This dissertation comprises three distinct but interrelated projects that explore the intersection of agriculture, nutrition, and economics. The first project investigates the impact of Community Supported Agriculture (CSA) food programs on the health outcomes of its participants. Using fixed effects models and a matching algorithm, the study finds that while conventional fixed effects models indicate a significant effect of CSA participation on diet-related medical expenditures, our modified time-heterogenous fixed effects model did not find a meaningful effect. The results of the matching method are consistent with those of our modified model.

bon are aging across the commonwealth. In 2020, Kentucky distillers purchased 17
million bushels of corn, 75% coming from Kentucky farmers (KDA, 2020). That is,
65% of corn grown in Kentucky remains in the state to be used in Kentucky bour-
bon whiskey distillation. There is no shortage of support from the distilling industry
for American agriculture and the Kentucky economy. In the same, American wine
production is a dynamic sector in the United States economy, accounting for $276.07

Chapter 1. This research examines whether the use of blockchain technology to back a brand’s claims (i.e., blockchain augmented claims) influences consumer preference for sustainable products. Consumers are demanding higher levels of transparency from brands and are also showing keen interest in consuming sustainable products, which includes products that promote social, environmental and economic sustainability. Recent advancement in digital technology, specifically blockchain, is offering an opportunity for brands to meet both these consumer demands. In my first chapter, I use new granular loan-level data and a novel instrumental variable to estimate the effect of competition among auto dealerships on the joint pricing of cars and car loans. I find that increased competition causes auto dealers to decrease vehicle prices to attract consumers. They, however, offset a large portion of their loss on vehicle prices through charging higher prices on a less transparent margin (i.e., loan markups). Consistent with the monthly payment targeting channel, I find that increased competition does not change consumers' monthly payments. In my first chapter, I show a positive municipal financing shock has heterogeneous effects on academic achievement. White students show meaningful improvement, but Black and Hispanic students do not. Consequently, the achievement racial gap widens following the shock. Changes in school funding do not explain this phenomenon; rather, it is explained by heterogeneous outcomes in household Socioeconomic Status (SES). These results highlight the possibility that a credit shock-induced increase in government spending could unexpectedly increase the local racial disparity. Corporate training and development, despite their significance as primary learning strategies for adults, have received limited research attention. This study addresses this gap by evaluating and comparing the effectiveness of video-based and digital job aid procedural-based microlearning in a corporate setting, utilizing most of the Kirkpatrick Model: learner satisfaction, knowledge retention, and behavior change. Employing a mixed methods approach to gain a comprehensive understanding of microlearning’s application and potential for improving business outcomes, the study incorporates pre- and post-tests, participant interviews, and self-reported questionnaires. In a field social network study of 141 employees in an international organization, I examined individuals’ future desires to either collaborate more intensely with existing network partners or seek out new partners based on the latent value of these social ties – the potential social capital that will be generated from strengthening or building a tie in terms of reducing their formal workflow dependencies on others. Employees tended to desire more intense collaboration with a constraining existing tie (i.e., a bottleneck in their existing workflow network) when they trusted the person, suggesting they believed that the partner would provide high-quality …

Psychological ownership theory suggests that auditors are more likely to exert effort when they feel a sense of personal ownership of the audit. Ongoing trends towards a more compartmentalized and decentralized audit, however, may impair auditors’ work ownership by decreasing their interaction with work, as well as by discouraging engagement with work performed by colleagues. The U.S. is a top market for Vietnamese coffee. In this study, we estimate a conditional demand system of expenditure share equations for coffee from Vietnam, Brazil, Colombia, and an aggregate of seven other countries in the U.S. coffee market using the Linear Approximation Almost Ideal Demand System (LA/AIDS) and based on monthly time-series data from 2000 to 2020 with a total of 252 observations. In this study, I examine two research questions related to the reporting requirements of critical audit matters (CAMs) introduced in the Audit Standard (AS) 3101. First, I examine whether auditor’s perceived litigation risk and client’s financial reporting quality are associated with the number and textual attributes of CAMs. Second, I examine whether the number and textual attributes of CAMs are associated with audit effort and costs.

The first chapter of this dissertation examines price discovery and volatility spillovers in the coffee spot-futures commodity market over the post-ICA period by employing the PT-IS and bivariate EGARCH models. This research covers two actively traded coffee types, Arabica and Robusta, and utilizes daily time-series price data over 1990:01-2020:04 for Arabica and over 2008:01-2020:04 for Robusta. The empirical results indicate that coffee spot markets play a dominant role in the coffee price discovery for both Arabica and Robusta.
