SWP) was conceptualized to provide opportunities for agriculture students to develop a planned learning component as part of their work experiences with faculty and staff in university research laboratories, farms, greenhouses, and other units. This college-wide program was designed and implemented using adult learning theory and best practices found in the literature. Literature indicates that a wide and diverse understanding of mentoring at the undergraduate level exists. However, the literature is sparse regarding what mentors know about existing mentoring processes and related practices. This study sought to describe faculty perspectives regarding undergraduate mentoring within Iowa State University's College of Agriculture and Life Sciences. Findings indicate that faculty members realize that mentoring is a complex role and it is more than just academic advising.
