During the summer months of 1994, the Dick Poe Sr. Institutes for Tourism Studies at the University of Central Florida conducted a survey of Central Florida hotel properties regarding wages paid and employee benefits. The project was sponsored by the Central Florida Hotel Personnel Association and supported by the Central Florida Hotel and Motel Association. This comprehensive study solicited 293 hotels for data on wages and benefits on 118 occupational/hourly job titles and 34 management/supervisory positions. From 1987 through 1992 the Las Vegas Flamingo Hilton instituted resource efficiency improvements in electrical, natural gas, water and materials consumption. In 1992, the Flamingo Hilton commissioned the University of Nevada Las Vegas Environmental Studies Department to analyze and quantify the improvements made by The Flamingo Hilton and investigate the potential for further improvements.
Historical billing data from the periods 1987 - 1992 were used to analyze past and present (1992) electric, natural gas and water consumption. Materials disposal data was only available for a ten month period in 1992. Pollutant emissions data were supplied by Nevada Power Company.

The purpose of this research was to investigate what effect current and proposed regulations of the Nutrition Labeling and Education Act of 1990 would have on independent restaurant operations in the state of Tennessee. A rule proposed in June of 1993 will expand the NLEA to include restaurant menus.
The sample was identified and selected from the population of independent restaurateurs in the state of Tennessee who were members or were eligible for membership in the Tennessee Restaurant Association (TRA) and operated ten units or less. The vast majority of hospitality management programs require students to participate in a hands-on work experience, which helps bridge the gap between theory and practice, providing the student with an opportunity to practice the theory learned in the classroom. The Walt Disney World Co. developed, implemented, and operates one of the most successful internship programs in the hospitality industry. It recognizes the need for business practitioners to become more involved in the education of future hospitality managers. Three major areas were investigated to assess the readiness of Atlanta's hotels to host international visitors during the summer Olympics of 1996. In the area of human resource development, hotels were asked if they planned to conduct language training and hire bilingual employees. Since 1993, the U.S. hotel industry has experienced a turnaround which continued into 1994- 1995 with good performance by most firms. The proliferation of legalized gaming has significantly changed the nature of the hospitality industry. While several aspects of gaming have flourished, none has become more popular, profitable, or technologically advanced as the slot machine. While more than half of all casino gambling, and earnings, is generated by slot machines, little has been written about the technology integral to these devices. In this article the authors explore the performance-related employee behaviors that are the most troublesome in food service. Four subsegments of food service were surveyed and differences in profit and not-for-profit operations analyzed. Significant differences were found between the two groups, with for-profit operations indicating more severe problems in all but one behavior category.
