Previous literature has examined the benefits of consuming nitrate (NO3)-rich crops (e.g., beetroot, spinach, watercress, arugula) on endothelial function due to their positive influence on nitric oxide (NO) production from the utilization of nitrate-reducing bacteria in the oral microbiome. However, there has yet to be a study addressing how the method of consumption may influence the role the oral microbiome plays in the degradation of NO3 to NO from consuming an encapsulated NO3-rich crop. Sport performance is influenced by sport-specific requirements for body composition. One major predictor of body composition is protein intake. Higher protein intake tends to cause leaner body composition relative to lower protein intake, especially during caloric deficit. In Bexar County, ~72% of the adult population is overweight/obese and 15.5% are diabetic. This suggests that high protein diet could be a high leverage option in the San Antonio population for optimizing body composition for sport performance. Furthermore, late life sporting activity and protein intake is a primary method for mitigating sarcopenia, osteoporosis, fractures, and accidental death in post-menopausal women. PURPOSE: …

Vitamin B12 is an essential nutrient that metabolizes homocysteine, which is a potentially neurotoxic molecule when in excess. Studies show that a deficiency in vitamin B12, as well as folate, may be associated with mental health conditions. Gravel cycling is a relatively new cycling discipline, with the Union Cycliste Internationale (UCI) hosting their first UCI Gravel World Championships in 2022. Gravel races combine features of road racing, cyclocross, and mountain biking, including various terrain of varying technical difficulty (paved roads, dirt roads, fire roads, single- and double-track trails), long distances, substantial vertical elevation gain, obstacles, and limited opportunities to stop for in-race nutrition. Revisiting The Master Food Volunteer Program: Examining How To Enhance Nutrition Education In The United States, Stacey Viera, Lindsey Haynes-Maslow

America’s diet-related illness crisis intersects with a lack of nutrition literacy, nutrition security, and systemic inequities. The Cooperative Extension Service’s (CES) national infrastructure could potentially provide equitable access to quality nutrition education in the US utilizing a Master Food Volunteer (MFV) model. This research brief examined preliminary evidence for the MFV model as a support for CES agents and paraprofessionals, and results show a paucity of evidence. Further research and a pilot program with pre-established measures for health-related knowledge and behaviors could elucidate the model’s potential to increase equitable access to evidence-based programming, nutrition, and implementation guidance.

Introduction: Similar to prior reviews, the Journal of Wellness editors searched the literature from the second half of 2022 for an interesting and impactful selection of publications on wellness in healthcare professionals.

Methods: Editors conducted a standard keyword search in Pubmed, focusing chiefly on large journals, interventional trials, and other prospective research. We included papers published between July 1, 2022 and December 31, 2022.

Literature in Review: Finding several hundred publications, we excluded editorials, reviews, and some smaller, less generalizable papers. A final 25 significant studies focusing on wellness in medical professionals were sorted into the following categories: logistics, creativity …

The Army Combat Fitness Test (ACFT) is a newly developed test assessing U.S. Army soldiers' combat readiness. The Healthy Eating Index 2015 (HEI-2015) is a questionnaire established by the USDA that quantifies overall diet quality. CBH is a comprehensive nutrition curriculum designed to teach adult SNAP-Ed participants how to eat well and be active on a budget. CBH combines nutrition and physical activity recommendations from United States Department of Agriculture (USDA). Each lesson has three components: a nutrition topic based on the current Dietary Guidelines for Americans, a physical activity discussion based on USDA recommendations, and a Create recipe demonstration and sample. The components are woven together in eight lessons that are designed to keep participants engaged, while actively learning the skills needed to create a healthier lifestyle.

Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. Background: ‪Data about physical activity report card for Ghanaian children and youth are available but reports on physical activity patterns and dietary habits of undergraduates are scarce. Material and methods: ‪This cross-sectional study sampled 278 participants (161 males, 117 females, mean age = 20.73 ± 1.72 years). Blood pressure, heart rate, physical activity patterns and dietary habits were measured. Results: ‪Most (83.1%) of the sample predominantly engaged in household activities. Time spent on treadmill/ cycling activities is significantly higher in females than males (P = 0.018). Day/week for high intensity sports was higher in males (P = 0.005), while household …

Proper nutrition is a key factor in physical performance, but there are also indications of an impact of dietary components on the brain function. Therefore, the aim of the study was to assess the impact of macronutrients and water on cognitive performance. Assumptions of the Mediterranean diet correlate with better global cognition, episodic memory, lower risk of cognitive impairment and neurodegenerative diseases. In turn, a high-fat and high-sugar diet shows the opposite effect. Omega-3 fatty acids could be used as a preventive tool for cognitive decline, but there is still insufficient evidence if supplementation improves cognitive functions. The proper intake …

Background: Forty percent of the US population ages 20-39 are categorized as obese,

their BMI is over 30, and 35% of college age students are obese or overweight. Issues related to obesity cost the US $147 billion annually. Between 40%-50% of college students are reported to be inactive. The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.

Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. Approximately 15 million children under age 6 are in childcare settings, offering childcare providers an opportunity to influence children’s dietary intake. Childcare settings vary in organizational structure – childcare centers (CCCs) vs. family childcare homes (FCCHs) – and in geographical location – urban vs. rural. Type 2 diabetes (T2D), the most common form of diabetes (90-95% of diagnoses), is marked by decreased insulin sensitivity (insulin resistance) or a defect in insulin secretion. Diets of adult individuals with mid-spectrum (stages III and IV) Chronic Kidney Disease (CKD) remain understudied. The 2015-2020 Dietary Guidelines for Americans food patterns based on the Recommended Dietary Allowances (RDA) in concert with the National Kidney Foundation Kidney Disease Outcomes Quality Initiative (NKF KDOQI) guidelines are advised to individuals with CKD. Objective: To understand the perception of anemia among the women of childbearing age in Bolgatanga, Ghana, and to correlate the reasoning with the high incidence of anemia in the area.

Background: The Hispanic population is the largest growing minority ethnic group in the United States today. Minority groups have an added struggle with obesity and have higher rates of obesity in this country than the caucasian counterparts. While minority group parents want more for their children they face many cultural and language barriers related to proper nutrition and hydration. The Meal Gap: A Food Activist Curriculum is a series of fifty-four lessons for fourth grade students that introduces them to the topic of food insecurity. The Food and Agriculture Organization (FAO) of the United Nations initiated the World Food Summit in 1996 to discuss and call attention to the “widespread undernutrition and growing concern about the capacity of agriculture to meet future food needs” (Food and Agriculture Organization, n.d.). High fat-low carbohydrate (HFLC) diets are a common approach to enhancing overall health and performance in endurance runners. Total macronutrient contents in plasma may change in response to diet and exercise. PURPOSE: To examine the responses of total plasma macronutrient contents in trained males following dietary manipulation in combination with aerobic exercise. METHODS: Eight distance runners that typically consumed high-carbohydrate (HC) diets switched to a HFLC diet for 3 weeks. Healthy Families: A Family-Based Community Intervention To Address Childhood Obesity, Danae Dinkel, Melissa Tibbits, Emily Hanigan, Kelly Nielsen, Leah Jorgensen, Kay Grant

The objective of this study was to determine the effectiveness of Healthy Families, a family-based community intervention, in improving the knowledge, self-efficacy, and health behaviors of overweight/obese children and their families as well as to explore the lessons learned. Results showed families who completed the program had significant improvements for children and parents in areas such as nutrition knowledge and self-efficacy in making healthy eating choices as well as participating in physical activity. Additionally, families reported decreasing their intake of sugar-sweetened beverages. Participating families and community partners provided valuable lessons for other communities seeking to implement a similar program.
