Antimicrobial Interventions Applied To Beef Sub-Primals For The Control Of Escherichia Coli And Their Impact On Ground Beef Quality, Kelly Ann Mccarty
Department of Animal Science: Dissertations, Theses, and Student Research
Due to their severe health implications, seven shiga toxin-producing E. coli (STEC) serotypes were declared adulterants by USDA-FSIS in raw, non-intact beef products. Small business beef processing facilities are being asked to implement an intervention on the beef sub-primals and trim they receive for ground beef production. This study evaluates the efficacy of reducing rifampicin-resistant E. coli (E. coliRif) using 4.5% lactic acid (LA), 2.5% Beefxide™ (BX), and 380 ppm peroxyacetic acid (PAA) when applied by dip, spray or electrostatic spray (ESS) to the mostly fat lateral surface and mostly lean medial surface of beef shoulder clods …
Exploration Of Student Biodiversity Knowledge And Decision-Making For A Wildlife Conservation Socioscientific Issue, Ashley R. Alred
Exploration Of Student Biodiversity Knowledge And Decision-Making For A Wildlife Conservation Socioscientific Issue, Ashley R. Alred
School of Natural Resources: Dissertations, Theses, and Student Research
Global biodiversity, a foundation for ecosystem function, is diminishing at a rate unprecedented in the last 50 years. Biodiversity loss and ecosystem services deterioration is linked to increased food insecurity, reduced water quality and availability, decreased energy security, higher economic losses and human suffering (Millennium Ecosystem Assessment, 2005). Consequently, educators should invest in supporting students in their development of ecological understanding and formal decision-making skills so they are equipped with meaningful tools they can use as scientifically literate citizens. To contribute to that mission, this study seeks to explore student 1) comprehension and explanation of biodiversity concepts and 2) decision-making …

Barriers, Motivations, And Preferences For Physical Activity Among Female African American Older Adults, Neha P. Gothe, Bradley J. Kendall
Kinesiology, Health and Sport Studies
According to the Centers for Disease Control and Prevention, less than 11% of adults more than the age of 65 meet the 2008 Physical Activity Guidelines for Americans. Among minority populations, only 5% of non-Hispanic Black older adults met the guidelines. Given our limited understanding of psychosocial and environmental factors that affect physical activity participation in these groups, the purpose of our focus groups was to investigate barriers, motivators, and preferences of physical activity for community-dwelling African American older adults. Three focus groups were conducted with female African American older adults (N = 20). Questions posed to each focus group …

Conclusion
Most rural Nebraskans own their home. And, when asked about housing programs or priorities they would support in their community, most rural Nebraskans support programs that help seniors age in their homes, programs that would help upgrade the condition of existing homes and providing affordable rental housing. They are less likely to support organizing volunteer efforts to maintain existing housing stock, but still one-half support this option as well.
Support for one of the programs differs by community size. Persons living in or near larger communities are more likely than persons living in or near smaller communities to support …

Guidelines To Avoid Typical Difficulties According To The Rubric For Experimental Design (Red), Annwesa Dasgupta, Nancy Pelaez
PIBERG Publications
Experimental design is an important component of undergraduate biology education as it generates knowledge of biology. Despite its importance, there is limited information about what students actually learn from designing experiments. Dasgupta et al (2014) reported on the development and validation of a Rubric for Experimental Design (RED), informed by a literature review and empirical analysis of thousands of undergraduate biology students’ responses to three published assessments. The RED is a useful probe for five major areas of experimental design abilities: the variable properties of an experimental subject; the manipulated variables; measurement of outcomes; accounting for variability; and the scope …

This study sought to investigate the effects of mechanical unloading on myocardial energetics and the metabolic perturbation of heart failure (HF) in an effort to identify potential new therapeutic targets that could enhance the unloading-induced cardiac recovery. The authors prospectively examined paired human myocardial tissue procured from 31 advanced HF patients at left ventricular assist device (LVAD) implant and at heart transplant plus tissue from 11 normal donors. They identified increased post-LVAD glycolytic metabolites without a coordinate increase in early, tricarboxylic acid (TCA) cycle intermediates. The increased pyruvate was not directed toward the mitochondria and the TCA cycle for complete …

Academic And Psychosocial Outcomes Of A Physical Activity Program With Fourth Graders: Variations Among Schools In Six Urban School Districts, Cheryl L. Somers, Erin E. Centeio, Noel Kulik, Alex Garn, Jeffry Martin, Bo Shen, Mariane Fahlman, Nathan A. Mccaughtry
Kinesiology, Health and Sport Studies
The purpose was to examine academic achievement, school attachment, and peer acceptance before and after a comprehensive school-based physical activity program (CSPAP) with 378 children in 12 fourth-grade classrooms across six schools in primarily low-socioeconomic status (SES) districts of a large Midwestern metropolitan area. Both personal and normative rate of academic achievement improvement metrics were used. Overall, all students showed personal math and reading growth. However, effects varied by types of achievement indicator and comparison group, revealing noteworthy school-level demographic and implementation characteristics that are inextricably intertwined with program effectiveness and student growth. Implications, especially for minimizing generalizations, are significant.

