Animal offal and organ meats seem to have all but disappeared from domestic cuisine in Ireland, despite the recent renaissance in the country’s food culture. This thesis has examined the extent and nature of the consumption of these comestibles in contemporary Irish food culture, and the perceived decline in offal’s popularity in Ireland in the past fifty years. It also sought to discover whether offal and organ meats might have a place in the future of our cuisine, and whether the consumption of more offal and organ meats in Ireland might contribute towards a more sustainable food production system, and …

Ireland in 1850 was full of empty potato fields and people that were closer to death than their next meal. The country was in the throes of one of the worst famines in history. The Irish Potato Famine decreased the population of Ireland by 20-25% between 1845 and 1851. Despite the bleak time in the country's history, missionaries of different religions continued to flock to Ireland in hopes of converting the dwindling population. Missionaries were almost always met with resistance from both the largely Catholic population and the minority Protestant population. These denominations had a long history of conflict with …

On the outskirts of Papal authority, early medieval Ireland created its own Christian identity separate from other European nations closer to Rome. Saint Brigid of Kildare, one of the patron saints of Ireland, played important yet problematic roles in that identity. After her death, the church began to alter her history. Being a female bishop, performing the first recorded abortion, and having both men and women within her monastery, Brigid had trodden on the male-dominated system in a way that few women had. Deemed unacceptable but having already been sainted, the Catholic church gave Brigid a holy facelift.

This study explores food traditions in the four quarter days of the Irish calendar year. Imbolg or St. Brigid’s Day, Bealtaine, Lughnasa and Samhain mark significant moments in the agricultural calendar. Food traditions, customs and practices relating to these days are recorded in the abundant resources of the collections in the Folklore Department, University College Dublin. However, to date, with few exceptions, little food specific research has been carried out on these collections. This thesis aims to begin to fill that gap whilst highlighting many opportunities for further research. Throughout this process we witness the illumination of a rich food …

Family stories and family histories are contingent on how they are remembered. As these stories are passed down, the ways that they are remembered can change, with the truthful aspects of these stories disappearing over time. As a result, many family stories are not necessarily truthful, but this does not discount their value. The aim of this project is to explore these ideas while also answering the following question: to what extent are family stories bound by the ‘truth’? For many years, food was seen as too quotidian and belonging to the domestic sphere, and therefore to women, which excluded it from any serious study or consideration in academia. This chapter tracks the evolution of gastronomy and food studies in Ireland. It charts the development of gastronomy as a cultural field, originally in France, to its emergence as an academic discipline with a particular Irish inflection. It details the progress that food history and culinary education have made in Ireland, suggesting that a new liberal / vocational model of culinary education, which commenced in 1999, has helped transform the …

Her Voice On Air: How Irish Radio Made Strides For Women's Rights, Emilie R. Hines

Radio is the voice of the people; this is no less true in Ireland, a nation that prefers talk radio and phone-ins. These formats were popular from 1970-2000, formative years for the feminist movement. Scholarship suggests a correlation between radio and women’s issues in Ireland but does not answer what elements create this. Here, I analyze 10 archival radio clips from Ireland’s national public service broadcaster, RTÉ, looking at how women’s issues are framed. After analyzing these clips, I found that Irish identity embedded in the shows allows for the discussion of controversial ideas. Radio promotes an inclusive environment, by …

Dining out during the 1980s in Ireland could be summarised gastronomically by prawn cocktails, Chicken Maryland, Black Forest gateau and bottles of Blue Nun or Mateus Rosé. All this changed with the Celtic Tiger when the Irish public was introduced to Caesar salad, tomato and fennel bread, tapenade and Chardonnay. From 1989 to 1993, Restaurant Patrick Guilbaud was like a lone beacon of consistency in the Irish edition of the Michelin Guide. However, in 1994, five Michelin stars were awarded on the island of Ireland. Change was afoot. Many young Irish chefs and waiters emigrated during the 1980s although some, …

This study focuses on the cultural heritage of artisan coastal fishing in the west of Ireland in the 19th century. The town and port of Dingle, County Kerry, offers an important case study on the progress of local development and changing British policies. While there was clearly an abundance of fish, the poverty and the lack of capital for improvements in ports, vessels, gear, education, and transportation, left the fishing industry underdeveloped until well after the 1890s. In addition, a growing rift developed between the traditional farmer-fishermen and the new middle-class capitalist companies. After several royal commissions examined the fishing …

Some common themes within the history of food and literature include starvation, famine, gluttony, feasting, commensality, hospitality, religion, gender, and class, and indeed food also functions as a complex signifier of national, racial, and cultural identity. Despite the growing international scholarship of food in literature (Bevan 1988; Schofield 1989; Ellmann 1993; Applebaum 2006; Piatti-Farnell 2011; Gilbert and Porter 2015; Boyce and Fitzpatrick 2017; Piatti-Farnell and Lee Brien 2018), until recently, Ireland appeared “as only the smallest of dots on the map of high gastronomy” (Goldstein 2014, xi). The aim of this chapter is to examine William Butler Yeats’s use of trauma as visual metadata during the Easter Rebellion in 1916 to raise critical consciousness for future rebellions in Ireland. Previous examinations of Yeats’s “Easter, 1916” focus almost exclusively on the call for rebellion. This appeal however overlooks Yeats’s challenge to preserve the spirit of resistance by focalizing on the unseen liberation within him and Ireland that remained despite the failed rebellion. With 2016 marking 100 years of “Easter, 1916,” as the most popular of Yeats’s political poems, the rhetorical appeal in this chapter will take a cognitive …

This paper identifies and critiques a dominant narrative in the history of Irish television, which is too often passed off for, or accepted as, the history of television in Ireland. The his- tory of television in Ireland has been written within an institutional framework and depends on the cultural binary of tradition and modernity, ‘old Ireland’ and ‘new Ireland’. This dom- inant narrative fails to interrogate television as a medium. It provides an account of the Irish broadcaster RTÉ rather than an account of the arrival of a new medium. This thesis argues that Irish culinary manuscripts have a significant contribution to make to an understanding of Irish culinary history. It does so by identifying one particular manuscript, NLI MS 34,952 (Baker) as being representative of the genre but singular in terms of the archival and literary support available for an in-depth study. Analysis of the manuscript is undertaken using a methodology devised by the culinary historian Wheaton for researchers attending her workshops at Radcliffe College, Harvard. In these workshops Wheaton studies historic cookbooks to ascertain what these complex texts can reveal by breaking them down into five categories, that …

The conflict in Bosnia-Herzegovina can be understood in multiple ways, however, the focus of this paper is to examine the perspective of Ireland on the Bosnian Muslims at different levels of society--ranging from the population to international level--from June 01, 1992 to January 31, 1996. The Irish census records from 1841 and 1851 demonstrated a nearly 20% drop in population over the course of the Great Famine, accounting for both death and emigration during that period. Among this drop was the community of nearly 1.5 million emigrants who left during the decade, a number accounting for half of the citizens leaving Ireland in the nineteenth century. While most of this community were permanent migrants, an estimated 10% of those who emigrated to the United States returned to Ireland during the second half of the century.
