Childhood obesity in American children has tripled in the last 20 years, and 85% of current healthcare spending is linked to diet-related diseases. The consumption of highly processed foods is linked to these trends and makes up more than half of an average American youths’ diet. Reducing the consumption of highly processed foods in children’s diets can be addressed, in part, by addressing childhood neophobia (willingness to try new foods) associated with whole foods like fruits and vegetables. Censorship in the United States of America has accelerated over the past four years. LGBTQ+ books are specifically being targeted and banned within high school classrooms. Banned books are nothing new--court cases today are influenced by Island Trees School District v. Pico (1982) plurality decision on censorship. Students and professionals alike have power in their rights and voices. In the framework of bell hooks, the classroom can be perceived as a site of resistance in order to take power back into students' hands. Community engagement programs are shaped by the educators who facilitate them. Due to a curtailed critical consciousness, such programs are not always sensitive to the negative implications for the communities they are attempting to support. Guided by critical ethnographic and interpretive phenomenological analysis, this study examines how educators perceive their relationship with critical consciousness, its impact on their community engagement initiatives, and what we can learn from educators using community engagement to work towards social justice issues. In a K–12 educational landscape where 75% of educators are white women, recruitment of Latino male educators is crucial for diversification, yet these educators represent just 2% of the teaching workforce in the United States (NCES, 2020). In this autoethnography journey, we explore the question, "What resources are available for teachers to use to guide SEL instruction, and how effective are those resources post-pandemic?" The murders of James Bryd. Jr, Trayvon Martin, Michael Brown, and Sandra Bland led to the Black Lives Matter movement. Following these deaths, schools across the country that were named after Confederates and statues of them were taken down, causing backlash against more substantial steps to address white supremacy in the curriculum. This qualitative study investigates how social studies teachers are reacting to laws that restrict the teaching of history and deny Texas students the right to be represented in their education. The purpose of this research is to investigate high school age students’ opportunities within formal classroom settings to engage in care, civic learning, and creativity within a suburban, publicly-funded charter school. This study used thematic analysis and coding methods to organize and find patterns in the qualitative data from surveys distributed to education professionals at Canton Preparatory High School in Canton, Michigan. The goal is to establish a foundation of the perception of care, civic learning, and creativity within school environments and classroom settings. Drawing on insights from North American public school teachers who have shared their perspectives and experiences, this research employs a combination of literature reviews, teacher interviews, and anonymous surveys. Artisanal and small-scale gold mining (ASGM) has become a primary environmental and public health concern in the region of Colombia known as Alto Cauca. The predominantly Afro-descendent communities of Yolombó and La Toma in Alto Cauca have experienced pollution linked to the use of mercury in the ASGM process. The purpose of this study was to propose sustainability-based curriculum changes to Utah's textiles and apparel (TA) curriculum. This study's specific curriculum change proposals are limited to Sewing Construction and Textiles (SCT) 1 and Sports and Outdoor Design (SOD) 1 courses. The proposed changes were made with the input of 24 Utah FCS TA educators via a research-developed survey on Qualtrics. FCS TA educators were asked to give their input on sustainability topics already taught in their classroom, teaching methods of sustainable topics, potential barriers to incorporating sustainability into the curriculum, and their receptiveness to curriculum change.

This thesis examines how K-12 teachers in Ontario navigate the complexities of teaching "difficult knowledge"—topics such as racial and ethnic injustices, Indigenous perspectives, immigration experiences, and gender issues—within the parameters of the school and the curriculum. Utilizing an institutional ethnography approach, the study examines the curriculum as an institutional text that coordinates and shapes teachers’ practices. Working with and against the curriculum, teachers find innovative ways to engage their students on difficult knowledge topics. This study investigated the impact of culturally sustaining/inclusive curricula (CSP/CIC) and experiences of racism in school on racial-ethnic identity, racial self-worth, civic efficacy, and activism for African American/Black, Latino(a)(x), Asian, and Indigenous youth. The effect of CIC/CSP on developmental psychological self-concepts and the impact of the public health crises occurring in 2020 on curricula and activism was explored. The effect of CIC/CSP on non-White youth from New York City was captured using an interactive web-based survey (n=155) and quantified using a branch of artificial intelligence called machine learning. Moral aspects of teaching arise each and every day, yet we lack information about how prepared teachers feel about this critical aspect of teaching. This multi-case study explores perceptions of five pre-service teachers in an elementary teacher education program in Western Massachusetts. A series of interviews explore their histories prior to the program and their experiences in the program as related to the pre-service teachers’ orientations to the moral work of teaching. General chemistry (GC) plays a crucial role in the academic and career outcomes of students interested in postsecondary science, engineering and medicine. As a whole, chemistry education research literature has reported student attrition rates averaging from 25% to 35% for nearly a century. Student attrition rates can be attributed to a number of factors, including high school preparation (e.g. Tai et al. 2006), opportunity to learn (Carroll, 1989) and accumulated time and practice in a domain (e.g. Ericsson et al. 1993). A 6-week virtual exchange program designed to connect 100 high school students from 23 countries, The Experiment Digital Climate Change & the Environment aimed to equip youth with radical tools to address the scale of the climate crisis. I created a program to promote a smooth transition from elementary to middle school for the students at Bradenton Christian School (BCS). Following my literature review and needs assessment, the program was designed to provide students with the tools and strategies needed to feel prepared for middle school, foster friendships, and advocate for themselves and their peers. Following the program implementation, I created educational resources for the faculty at BCS to continue the program in the future.