Obesity is associated with the development of vascular insulin resistance; however, pathophysiological mechanisms are poorly understood. We sought to investigate the role of WNT5A-JNK in the regulation of insulin-mediated vasodilator responses in human adipose tissue arterioles prone to endothelial dysfunction. In 43 severely obese (BMI 44±11 kg/m2) and five metabolically normal non-obese (BMI 26±2 kg/m2) subjects, we isolated arterioles from subcutaneous and visceral fat during planned surgeries. Using videomicroscopy, we examined insulin-mediated, endothelium-dependent vasodilator responses and characterized adipose tissue gene and protein expression using real-time polymerase chain reaction and Western blot analyses. Immunofluorescence was used to quantify endothelial nitric oxide …

Perceptions Of Active Learning Between Faculty And Undergraduates: Differing Views Among Departments, Lorelei E. Patrick, Leigh Ann Howell, William Wischusen
Biological Sciences Faculty Publications
There have been numerous calls recently to increase the use of active learning in university science, technology, engineering, and math (STEM) classrooms to more actively engage students and enhance student learning. However, few studies have investigated faculty and student perceptions regarding the effectiveness of active learning or the barriers to its implementation. Previous work surveying a single class in a single department has suggested that faculty and students have different perceptions of the effectiveness of active learning strategies and the barriers faculty face when implementing these teaching strategies. We expand on these previous findings by surveying a larger and more …

Study group meetings (SGMs) are voluntary-attendance peer-led team-learning workshops that supplement introductory biology lectures at a selective liberal arts college. While supporting all students’ engagement with lecture material, specific aims are to improve the success of underrepresented minority (URM) students and those with weaker backgrounds in biology. Peer leaders with experience in biology courses and training in science pedagogy facilitate work on faculty-generated challenge problems. During the eight semesters assessed in this study, URM students and those with less preparation attended SGMs with equal or greater frequency than their counterparts. Most agreed that SGMs enhanced their comprehension of biology and …
Martha And Her Help: A Different Kind Of Relationship, Victoria E. Krus
Martha And Her Help: A Different Kind Of Relationship, Victoria E. Krus
Martha McMillan Research Papers
In nineteenth century America, middle-class families often had domestic servants in their home. Domestic service looked different in various parts of the country and at different points in the century, but a common theme of racial tension and class struggle defined servant/employer relationships throughout the hundred year period. In Ohio, Martha McMillan recorded the events on her family’s farm in a series of journals from 1867 up until her death in 1913. Thousands of pages portray the day-to-day events of a farmer’s wife, her children, and her relationship with farm employees. In contrast to nineteenth-century employer/employed attitudes and practices, Martha …

Effects Of Soil Erosion Barriers On Percent Cover And Sediment Size, Michael Perez
STAR Program Research Presentations
Ranching began on Santa Rosa Island in the 1840’s, introducing nonnative megafauna that put selective grazing pressures on endemic species. Dense groves of island oak (Q. tomentella) are aid in sediment deposition and retention. A current restoration effort, involved installing soil erosion barriers, known as wattles, to prevent sediment from being lost upslope and recruit plant growth whose root systems could further stabilize the slope. This experiment was designed to compare percent cover of vegetation growth in areas with and without soil erosion barriers. This was done using the line intercept method (n=42) on three meter transects, measuring …

Although theoretically sound, the accuracy and precision of 31P-magnetic resonance spectroscopy (31P-MRS) approaches to quantitatively estimate mitochondrial capacity are not well documented. Therefore, employing four differing models of respiratory control [linear, kinetic, and multipoint adenosine diphosphate (ADP) and phosphorylation potential], this study sought to determine the accuracy and precision of 31P-MRS assessments of peak mitochondrial adenosine-triphosphate (ATP) synthesis rate utilizing directly measured peak respiration (State 3) in permeabilized skeletal muscle fibers. In 23 subjects of different fitness levels, 31P-MRS during a 24-s maximal isometric knee extension and high-resolution respirometry in muscle fibers from the vastus lateralis was performed. Although significantly …

Background
Although cardiac mitochondrial dysfunction is associated with heart failure (HF), this is a complex syndrome with two predominant etiologies, ischemic HF (iHF) and non-ischemic HF (niHF), and the exact impact of mitochondrial dysfunction in these two distinct forms of HF is unknown.
Methods and results
To determine the impact of HF etiology on mitochondrial function, respiration was measured in permeabilized cardiac muscle fibers from patients with iHF (n = 17), niHF (n = 18), and healthy donor hearts (HdH). Oxidative phosphorylation capacity (OXPHOS), assessed as state 3 respiration, fell progressively from HdH to niHF, to iHF (Complex I + …
