Nice Food: A Nonprofit Food Truck, Nathan Brooks
Nice Food: A Nonprofit Food Truck, Nathan Brooks
Mahurin Honors College Capstone Experience/Thesis Projects
This document is a snapshot of Nice Food, a nonprofit food truck. The truck uses a pay-what-you-can model so that anyone may eat there, regardless of their ability to pay. The chief goal of Nice Food is to lower food insecurity in its community, which will initially be Louisville, KY. The company will be an addition to the strong effort against hunger in Louisville, bringing the additional strength of mobility to the fight.
This document exists to map out the path of a startup for a student, as well as to provide a clear picture of what Nice Food is …

Impacts Of Leadership On Tqm In Food Industry In India, Abhir Anil Joshi
Impacts Of Leadership On Tqm In Food Industry In India, Abhir Anil Joshi
Masters Theses & Specialist Projects
To improve an organizations competitive edge, leadership has adopted a conventional and organized approach known as TQM to improve the quality of its products and services. Implementation of TQM varies from one organization to another. This study determined the various impacts of leadership on TQM in the food industry in India. The continuous decrement of India's economy has led organizations to hire nonskilled people who lack the basic knowledge of the process and thus do not work efficiently and thus ensuring failure of TQM. Another problem faced was the lack of a healthy management which ensures a positive environment and …

Universities And Sustainable Food Practices: An International Comparison Along The Pacific Coast Of North America, Alexandra Schulte
Universities And Sustainable Food Practices: An International Comparison Along The Pacific Coast Of North America, Alexandra Schulte
Mahurin Honors College Capstone Experience/Thesis Projects
My research project examined sustainable practices in relation to food sources at three universities located along the Pacific Coast of North America. The academic institutions were the University of Alaska Anchorage (UAA), the University of California Santa Barbara (UCSB), and the University of British Columbia (UBC) in Vancouver. These schools were selected because while they each foster an abundance of “local” foods and food industries, they represent different stages in the three pillars of sustainability for food practices. My project sought to understand the role of each institution in building a local and sustainable food culture at each university. I …

Competing Values In The Culinary Arts And Hospitality Industry: Leadership Roles And Managerial Competencies, Michael W. Riggs, Aaron W. Hughey
Counseling & Student Affairs Faculty Publications
It is important that education and training programmes align with the needs of the professions they are designed to support. The culinary arts and hospitality industry is a vocational area that needs to be examined more closely to ensure that the skills and competencies taught are those that will actually be needed when students matriculate from career preparation programmes. This study compared the self-assessed leadership roles and managerial competencies of hospitality students and hospitality management professionals in employment. Using the Competing Values Framework (CVF) as a theoretical framework, eight leadership roles and 24 managerial competencies were examined in an effort …
Standout Attractions, Jonathan Jeffrey
Standout Attractions, Jonathan Jeffrey
SCL Faculty and Staff Publications
Living in Chicago and working as a traveling salesman in the 1920s-1930s, Duncan Hines had a hobby—visiting and assessing restaurants. He said he was looking for “standout attractions in the culinary department.” His hobby eventually made this native of Bowling Green “America’s foremost food authority” and one of the most recognized Kentuckians of the twentieth century. This article traces the biography of the culinary entrepreneur from his early years in Bowling Green to his successful publishing ventures, and finally to the phenomenal marketing strategy that was used to create one of America’s most enduring and endearing brands.
